SIMPLE SHIRAZI SALAD RECIPE

Shirazi Salad, or Salad-e Shirazi, is a simple and bright Persian cucumber and tomato salad that's loaded with herbs and dressed in lime juice and extra virgin olive oil! This quick no-lettuce salad is the perfect side to almost any entree. Read the full post for additional tips and suggestions for what to serve along!

3 Roma tomatoes, small diced
1 English cucumber (or 4 small Persian cucumbers), small diced
1/4 to 1/2 cup finely chopped onions (red or yellow onions will work here)
1/2 green bell pepper (optional), chopped into small pieces
2 to 3 tbsp EACH chopped fresh parsley, cilantro, and dill
1 tbsp dried mint (or 1/2 cup chopped fresh mint)
Salt and pepper
Sumac, to taste (optional)
Juice of 2 large limes (4 tbsp)
3 tbsp extra virgin olive oil (I used Early Harvest Greek extra virgin olive oil)

Steps:

  • Place diced tomatoes for a few minutes in a colander to release excess liquid. (I don't remove the seeds, so this step helps.)
  • In a large bowl, place the diced tomatoes, cucumbers, onions, and bell peppers.
  • To flavor, add fresh herbs, dried mint, and a generous pinch of salt and pepper. Add sumac (I started with 1 tsp). Finally, add lime juice, and a generous drizzle of extra virgin olive oil. Toss to combine.
  • If you have the time, cover and chill this salad in the fridge for 30 minutes to 1 hour for best taste.

A traditional Persian side dish made with eggs, chicken, potatoes, and pickles, garnished with black olives and cherry tomatoes. Packed with flavor, this versatile potato salad can be served as a side, in a sandwich or with breakfast.

1 2-3 pound whole chicken, boiled (or 4 cups shredded chicken meat)
1 teaspoon sea salt (plus extra if needed)
3 large potatoes, peeled, boiled, diced
3 eggs, hardboiled, peeled, chopped
2 cups diced dill pickles
3 cups mayonnaise
1/4 cup lemon juice
1/8 cup olive oil
1/2 teaspoon pepper (plus extra if needed)
cherry tomatoes, halved
black olives, whole or halved

Steps:

  • In large pot, add the chicken and enough water to cover the meat by 3-inches. Add salt, cover and bring to a boil, reduce heat, cook on medium for 1 hour. Remove chicken from water and let cool. Remove skin and bones from meat and discard. Shred 4 cups of the chicken, saving the remaining meat and chicken broth for another use. Transfer shredded chicken to the bowl.
  • While the chicken is cooking, boil potatoes and eggs in separate pots until done. Remove from water to cool before peeling eggs and dicing potatoes. Add both to a large bowl and set aside.
  • Dice pickles and add to the bowl
  • In small bowl, whisk together mayonnaise, lemon juice, olive oil, salt, and pepper.
  • Pour dressing over chicken salad and toss well. Adjust salt and pepper to taste.
  • Cover and refrigerate a minimum of 2 hours to allow flavors to infuse together.
  • Transfer to a serving bowl or plate and garnish with tomatoes and black olives. Serve as an appetizer or side dish.

SALAD OLIVIEH (PERSIAN POTATO SALAD WITH CHICKEN)

Salad Olivieh is a Persian potato Salad studded with peas, dill pickles, eggs and chicken. It makes a wonderful appetizer or lunch.

1 pound russet potatoes
3 large eggs
3 TBS extra virgin olive oil, divided
1 boneless chicken breast
1 teaspoon salt, divided
1/4 cup lemon juice
3 large dill pickles, diced
2 cups frozen peas, thawed
1/4 teaspoon ground black pepper
1/4 cup mayonnaise
sliced radishes
green onions
fresh herbs

Steps:

  • Wash and peel potatoes then cut in quarters.
  • Place potatoes in a large saucepan and cover with water.
  • Add eggs in with the potatoes and bring to boil.
  • Once boiling, reduce heat to medium and continue cooking until potatoes are fork tender. Drain the water and transfer potatoes to a large mixing bowl to cool. Set eggs in a cold water bath to cool.
  • While the eggs and potatoes cook, in a small pan over medium-high heat add 1 TBS extra virgin olive oil.
  • Season both sides of chicken with 1/2 teaspoon salt.
  • Once oil is hot add chicken breast.
  • Cook until the chicken breast is browned, then flip over and cook other side of chicken breast.
  • Reduce heat to low and add 2 TBS lemon juice.
  • Cover pan and continue cooking until chicken is cooked thoroughly and juices run clear, about 15 minutes. Remove chicken from heat and cool.
  • When potatoes are cool to touch, coarsely cut into 1/2-inch pieces in the mixing bowl.
  • Peel the cooked eggs, dice and add to the potatoes.
  • Dice the cooled chicken breast and add to the mix.
  • Add chopped pickles, peas, 1/2 teaspoon salt and 1/4 teaspoon pepper to the potato mix and stir to combine.
  • Stir mayonnaise, 2 TBS lemon juice and 2 TBS olive oil into the potato salad until smooth.
  • Cover and refrigerate salad olivieh until read to serve.
  • When ready to serve, transfer salad to a serving plate and smooth into a round mound.
  • Garnish as you please with sliced radishes, green onions and fresh herbs.
  • Serve alone or with lavash.

6 medium potatoes, peeled and cubed
1/4 cup all-purpose flour
1 tablespoon sugar
1-1/2 teaspoons salt

4 hard-boiled large eggs
2 celery ribs, chopped
1 medium onion, chopped

  • Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook until tender, 15-20 minutes. Drain and cool to room temperature., Meanwhile, in a small heavy saucepan, combine flour, sugar, salt, mustard and pepper. Gradually stir in water until smooth. Cook and stir over medium-high heat until thickened and bubbly. Reduce heat; cook and stir 2 minutes longer., Remove from the heat. Stir a small amount of hot mixture into eggs; return all to the pan, stirring constantly. Bring to a gentle boil; cook and stir 2 minutes longer. Remove from the heat and cool completely. Gently stir in vinegar., Chop and set aside 1 hard-boiled egg; chop the remaining hard-boiled eggs. In a large bowl, combine the potatoes, celery, onion and eggs; add dressing and stir until blended. 8 medium potatoes, boiled
4 hard-boiled eggs
3 lemons, juice of
1 lb chicken
1 (15 ounce) can baby green peas (drained)
3 -4 cups mayonnaise (or more to taste)

Steps:

  • Boil, bone and cool the chicken.
  • Grate the potatoes & eggs.
  • Tear chicken into small pieces.
  • Mix together with mayonnaise and salt.
  • Mold the salad to your personal preferences by starting out using 3c of mayonnaise and adding more.
  • Do the same with the salt.
  • When mold is to your liking, add lemon juice and mix.
  • Cover mold with a layer of baby sweet peas.
  • Let set in the ice box overnight.
  • Do not eat right away or lemon juice will be too overpowering.

1/3 cup sugar
1/3 cup cider vinegar
1/4 cup canola oil

1 medium onion, chopped
2 jars (16 ounces each) pickled whole beets, drained and chopped
1 cup chopped celery
1/2 cup chopped sweet pickles
1/2 cup chopped dill pickles
1 cup mayonnaise

Steps:

  • Place potatoes in a Dutch oven; cover with water. Bring to a boil. Reduce heat; cover and simmer until tender, 10-15 minutes. Drain and transfer to a large bowl., Meanwhile, combine sugar and vinegar in a small saucepan. Cook and stir over medium heat until sugar is dissolved; pour over hot potatoes. Cool to room temperature., In a large skillet, heat oil over medium-high heat. Add carrots and onion; cook and stir until crisp-tender, 6-8 minutes. Add to potatoes. Stir in beets, celery and pickles. Combine mayonnaise, salt and pepper; gently stir into potato mixture. Refrigerate, covered, until chilled.
