1-1/2 cups shortening
2-2/3 cups packed brown sugar
4 large eggs, room temperature
2 teaspoons vanilla extract
2-1/4 cups all-purpose flour
2 teaspoons ground cinnamon
1-1/2 teaspoons baking soda
1 teaspoon salt
1/2 teaspoon ground nutmeg
4 cups old-fashioned oats
FILLING:
3/4 cup shortening
3 cups confectioners' sugar
1 jar (7 ounces) marshmallow creme
1 to 3 tablespoons 2% milk

Steps:

  • Preheat oven to 350°. Cream together shortening and brown sugar until light and fluffy, 5-7 minutes. Beat in eggs and vanilla. In another bowl, whisk the next 5 ingredients; gradually beat into creamed mixture. Stir in oats. , Drop by rounded teaspoonfuls 2 in. apart onto lightly greased baking sheets. Bake until golden brown, 10-12 minutes. Remove to wire racks to cool., For filling, cream shortening, confectioners' sugar and marshmallow creme. Add enough milk to achieve spreading consistency. Spread filling on the bottoms of half of the cookies; cover with remaining cookies.

1 cup shortening
2 cups packed brown sugar
2 large eggs
2 tablespoons whole milk
2-1/2 cups all-purpose flour
2 cups old-fashioned oats

Steps:

  • In a bowl, cream shortening and brown sugar. Add eggs and milk; mix well. Combine flour, oats, baking soda, salt and cinnamon; add to the creamed mixture. Drop by rounded teaspoonfuls 2 in. apart onto lightly greased baking sheets. Bake at 350° for 12-15 minutes or until done.

1 cup white sugar
½ teaspoon baking soda
1 teaspoon salt
¼ teaspoon ground nutmeg
¾ teaspoon ground cinnamon
¾ cup shortening
1 egg, beaten
1 banana
1 ¾ cups rolled oats

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • In a large bowl, stir together the flour, sugar, baking soda, salt, nutmeg and cinnamon. Cut in the shortening, until the mixture appears mealy. Stir in the egg, mashed banana and oatmeal until well blended. Drop by rounded spoonfuls onto an unprepared cookie sheet.
  • Bake for 8 to 10 minutes in the preheated oven. Remove from baking sheet to cool on wire racks.

1 cup unsalted butter, softened
330 grams packed dark brown sugar (1 3/4 cups)
2 tablespoons honey
2 large eggs, at room temperature
1 tablespoon vanilla extract
190 grams all-purpose flour (1 1/2 cups)
7 grams fine sea salt (1 teaspoon)
3 grams baking powder (1 teaspoon)
8 grams ground cinnamon (4 teaspoons)
260 grams rolled oats (3 cups)
100 grams dates, pitted and chopped (1/2 cup)
65 grams granulated sugar (5 tablespoons)
6 ounces cream cheese, softened
6 tablespoons mascarpone
25 grams confectioner's sugar (3 tablespoons)

Steps:

  • Heat oven to 350 degrees. Spread coconut flakes on a rimmed baking sheet. Toast, stirring occasionally, until lightly colored and fragrant, 7 to 10 minutes. Cool. Raise oven temperature to 375 degrees.
  • In the bowl of a mixer fitted with the paddle attachment, cream the butter until light. Beat in brown sugar and honey, then beat until very fluffy, about 5 minutes. Beat in eggs, one at a time. Beat in vanilla.
  • In another large bowl, whisk together flour, salt, baking powder and 1 teaspoon (2 grams) cinnamon. With the mixer set on low, beat flour mixture into butter mixture until combined. Beat in oats, dates and toasted coconut.
  • Line three baking sheets with parchment paper. In a small bowl, stir together granulated sugar and remaining 3 teaspoons (6 grams) cinnamon. Roll heaping tablespoonsful of dough into balls, then roll balls in cinnamon sugar; transfer to baking sheet, leaving about 1 1/2 inches of space between dough balls. Bake until cookies are golden brown, about 15 minutes. Let cool in the pan for 2 minutes, then transfer to a wire rack to cool completely.
  • Make the filling: Using the electric mixer fitted with the paddle attachment, beat cream cheese until smooth. Beat in mascarpone, confectioner's sugar and vanilla. Scrape down sides of bowl. Sandwich about 1 tablespoon of filling between two cookies; repeat with the remaining filling and cookies.

With a little experimenting, I came up with these chewy, spicy, oatmeal raisin cookies. They make your kitchen smell wonderful while they are baking. They almost remind me of Christmas because the spices smell so good.

½ cup butter, softened
½ cup butter flavored shortening
1 cup packed light brown sugar
½ cup white sugar

1 teaspoon vanilla extract
1 ½ cups all-purpose flour

½ teaspoon salt
3 cups rolled oats
1 cup raisins

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, cream together the butter, butter flavored shortening, brown sugar, white sugar, eggs, and vanilla until smooth. 1 1/2 cups shortening
2 2/3 cups sugar, brown
4 eggs, large
2 teaspoons vanilla, pure extract
2 1/4 cups flour
1 1/2 teaspoons baking soda
1 teaspoon salt
2 teaspoons cinnamon, fresh ground
1/2 teaspoon ground nutmeg
1/4 teaspoon mace
4 cups oats, old fashioned
3/4 cup shortening
3 cups icing sugar
1/2 tablespoon vanilla
7 ounces marshmallow creme
1 -2 1/2 tablespoon milk

Steps:

  • COOKIES:
  • Preheat oven to 350 degrees.
  • Cream the shortening and sugar in a large bowl.
  • Add the eggs, one at a time, beating well after each egg, then add the vanilla and mix well.
  • Combine flour, baking soda, salt and spices mix well and add to creamed mixture, then stir in the oats.
  • Drop by rounded teaspoon, two inches apart onto lightly greased sheet and bake at 350 degrees for 10 - 12 minutes, then remove to wire rack to cool.
  • FILLING:
  • While the cookies are cooling, grab a small bowl, cream the shortening, sugar and marshmallow crème together.
  • Add the vanilla to the milk.
  • Next add the milk slowly to the marshmallow mixture, to get a nice spreading consistency you may not need to use all the milk.
  • Spread filling on one cookie and top with another cookies.
  • Get yourself a big glass of cold milk and enjoy!

2 cups quick-cooking rolled oats
2/3 cup butter or 2/3 cup margarine
1 cup granulated sugar
1/4 cup corn syrup
1/4 cup milk
1 cup semi-sweet chocolate chips, melted
1 cup white chocolate chips, melted

Steps:

  • Preheat oven to 375°F.
  • Line cookie sheet with buttered foil.
  • Mix flour and oats together in a medium bowl.
  • In a large bowl, mix together butter, sugar and corn syrup.
  • Add milk to the butter mixture and mix well.
  • Stir in the flour mixture and mix well.
  • Drop batter by level teaspoonfuls 3 inches apart onto prepared cookie sheet.
  • Press each cookie slightly with the back of a fork or spoon.
  • Bake for 8 to 10 minutes or until cookies have spread and are browned around the edges.
  • Immediately transfer the foil and cookies to a wire rack.
  • Peel cookies off foil after they've cooled.

2 cups uncooked rolled oats
2 eggs
3/4 cup vegetable oil
1/2 cup milk, do not use skim
2 cups raisins
1 cup chopped walnuts
1/4 cup dark brown sugar, packed

Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • In a large bowl combine all ingredients and mix well.
  • Drop cookies from a teaspoon onto a ungreased cookie sheet, (I still spray the cookie sheets with cooking spray) Bake for 12 minutes until cooky tests well when checked with a toothpick.
  • Cool for one minute on cookie sheet.
  • Remove to wire racks to cool.
