Here is one for the chocolate/peanut butter lover, old or young. I say old first; this was served as the dessert on our lunch tray, 1st grade through 12th grade, usually on "Pizza Friday." And one would not think twice by propositioning a trade of their rectangle slice of frozen pizza for your peanut butter square. (This is where that term you learned in social studies class, "bartering", came into good use!) Can be served for up to 12-24 servings; 24 small servings or 12 nice big servings, like the ones served in the cafeteria at Whitehall School District, Pennsylvania. To this day, they are still served! (Prep/cook time does not include chill time).

Number Of Ingredients 6

2 lbs peanut butter
1/4 lb butter or 1/4 lb margarine, softened
1 teaspoon vanilla
1 lb confectioners' sugar
1/3 cup brown sugar
8 ounces milk chocolate, melted

Steps:

  • Mix first 5 ingredients together with a heavy duty mixer.
  • Meanwhile, melt the milk chocolate on stovetop.
  • Spread in a 13x9 inch pan and top with the melted milk chocolate.
  • Chill; cut into squares upon serving.
  • *Forthe Old School Deja Vu effect: serve each square in a muffin/cupcake paper.

Recipe off a bag of Robin Hood flour. Found it easy to make and a good bar cookie. If you like peanutbutter and chocolate, try these!

1/2 cup sugar
1/2 cup packed brown sugar
1/2 cup butter
1 cup flour
3/4 cup quick-cooking oats or 3/4 cup old fashioned oats
1/3 cup peanut butter
1/2 teaspoon baking soda
1/2 teaspoon vanilla
1/4 teaspoon salt
1 egg
1 cup semi-sweet chocolate chips (1- 6 oz bag)
1/3 cup powdered sugar
2 tablespoons peanut butter
1 -2 tablespoon milk

Steps:

  • Preheat oven to 350 Degrees F.
  • Grease 13 x 9 inch pan.
  • Mix sugars and butter in large bowl until well blended.
  • Stir in flour, oats, peanut butter, baking soda, vanilla, salt and egg.
  • Spread and press into pan.
  • Bake 15 to 20 minutes on until golden brown.
  • Immediately sprinkle with chocolate chips.
  • Return to oven about 1 minute until chips are glossy.
  • remove and smooth and spread chips with a knife or spatula.
  • Mix glaze until smooth, and thin enough to drizzle over melted chips.
  • Cut into 2 inch squares.

It's taken me a while to find this recipe. There are many versions of "the peanut butter bar" but, I believe this recipe comes the closest to what I remember eating in the 1960's (via our elementary school lunchroom). Boy those ladies could really cook back then!

1 ⅛ cups white sugar
1 ⅛ cups brown sugar
1 cup unsalted butter, softened
2 large eggs
¾ cup peanut butter
1 teaspoon vanilla extract
2 cups all-purpose flour
1 ⅔ cups rolled oats
1 teaspoon baking soda
1 pinch salt
2 cups powdered sugar
4 tablespoons unsalted butter, softened
2 tablespoons milk, or more as needed
2 tablespoons peanut butter
1 teaspoon vanilla extract

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 15x10-inch baking pan.
  • Cream white sugar, brown sugar, butter, and eggs together in a mixing bowl. Mix in peanut butter and vanilla extract. Add flour and blend well. Add oats, baking soda, and salt and mix to combine. Spread into the prepared pan.
  • Bake in the preheated oven until golden and the edges start to pull away from the sides of the pan, about 20 minutes. Remove from the oven and let cool or chill in the refrigerator, about 30 minutes.
  • While bars cool, blend powdered sugar, butter, milk, and peanut butter together in a bowl, adding more milk to give frosting the desired consistency. Frost cooled bars and cut into 20 pieces.

This is like a Reese's Peanut Butter Cup to me. Dangerously creamy. Recipe courtesy of Taste of Home Contest Winning Annual Recipes 2010. I skipped the foil and left it in the pan. Serving size is estimated.

2 cups confectioners' sugar
3/4 cup creamy peanut butter
2/3 cup graham cracker crumbs
1/2 cup butter, melted
2/3 cup semi-sweet chocolate chips
4 1/2 teaspoons creamy peanut butter
1/2 teaspoon butter

Steps:

  • Line a 9 inch square pan with foil and butter the foil. Set aside. (I buttered my pan and skipped this step).
  • In a large bowl, combine confectioners' sugar, peanut butter, graham cracker crumbs, and the butter. Spread into prepared pan.
  • Combine topping ingredients in a microwave-safe bowl and heat until melted.
  • Spread over peanut butter layer. Refrigerate until cool.
  • Using foil, lift out of pan. Cut into 1 inch squares.
  • Store in an airtight container in the refrigerator.
