TRICOLOR POTATO SALAD



Tricolor Potato Salad image

This beautiful riff on traditional French-style potato salad lets the tricolor potatoes shine with loads of herbs and olive oil instead of heavy mayo.

3 lb small (two-bite) potato medley (white, red and purple)
8 cups water
1/2 cup extra-virgin olive oil
1/4 cup red wine vinegar
1 tablespoon Dijon mustard
6 cloves garlic, very finely chopped
1 1/2 teaspoons salt
1/2 teaspoon ground black pepper
10 green onions, thinly sliced
1/2 cup chopped fresh Italian (flat-leaf) parsley leaves
1 tablespoon chopped fresh thyme leaves
4 cups baby arugula

Steps:

  • In 5-quart stockpot or Dutch oven, place potatoes and water. Cover and heat to boiling; reduce heat to medium-low. Simmer covered 9 to 11 minutes or until potatoes are tender when pierced with paring knife. Drain potatoes; cool about 10 minutes or until cool enough to handle.
  • Meanwhile, in large bowl, beat oil, vinegar, mustard, garlic, salt and pepper with whisk until combined. Stir in onions, parsley and thyme.
  • Cut potatoes in quarters, and add to vinaigrette in bowl; toss to coat. Spread arugula on large platter. Spoon potato mixture over arugula. Serve warm.

1 medium sweet potato
3 medium purple potatoes
2 medium yellow potatoes like Yukon gold
2 celery stalks, thinly sliced on the diagonal
1/2 medium red bell pepper, finely diced
1/3 cup pitted kalamata olives or sun-dried tomatoes, sliced
1/3 cup vinaigrette dressing, or as needed to moisten
2 to 3 tablespoons minced fresh dill
Salt and freshly ground pepper to taste
3 to 4 big handfuls of baby arugula leaves, rinsed and dried
Toasted pumpkin or sunflower seeds for topping, as desired

Steps:

  • Microwave the each variety of potato separately (they have varying cook times) until done but still nice and firm. Plunge into cold water. Let stand until cool enough to handle, then peel and cut into approximately 3/4-inch dice.
  • Combine the potatoes in a mixing bowl with the celery, bell pepper, olives, vinaigrette, dill, salt, and pepper. Stir together gently.
  • Stir half of the arugula in with the potatoes and line a serving platter with the rest. Mound the potato salad onto the platter, and scatter the seeds over the top. Serve at once.

Potato, Orange and Arugula Salad image

Vegetable oil cooking spray
1 1/2 pounds baby potatoes, halved
1/4 cup extra-virgin olive oil
Kosher salt and freshly ground black pepper
2 medium oranges
2 packed cups (2 ounces) arugula
1/2 cup (2 ounces) crumbled Gorgonzola
1/3 cup toasted chopped walnuts, see Cook's Note
2 tablespoons extra-virgin olive oil
1 tablespoon fresh orange juice
1 tablespoon champagne vinegar
1 tablespoon orange zest (from 1 medium orange)
Kosher salt and freshly ground black pepper

Steps:

  • Potatoes: Put an oven rack in the upper third of the oven. Preheat the oven to 400 degrees F. Spray a heavy baking sheet with vegetable oil cooking spray. Put the potatoes and the olive oil in a medium bowl and toss until coated. Arrange the potatoes, cut side down, in a single layer on the prepared baking sheet and season with salt and pepper, to taste. Roast until golden, about 35 to 40 minutes Remove the potatoes from the oven and set aside to cool for 15 minutes.
  • Salad: Peel and trim the ends from each orange. Using a paring knife, cut along the membrane on both sides of each segment. Free the segments and add them to a salad bowl. Squeeze the juice from the membranes into a small bowl and reserve 1 tablespoon of juice for the dressing. Add the arugula, Gorgonzola, walnuts and the cooled potatoes to the salad bowl.
  • Dressing: In a small bowl, whisk together the olive oil, reserved orange juice, vinegar, and orange zest until smooth. Season with salt and pepper, to taste.
  • Add the dressing to the potato mixture and toss well. Season with salt and pepper, to taste, and serve.

2 spears endive, washed, dried, and coarsely chopped
1 small radicchio, washed, dried, and coarsely chopped
1/3 lb baby arugula, washed, dried, and thinly chopped
1 teaspoon Dijon mustard
3 tablespoons red wine vinegar
3 tablespoons extra virgin olive oil
salt & freshly ground black pepper
shaved parmesan cheese

Steps:

  • Combine all 3 lettuces in large bowl and season with salt and pepper, to taste.
  • Whisk the mustard, vinegar, and oil together in a small bowl and season with salt and pepper, to taste. Pour dressing over salad and toss to combine.
  • Top with shavings of Parmesan.
