Our family has known for decades, that if you have a canker(mouth)sore, you eat 1/2 can of green beans and the canker will be gone the following day. A prescribed medication, recently, rendered my mouth full of cankers and too sore to even chew canned green beans. DIL suggested putting the canned green beans in my Bullet blender (best invention in years).My thought was, baby food. Okay! DH suggested soup! Thus this tasty recipe was born only an hour ago. I am waiting to see what the Zaar-ist comunity will add to it. Tabasco? Bacon? A grilled cheese sandwich? I dedicate this recipe to my DIL, Shar.

Number Of Ingredients 9

1 1/2 cups chicken broth
1 medium onion, diced
2 (14 1/2 ounce) cans green beans, semi-drained, pureed
2 -3 tablespoons butter
2 garlic cloves, minced
1/2 teaspoon dried savory
1 teaspoon dried basil
1 tablespoon lemon juice
1 tablespoon sour cream (optional)

Steps:

  • In soup pot or large sauce pan, melt the butter.
  • Add the onions and caramelize.
  • When onions are golden add the minced garlic and herbs.
  • When garlic smells wonderful, add the broth and heat through.
  • Add the pureed green beans and salt & pepper,and lemon juice.
  • Heat to serving temperature, bowl-up, add a dollop of sour cream.

This is from the original Enchanted Broccoli Forest cookbook. It is an incredibly delicious fresh soup! It is ridiculously simple and is specifically designed for very, very fresh green beans - straight from a garden, if possible. The simplicity assumes that the beans are delicious in and of themselves. If you try this with inferior (old, tough, out-of-season) or frozen beans, the results can't be guaranteed.

1 1/2 lbs very fresh green beans, trimmed
2 cups hot milk (soy milk will work)
salt & freshly ground black pepper
minced fresh basil or chives (optional)

Steps:

  • Steam the green beans until just tender and bright green.
  • Use a blender to purée the beans in the milk until very smooth.
  • Return the purée to the pot and season to taste.
  • heat very gently (don't boil it) just before serving.
  • You can also chill the soup and serve it cold.
  • Top each serving with a scattering of minced fresh herbs, if desired.
  • Note: You can use half rich chicken stock and half milk- or even cream- for a more intense soup.

I think this is the only recipe I actually made out of some low-cal cookbook I bought. This is NOT a recipe for frozen or canned beans, use fresh and using enough garlic is the key. I usually use about 12 - 15 cloves. Like the title says, it's really quick, easy and awesome...I think it's also healthy!! Healthy is not one of my favorite cooking terms, so if it's healthy and I like it, you know it's good!!

Number Of Ingredients 10

6 cups chicken broth (use fresh, canned low-fat or low sodium, whatever you like)
1 teaspoon salt (to taste)
1 sprig thyme (or 1/2 tsp dried thyme)
1 bay leaf
1 teaspoon olive oil
12 garlic cloves, pressed (I use up to 15 cloves)
1/2 lb fresh green beans, cut into 1 1/2 inch lengths (basically cut so they will fit on a soup spoon)
1 egg
3 teaspoons parsley
crouton (or crostini, optional)

Steps:

  • Combine first 5 ingredients in a pot and bring to a boil.
  • Reduce to a simmer.
  • Press in garlic.
  • Add beans.
  • Simmer uncovered 10 minutes.
  • Adjust seasonings.
  • Beat egg well in a small bowl.
  • Temper egg by ladling some hot broth into the bowl.
  • Stir the soup while adding the egg to the simmering broth.
  • Add pepper to taste.
  • Top with croutons crostini if you choose.

I was so surprised when I found this recipe. It's made with fresh green beans, and uses potatoes to thicken it instead of flour or cornstarch. I especially like the tarragon in this soup. If it gets too thick, use the larger amount of whipping cream. To save calories, I like to use fat-free half and half. This was in a box of my mother's clipped recipes. I don't know where she clipped it from....looked like magazine paper to me.

6 green onions, sliced
6 shallots, chopped
1 garlic clove, minced
3 tablespoons butter, melted
2 medium baking potatoes, peeled and diced
4 cups chicken broth
2 lbs fresh green beans, cut into 2 inch pieces
1/2-1 cup whipped cream or 1/2-1 cup half & half light cream
1 tablespoon lemon juice
1/2 teaspoon dried tarragon
1/4 teaspoon pepper

Steps:

  • Saute the green onions, shallot and garlic in the butter in a medium skillet over medium heat, stirring constantly, until tender. Set aside.
  • Cook the diced potatoes in boiling water to cover for 15 minutes, or until tender (depends on how small you diced them); drain well, and set aside.
  • Bring the chicken broth to a boil in a large saucepan; add green beans, and cook 30 to 35 minutes or until tender. Add the reserved green onions and potato; stir well.
  • Transfer half of the green bean mixture to the container of an electric blender; cover and process until smooth, stopping once to scrape down the sides. Repeat the procedure with the remaining green bean mixture. (Sometimes I like to use my immersion blender, leaving some of the pieces whole). Return the pureed mixture to the saucepan and bring to a boil. Reduce heat; stir in whipping cream or half and half, lemon juice, and tarragon. Cook until thoroughly heated. Serve, and sprinkle with black pepper.

Traditional Mennonite Green Bean Soup image

This is, of course, best with fresh-from-the-garden green beans, but frozen beans work equally well. The original recipe calls for an additional dollop of sour cream before serving, but I've grown up on this stuff just served with milk or half-and-half cream at the table. When I make this now, instead of boiling a ham bone for the stock, I slice up a pound or two of farmer sausage to make the stock and then just leave the meat in the soup. It's a mild soup, so some people add salt or chicken bouillon to give it a little extra flavour. You can also add other fresh veggies as well, like peas and chopped carrots. This is usually served with fresh New Bothwell cheese (here in Manitoba, anyway) and homemade buns.

2 quarts ham stock
2 medium onions, diced
6 cups green beans, chopped into 1/2 " - 1-inch lengths
1 1/2 cups potatoes, peeled and diced
fresh parsley
summer savory

Steps:

  • In a large stock pot, add vegetables to broth and simmer until vegetables are well done, about an hour.
  • Half an hour before serving, add finely shredded parsley and savory, which has been tied for easy removal. (I usually just throw a spice ball with this stuff in it along with the veggies and leave it in there for the full hour).
  • Remove herbs and add 2 to 3 tablespoons sour cream. Combine and serve.
  • Or, instead of adding sour cream, just serve with cream or milk at the table.
