Hands down, this is the best quiche I've ever tasted! The family that I cook for call it "KizziQuiche"... from Allrecipies.com. I've tried it using low-fat ingredients also, with great success!

1/2 cup butter
1 teaspoon bottled minced garlic
1 small onion, chopped
12 ounces shredded sharp cheddar cheese, divided
1 cup milk
4 eggs, lightly beaten
salt & pepper, to taste
1 (10 ounce) box frozen chopped spinach, thawed & squeezed dry
6 ounces feta cheese with dried basil and tomato, crumbled
1 (4 ounce) jar sliced mushrooms, drained
1 frozen deep dish pie shell, slightly thawed

Steps:

  • Heat oven to 375°F.
  • In large skillet, saute onion and garlic in butter, app. 5 minuets or until just soft. Remove from heat.
  • Stir in 6 oz. cheddar, the feta cheese, mushrooms, and spinach. Mix well; place into pie crust.
  • In medium bowl, whisk together the eggs, milk, salt, and pepper. Pour over spinach mixture, poking holes to allow the egg mixture to seep inches.
  • Bake 15 minutes. Top with remaining 6 oz. cheddar, continue baking 40 minutes, or until knife inserted in center comes out clean.

Steps:

  • Preheat an oven to 450 degrees F (230 degrees C). Line pie pan with pie crust, and place a double layer of aluminum foil over the crust. Bake in the preheated oven for 5 minutes, and then remove foil. Continue baking until crust begins to set, about 5 to 7 minutes; remove from oven. Reduce oven temperature to 350 degrees F (175 degrees C).
  • In a mixing bowl, beat eggs with milk and flour. Stir in onion, mushrooms, spinach, broccoli, and feta cheese. Season with salt and pepper. Pour mixture into hot crust.
  • Bake quiche at 350 degrees F (175 degrees C) for 45 minutes to one hour. Quiche is done when knife inserted in center comes out clean. Cover edges of crust with foil if crusts begin to brown too quickly.

Steps:

  • Heat oven to 350ºF.

1 package frozen shortcrust pastry dough
1 tablespoon olive oil
2 cups packed fresh spinach leaves, trimmed and washed thoroughly
4 large eggs
2/3 cup creme fraiche (you can also use heavy cream or milk)
1/3 cup crumbled feta cheese
6 cherry tomatoes, halved
2 cloves garlic, minced
2 tablespoons fresh chives, chopped
fresh ground black pepper

Steps:

  • Two hours before you want to make the quiche, take the dough out of the freezer to defrost.
  • When you're ready to start, lay the dough into either a 10 inch quiche or springform baking pan, making sure you have enough dough to form a crust around the edge.
  • The crust should come 1 to 1 1/2 inches up the side of the pan.
  • Crumble the feta cheese onto the bottom of the crust.
  • Pour the olive oil into a saucepan and, when it is heated, throw in the spinach and cook until wilted.
  • Spread the spinach over the feta cheese.
  • Beat the eggs, garlic and creme fraiche together.
  • Pour over top of the feta cheese and spinach.
  • Place cherry tomatoes on top of the quiche.
  • Sprinkle chives and ground pepper on top.

1/3 cup plus 3 tablespoons all-purpose flour
3 tablespoons cold unsalted butter
1 tablespoon cold vegetable shortening
1 1/2 tablespoons ice water plus additional if necessary

1/3 cup sliced red bell pepper
1 tablespoon olive oil
2 cups packed fresh spinach leaves, trimmed and washed thoroughly (about 5 ounces)
2 large eggs
1/3 cup heavy cream or milk
1/3 cup crumbled feta cheese

Steps:

  • Preheat oven to 425°F.
  • In a bowl with a pastry blender or in a small food processor blend together flour, butter, shortening, and a pinch salt until mixture resembles meal. Add water and toss until incorporated, adding additional water if necessary to form a dough. Pat dough onto bottom and one half inch up sides of a 7 1/2-inch tart pan with removable fluted rim or a 9-inch pie plate and bake shell in bottom third of oven until set and pale golden, about 7 minutes.
  • While shell is baking, in a large skillet sauté bell pepper in oil over moderately high heat, stirring, 1 minute. Add spinach and sauté, stirring, until wilted and tender, about 1 minute. Remove skillet from heat and season spinach mixture with salt and pepper. In a small bowl whisk together eggs and cream.
  • Sprinkle feta over bottom of shell and arrange spinach mixture on top. Pour cream mixture over spinach and bake quiche on a baking sheet in middle of oven 15 minutes. Reduce temperature to 350°F. and bake until set, about 10 minutes.

Spinach Feta Quiche is a great make-ahead meal for a family dinner, a lovely ladies luncheon or a wonderful Sunday Brunch, too. Using my almond flour crust makes this recipe low carb and keto friendly.

1 ½ cup almond flour
¼ cup butter (salted)
½ tsp salt
½ tsp garlic powder
2 tsp olive oil (or more if you like)
4 large eggs
1 cup heavy cream
½ tsp salt
1/4 tsp black pepper
6 oz spinach (baby)
1 cup onion (finely chopped)
1 cup feta (crumbled)

Steps:

  • Preheat oven to 350*. In a bowl toss together the almond flour, salt and garlic powder. Melt butter in microwave safe dish. Pour melted butter over almond flour mixture. With a fork, mix all together.
  • In a low round dish (11"-12" wide...it's bigger than a regular 9' pie dish) a press the mixture evenly into the bottom of the dish and up the sides. Use the bottom of a flat glass or the back of a spoon to smooth and evenly distribute your crust while cleanly finishing the top edge of the dish.
  • *** The size of your tin or baking dish matters. IF you use a regular 9" pie dish you will have too much of the egg mixture filling. You can use any size tin you like, just adjust your baking time (deeper dish requires a little more time to cook the center...and a shallow wider dish will be closer to my time line originally stated in the recipe).
  • With a fork poke several holes in the bottom of the pie to help prevent any bubbling. Place in 350* oven for 10 or so minutes. You don't need to brown the crust at this point as you will be putting it back in the oven later.
  • Once the crust is done take out to cool a bit. You can put in fridge to cool some more while you are prepping the filling.
  • While the crust is baking chop the onion, (i like a smaller chop for quiche). In a large skillet heat a tsp of olive oil and the gently saute the onion for 5-6 minutes or until the onion has softened.
  • With the heat still going on the onions add another tsp of olive oil. Then add the spinach to the pan in big handfuls. It will seem like a lot of spinach, but as you toss the fresh spinach into the hot pan with the onion and the olive oil the spinach will begin to wilt down.
  • Wilt and soften the spinach completely down, constantly stirring into the onion. Turn off heat and set aside.
  • In a large bowl combine eggs, cream, salt and pepper. With a hand mixer beat the egg mixture until frothy (about 3 mins on low).
  • In the cooled pie crust add each of the ingredients in layers. First ½ the spinach and onion, ½ the feta cheese. Then gently pour the 1/2 the egg mixture over the top of the spinach and feta. Then layer the other half of the spinach and onion. Drizzle the other half of the egg mixture over the second layer of spinach. Sprinkle on top the remaining feta cheese.
  • Carefully place quiche dish on lower rack in 350* oven for 30 minutes. Then move your spinach feta quiche to upper rack for another 15 or so minutes.
  • **Oven times and depth of you dish matter when it comes to bake time. The deeper the dish the longer time to bake. The key is to have the center of your quiche set...so watch it the last 15minutes to gauge the center firmness.
  • Remove from oven when the center is set and let cool. Serve with a gorgeous french bistro side salad and sliced avocado.
  • This quiche is great for dinner, a ladies luncheon, breakfast or really anytime.

3 cups all-purpose flour
1/2 teaspoon salt
8 ounces unsalted butter, cold,cut into small pieces
1 large egg
6 -8 tablespoons ice water
3/4 cup shredded gruyere cheese (or Swiss or whatever)
2 (10 ounce) packages frozen spinach, thawed
1 tablespoon unsalted butter
2 tablespoons olive oil
1/4 cup finely diced onion
1 cup diced scallion, green and white part
1 clove garlic, minced
2/3 cup chopped fresh dill
1 teaspoon fresh ground black pepper
3 large eggs
1 cup half-and-half cream
1/2 cup heavy cream
6 ounces feta
brined kalamata olive, for garnish
1 sprig dill, for garnish

Steps:

  • Pastry- put all the dry ingredients into the food processor.
  • Pulse a few times, then add the butter, then pulse a few more times until the butter is in pea sized chunks.
  • Beat the egg into 3 tbl.
  • of the water and add to the mix, pulsing a few more times.
  • Add more water as needed to get the dough to just come together, a tablespoon at a time, pulsing after each addition.
  • Turn the dough out onto plastic wrap, knead once or twice, pat flat and chill for about an hour.
  • Pull out of the fridge, roll out on a floured board until it will fit into the tart pan (or the standard springform pan, with 2 inches of dough going up the side).
  • Trim the edges, prick the bottom several times with a fork, and lay a piece of foil across the bottom weighted down with beans or pennies.
  • Blind bake at 425 degrees or about 8 minutes or so, remove the foil and beans, bake a few minutes longer or until the crust gets rid of any sheen and looks dull.
  • Remove from the oven, sprinkle with the gruyere, and set aside.
  • Decrease the oven heat to 375 degrees.
  • Filling: Drain the spinach and squeeze it dry.
  • Saute the onion and scallions and a small pinch of kosher salt in the butter and oil until soft.
  • Add the spinach and saute until completely wilted, (about 3 minutes or so).
  • Add the dill and pepper and saute another 2 minutes.
  • Set the mixture aside to cool completely.
  • Whisk the eggs, then add the half-n-half, the cream and mix well.
  • Crumble the feta into the spinach, then add to the cream mixture.
  • Mix until well combined, the pour into the prepared tart shell.
  • Place the tart pan on another baking sheet and bake until the filling is slightly puffed, light brown, and a tester inserted in the center comes out clean, about 40 minutes.
  • Remove from the oven and let stand 10 minutes before removing from the tart pan.
  • Garnish with olives and dill sprigs.

Inspired by a desire to recreate a favourite quiche from a local coffee shop. I generally serve with a green salad. Serves 4.

Steps:

  • To make the pastry, tip the flour, herbs if using and butter into a bowl, then rub together with your fingertips until completely mixed and crumbly. Add 4 tbsp cold water, then bring everything together with your hands until just combined. Roll into a ball for use straight away or chill for up to 2 days.
  • Roll out the pastry on a lightly floured surface to a round about 4cm larger than a 22cm tart dish (the one I use is of glass and about 4 cm deep). Use your rolling pin to lift it up, then drape over the tart case so there is an overhang of pastry on the sides. Using a small ball of pastry scraps, push the pastry into the corners of the dish and run the rolling pin over the top to trim. Chill in the fridge or freezer for 20 mins. Heat oven to 200C/fan 180C/gas 6.
  • Lightly prick the base of the tart with a fork, line the tart case with a large circle of greaseproof paper or foil, then fill with baking beans. Blind-bake the tart for 20 mins, remove the paper and beans, then continue to cook for 5-10 mins until biscuit brown.
  • While the tart case cooks, in a frying pan saute the chopped pepper in butter until softened (about 2 minutes). Then add the spinach and sauté just till wilted. Finally add the chopped sun dried tomatoes and turn off the heat.
  • Beat the eggs in a large bowl. Gradually add the creme fraiche, then stir in the dried oregano and season. You may not need salt as the feta will provide quite a bit. When the case is ready, sprinkle the crumbled feta over the base, then the sautéed spinach. peppers and tomato and finally pour over the egg mix. Bake for 20-25 mins until set and golden brown. Leave to cool in the case, then remove from the tin.

1 & 2/3 cups plain flour
145 grams butter (cold and cut into cubes)
2 tbsp cold water
1 cup milk
5 eggs
1/2 tsp salt
1/2 tsp pepper
1 cup baby spinach leaves
100 grams feta (crumbled)
1 cup tasty cheese (grated)
4 rashers short cut bacon (diced)
100 grams cherry tomatoes (cut in half)
2 cloves garlic (crushed)
1 tbsp onion flakes

Steps:

  • Place the flour and butter into a large bowl and use your fingertips to rub the butter into the flour. Continue until the mixture resembles bread crumbs.
  • Slowly add the water and use a butter knife to combine.
  • Turn the mixture out onto a floured bench and knead until the mixture comes together and is smooth. If your dough is too dry, add a little extra water.
  • Cover the dough with cling wrap and place into the fridge for 30 minutes to chill. In the meantime you can preheat your oven to 190 degrees.
  • Lightly dust a rolling pin and your bench with flour and roll the pastry out until it's approximately 3 - 4mm thick - use your pie tin (I used a 22cm one) as a guide to how big your pasty needs to be, you want to allow a 3cm border of pastry around your dish for the sides.
  • Carefully place your pasty into your pie dish and gently press the pastry against the edges. Trim off any excess, but do leave approximately 1/2 cm of pastry hanging over the tin as it will shrink.
  • Place a sheet of baking paper on top of the pasty and top with baking weights or rice. Cook for 14 minutes before removing the baking paper and weights and cook for a further 6 minutes.
  • To make your quiche mixture, in a large jug combine the milk, eggs and salt and pepper and mix well.
  • Sprinkle the baby spinach, bacon pieces, crumbled feta, onion flakes, tomatoes and grated cheese over the par-cooked pastry base and carefully pour the milk mixture over the top. Place into the oven and cook for 35 - 40 minutes or until golden on top and cooked through.

1 9" Pie Crust (pre-made refrigerated roll and bake)
3 tablespoons Butter
1 small Onion (white or yellow, diced)
2 tsp Garlic (minced)

Steps:

  • Take your pre-made pie crust out of the refrigerator about an hour before you make your quiche. You want the crust to be room temperature.
  • Preheat oven to 350 degrees.
  • In a saute pan over medium high heat, add the butter and onion. Saute over medium high heat until the onion is lightly golden brown, about 6 minutes. Add the minced garlic and continue to cook until transparent, or about 4 minutes more. Add in the spinach and mix for another 2-3 minutes, or until the spinach has wilted. Set aside to cool slightly.
  • In a medium-sized mixing bowl, whisk together the eggs, feta cheese, white cheddar, milk, salt, and pepper. Mix until well combined, then stir in the cooled onion mixture.
  • Roll out the pie crust on a lightly floured surface. Using the rolling pin, transfer the pie crust to a 9" pie dish, pinch the edges to make a decorative crust and pour the spinach and feta egg mixture into the pie crust.
  • Bake the quiche in a preheated 350 degree oven for about 50-60 minutes, or until the egg mixture is set in the middle. You can test by gently shaking the pan just a little to see if the middle of the quiche is still runny. If you still aren't sure, insert a toothpick or knife into the center and it should come out clean.
  • Once baked, remove from the oven and allow to cool for at least 5 minutes before slicing and serving. Enjoy!
