2 cups whole milk
2 cups heavy cream
1 vanilla pod, split lengthwise and scraped
6 egg yolks
6 ounces granulated sugar (by weight, almost a cup by volume)
2 tablespoons cornstarch

Steps:

  • Place milk, cream and vanilla pod/seeds into a saucepan and bring to the boil.
  • In a large bowl, whisk the yolks with the sugar and cornflour until smooth and pale.
  • Pour the boiled cream/milk/vanilla mixture over the egg yolks, trickling at first, whisking all the time to temper the eggs.
  • Return the mix to the saucepan (some people think you should rinse it first), then cook over a gentle heat, whisking or stirring with a wooden spoon until it thickens sufficiently to coat the back of a spoon. Do not boil your custard - it will split. If it looks suspiciously curdle-y, lift it off the heat and whisk firmly.
  • Pass through a fine sieve and cool thoroughly in the fridge.

1 pint blueberries
1 pint strawberries, hulled and cut into thick slices
2 pint raspberries
1 lemon, juiced
1/4 cup sugar
1 1/2 teaspoons cornstarch
1 quart whipping cream
1 tablespoon sugar
1/2 teaspoon vanilla extract
1 (11-ounce) jar lemon curd
1 store bought pound cake, sliced 1/2-inch thick

Steps:

  • Place the berries into a large bowl and sprinkle with half of the lemon juice. Lightly toss.
  • Combine the berries, sugar, cornstarch and remaining lemon juice in a saucepan over medium-high heat. Bring to a simmer and cook just until the berries begin to break down and give up their juices, about 3 minutes. Take the berries off the heat and let cool; the mixture should thicken up as is cools.
  • In a clean bowl, whip the cream with the sugar and the vanilla to soft peaks. Put the lemon curd into a second bowl and stir in a little of the whipped cream to loosen it. Then fold in the rest of the cream.
  • To assemble the trifle, spoon a layer of the lemon cream into a large glass bowl. Add a layer of pound cake, breaking the slices into pieces that fit. Then soak the cake with a layer of berries and their juices. Keep going to make 3 or 4 more layers, depending on the size of the bowl, finishing with a layer of lemon cream. Cover and refrigerate until ready to serve.

1 recipe vanilla cake (cubed)
2 pints fresh blueberries

Steps:

  • Add sliced strawberries to a medium bowl. Sprinkle with the sugar and stir to combine.
  • Assemble trifle in layers by adding 1/2 of the vanilla pudding to the bottom of the trifle bowl, followed by 1/2 of the vanilla cake cubes, 1/3 of the strawberries and blueberries, and 1/2 of the whipped cream. Repeat with another layer of the vanilla pudding, cake, strawberries and blueberries and the whipped cream.
  • Top with the final 1/3 of the strawberries and blueberries just prior to serving.

Recipe VIDEO above. The one thing that will elevate your Trifle from "ok" to PHENOMENAL is making jelly with real cranberry juice instead of using artifical flavoured jelly. It's no different to making instant jelly - it's just that you use fruit juice and gelatine instead of flavoured jelly crystals! Make real jelly, then you can totally get away with using store bought shortcuts for everything else - like the custard and cake. NOTE: I used to use flavourless Aeroplane Jelly for the jelly (click here for the original recipe). It's no longer available, so the recipe uses plain gelatine instead which was preciously an alternative in the notes. Video not yet refilmed. Will do so next year!

6 cups Cranberry juice, original ((ie WITH sugar added, not No Added Sugar, Note 2))
2 - 3 punnets strawberries, halved

2 1/2 cups heavy / thickened cream ((or pure whipping cream))
3 tbsp white sugar ((caster sugar ok))
1 1/2 tsp vanilla extract
3 cups milk ((full or low fat))
1/4 cup caster sugar ((superfine sugar))
1 tsp vanilla bean paste (or extract) (Note 4)
1/4 cup caster sugar ((superfine sugar), extra)
4 egg yolks
1/2 cup cornflour / cornstarch

Steps:

  • Cut cake into 3 cm / 1.2" cubes. Cover bottom of 3.5 L / 3.5 qt trifle dish with cake (might not use all) and sprinkle with liquor or juice.
  • Optional extra: Scatter over 1/2 to 1 punnet halved strawberries (this is not in ingredients list).

CLASSIC TRIFLE

Christmas celebrations are not complete without a trifle and this recipe is guaranteed to be the crown jewels of the table

750g frozen summer fruit (raspberries, blackberries, red and blackcurrants)
250g caster sugar
9 sheets leaf gelatine
75g custard powder
1.2l milk
1½-2 madeira cakes
4 tbsp sherry or cassis
300-450ml double cream
1 tsp vanilla extract
2 tbsp icing sugar
2 crushed amaretti biscuits, to serve

Steps:

  • Put 750g frozen summer fruit in a pan with 200g caster sugar and 1 litre water and bring to a gentle simmer.
  • Cook for 2 mins, then scoop out 6 tbsp fruit and 150ml juice. Now carry on cooking the fruit in the pan for 5 mins.
  • Meanwhile, soak 9 sheets leaf gelatine in cold water to soften it. If you have a hand blender, blitz the cooked fruit or mash with a potato masher, then strain through a sieve into a large bowl and push through the pulp so just the skins and seeds are left.
  • Squeeze excess water from the gelatine, add to the hot fruit syrup and stir to dissolve. Cool, then chill until on the point of almost setting.
  • Make the custard according to pack instructions with 75g custard powder, 1.2l milk and 50g caster sugar to create a really thick custard. Cover the surface with baking paper while it cools a little.
  • Pile 1½ - 2 cubed madeira cakes into a trifle bowl, spoon over the reserved juice and berries, then 4 tbsp sherry or cassis.
  • Pour over a thick layer of custard, pushing it against the side of the dish to seal in the cake below. Leave to cool and set with a skin - this makes a barrier for the jelly.
  • When the custard is cold and set, and the jelly is on the point of setting, spoon the jelly over the custard and chill until ready to complete.
  • Whip 300 - 450ml double cream with 1 tsp vanilla extract and 2 tbsp icing sugar until just holding its shape, then spoon round the bowl over the set jelly. Scatter with 2 crushed amaretti biscuits and chill until ready to serve.

2 pints fresh strawberries
¼ cup white sugar
1 pint fresh blueberries
2 bananas
¼ cup orange juice
1 (3.5 ounce) package instant vanilla pudding mix
2 cups milk
1 cup heavy whipping cream
¼ cup blanched slivered almonds
12 maraschino cherries

Steps:

  • Slice strawberries and sprinkle them with sugar. Cut the bananas into slices and toss with orange juice. Combine pudding mix with milk and mix until smooth. Cut the cake into 1 inch cubes.
  • Use half of the cake cubes to line the bottom of a large glass bowl. Layer half of the strawberries followed by half of the blueberries, and then half of the bananas. Spread half of the pudding over the fruit. Repeat layers in the same order.
  • In a medium bowl, whip the cream to stiff peaks and spread over top of trifle. Garnish with maraschino cherries and slivered almonds.

1 box Betty Crocker™ white angel food cake mix
1 1/4 cups cold water
2 cups boiling water
1 box (8-serving size) sugar-free raspberry-flavored gelatin
2 packages (10 oz each) frozen sweetened raspberries, thawed
3 containers (6 oz each) Yoplait® Original yogurt red raspberry

Steps:

  • Move oven rack to lowest position (remove other racks). Heat oven to 350°F.
  • In extra-large glass or metal bowl, beat cake mix and cold water on low speed 30 seconds; beat on medium speed 1 minute. Pour into ungreased 10-inch angel food (tube) cake pan. Do not use fluted tube cake pan or 9-inch angel food (tube) cake pan, or batter will overflow.
  • Bake 37 to 47 minutes or until top is dark golden brown and cracks feel very dry and not sticky. Do not underbake.
  • Immediately turn pan upside down onto glass bottle until cake is completely cool, about 1 hour. Run knife around edges; remove from pan. Tear cake into about 3/4-inch pieces.
  • Pour boiling water on gelatin in large bowl; stir until gelatin is dissolved. Add raspberries. (If desired, remove several raspberries and reserve for garnish.) Refrigerate gelatin mixture about 15 minutes or until thickened but not set.
  • Layer half each of the cake pieces, gelatin mixture and yogurt in 3-quart glass bowl; repeat. Garnish with reserved raspberries. Refrigerate at least 2 hours until firm. Cover and refrigerate any remaining dessert.

1/4 cup water
1/2 cup vegetable oil
2 eggs
1 tablespoon dry instant coffee (dry)
1 package chocolate flavor instant pudding and pie filling mix
2 cups milk
1 (6 ounce) package English toffee bits (reserving 2 tablespoons for garnish)
3 1/4 cups whipped cream

Steps:

  • Heat oven to 350F degrees.
  • Prepare brownie mix as directed on package for 13 × 9-inch rectangular pan, using water, oil and eggs and stirring coffee into batter.
  • Bake and cool as directed.
  • Cut brownies into 1-inch squares.

1/4 cup fresh lemon juice
1 cup seedless raspberry jam

Steps:

  • In a small saucepan, bring 1/2 cup sugar, 1/4 cup water, and lemon juice to a boil, stirring to dissolve sugar, 1 to 2 minutes. Let cool.
  • In a small bowl, combine jam with 3 cups raspberries, mashing slightly. In a large bowl, whip cream and 2 tablespoons sugar to stiff peaks.
  • Slice pound cake 3/4 inch thick; brush both sides of slices with lemon syrup.
