TRADITIONAL MEATLOAF RECIPE WITH BROWN SUGAR AND KETCHUP GLAZE
A Traditional Meatloaf Recipe, this comfort food is just like mama used to make it. Moist and flavorful, you this is the only meatloaf recipe you will need. The brown sugar and ketchup glaze is not to be missed!

Steps:
- Combine ketchup, brown sugar and cider vinegar in a small bowl.
- Preheat the oven to 350ºF. Line a rimmed baking sheet with foil. Set aside.
- Heat a skillet over medium-high heat. Add the oil, and once shimmering, add the onion and cook until tender. Add the garlic and cook an additional minute, then remove from the heat to cool slightly.
- In a medium bowl, combine the eggs, milk, Worcestershire sauce, mustard, salt, pepper, thyme and hot pepper sauce. Mix until combined.
- In a large bowl, combine the meat, crackers, parsley, and cooked onion and garlic mixture. Add the egg mixture and mix just until combined.
- Transfer the mixture to the prepared baking sheet. Form into a loaf about 9×5-inches.
- Brush half of the glaze over the meatloaf.
- Bake for 30 minutes, then spread the remaining glaze over the top and sides of the meatloaf.
- Return to the oven and bake until the meatloaf registers 160ºF on an instant read thermometer, about another 20-30 minutes.
- If desired, you can turn on the broiler for the last couple minutes to really thicken up the glaze.
- Cool for 10-15 minutes before slicing to serve.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5-inch loaf pan.
- Stir ketchup, brown sugar, salt, and chili powder together in a bowl until smooth. Spread a small amount of the ketchup mixture into the bottom of the prepared loaf pan.
- Mix ground beef, croutons, onion, eggs, milk, and black pepper together in a large bowl; shape into a loaf and put into prepared pan. Spread remaining ketchup mixture over the loaf.
- Bake in the preheated oven until no longer pink in the center, about 1 hour. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 5x9 inch loaf pan.
- Press the brown sugar in the bottom of the prepared loaf pan and spread the ketchup over the sugar.
- In a mixing bowl, mix thoroughly all remaining ingredients and shape into a loaf. Place on top of the ketchup.
- Bake in preheated oven for 1 hour or until juices are clear.

MEAT LOAF WITH BROWN SUGAR-KETCHUP GLAZE
If you like, you can omit the bacon topping from the loaf. In this case, brush on half of the glaze before baking and the other half during the last 15 minutes of baking. - Glaze: Mix all ingredients and set aside.
- Meat loaf:.
- Heat oven to 350°F.
- Heat oil in medium skillet and sauté onion and garlic about 5 minutes. Set aside to cool.
- Mix eggs with thyme, salt, pepper, mustard, Worcestershire sauce, pepper sauce and milk.
- Add egg mixture to meat in large bowl, along with crackers, parsley and cooked onion and garlic.
- Mix until mixture does not stick to the bowl, if mixture sticks to bowl add milk by tablespoons until it does not stick.

- For the glaze: Mix all ingredients in a small bowl; set aside.
- For the meatloaf: Preheat oven to 350 degrees. Heat oil in a medium skillet. Add onion and garlic, saute until softened, about 5 minutes; set aside to cool.

- Mix ground beef, onion, salt, pepper and garlic powder in a bowl.
- Mix in bread, milk, egg, 1 tbsp mustard, and 1/4 cup ketchup.

- For the Glaze: Mix all ingredients in small saucepan and set aside.
- For the meat loaf: Heat oven to 350°. Heat oil in medium skillet; add celery and garlic. Saute until softened, about 5 minutes. Set aside while preparing main ingredients.

MEATLOAF WITH KETCHUP GLAZE
For a while now a long while I have wanted meatloaf--ketchup glazed meatloaf, but not a dried dense overcooked one. These days we eat less red meat, but once in a while you need to feed your soul. This uses low sodium saltine crackers soaked with the milk so it is a moist light loaf, with the egg whites lightly beaten. Also cooked on broiler pan from toaster oven that died--kept the pan so fat drained away.

- In large bowl mix crackers with milk. Let this sit a couple of minutes and then mix the rest in and shape into a loaf.
- Spray the rack or broiler pan with spray. You want to drain away the fat.
- Bake 1 1/4 hrs.

- 1. FOR THE MEATLOAF: Adjust oven rack to upper-middle position and heat oven to 350 degrees. Line wire rack with aluminum foil and set in rimmed baking sheet. Melt butter in 10-inch skillet over low heat. Stir baking soda into melted butter. Add onion and 1/4 teaspoon salt, increase heat to medium, and cook, stirring frequently, until onion is softened and beginning to brown, 3 to 4 minutes. Add garlic and thyme and cook until fragrant, about 1 minute. Stir in Worcestershire and continue to cook until slightly reduced, about 1 minute longer. Transfer onion mixture to large bowl and set aside. Combine oats, cornstarch, 3/4 teaspoon salt, and 1/2 teaspoon pepper in second bowl.
- 2. FOR THE GLAZE: Whisk all ingredients in saucepan until sugar dissolves. Bring mixture to simmer over medium heat and cook until slightly thickened, about 5 minutes; set aside.
- 3. Stir egg yolks and mustard into cooled onion mixture until well combined. Add turkey, Parmesan, parsley, and oat mixture; using your hands, mix until well combined. Transfer turkey mixture to center of prepared rack. Using your wet hands, shape into 9 by 5-inch loaf. Using pastry brush, spread half of glaze evenly over top and sides of meatloaf. Bake meatloaf for 40 minutes.
- 4. Brush remaining glaze onto top and sides of meatloaf and continue to bake until meatloaf registers 160 degrees, 35 to 40 minutes longer. Let meatloaf cool for 20 minutes before slicing and serving.
