TEXAS ARMADILLO EGGS

This is a great recipe to make for a gathering of any kind. I usually end up making several batches because they don't last long with a group of hungry snackers. These photos are from the internet so you can see the end product.

Number Of Ingredients 6

24 fresh, medium jalapeno peppers

2 c bisquick
1 Tbsp garlic salt
2 lb monterey jack or cheddar cheese, cubed
bread crumbs for coating

Steps:

  • 7. Arrange the "eggs" evenly on a prepared (sprayed with cookng spray)cookie sheet. Spray "eggs" lightly with cooking spray and bake for 25 minutes until lightly browned.

Time 1h40m

Yield 6-8 serving(s)

Number Of Ingredients 3

2 lbs chicken breasts
2 lbs bacon
1 lb fresh jalapeno

Steps:

  • You will need toothpicks for this. I buy the strong kind so that they don't break easy. Soak toothpicks in water for about 30 minutes.
  • First you will need to cut jalapenos lengthwise in half and remove seeds. You can use canned jalapenos; I just prefer fresh.
  • Flatten chicken to about 1" and cut into 4-6 pieces (enough to roll over a jalapeno half). Season with whatever seasonings you prefer. I use my Dad's homemade seasonings.
  • Take a chicken piece, roll it around a jalapeno half, then roll 1 slice of bacon over top and secure with a toothpick. This may take a while; I usually do this the night before I grill or bake them.
  • Cook on grill until bacon is crisp and chicken is cooked through.
  • You can bake these in the oven at 350 degrees Fahrenheit for about 45 minutes; I just like them grilled.
  • You can steal some off the grill as you are cooking them! YUM!
  • If you have extra jalapenos left over, grill 'em if you can take the heat!

  • Preheat your smoker to 250 degrees F. I used cherry wood for this recipe, but any other smoking hardwood would work (hickory, oak, maple, etc.)
  • In a medium bowl, combine the cream cheese, cheddar cheese, and 1 Tablespoon of the sweet BBQ seasoning.
  • Spoon some of the cream cheese mixture into each of the cored and seeded jalapenos. Use the back of the spoon to press the filling all of the way into the jalapeno.
  • Wrap each jalapeno with 1/6th of the pork sausage. Use your hands to ensure the sausage is covering the entire jalapeno and roll back and forth into an egg shape.
