- Arrange bread cubes on baking sheets. Bake at 250 degrees F about 60 minutes. Remove from oven and let cool.
- Melt butter in skillet and add onions and celery and saute until soft, about 10 minutes. In a large bowl, toss sauteed vegetables with bread cubes. Add parsley, sage, rosemary, thyme, salt and pepper and toss again.

- Spread the bread cubes in a single layer on a large rimmed baking sheet. Let dry overnight.
- Position a rack in the center of the oven and heat the oven to 400°F. Bake the bread cubes until light golden-brown, 12 to 15 minutes.
- Heat the butter in a 12-inch skillet over medium-high heat. Add the onions and celery and cook, stirring occasionally, until soft but not browned, 6 to 8 minutes. Let cool. (The recipe may be prepared to this point up to 6 hours ahead.)
- In a large bowl, mix the bread cubes with the cooked vegetables, 2 cups of the broth, the parsley, sage, thyme, eggs, 3/4 tsp. salt, and 1/2 tsp. pepper. If the liquid isn't immediately absorbed by the bread, toss occasionally for a few minutes until it is. If the liquid is immediately absorbed, toss in another 1/2 cup broth. The bread should be moist but not soggy. If necessary, add the remaining 1/2 cup broth.
- Butter a 3-quart baking dish (13×9-inch works well). Transfer the bread mixture to the dish, cover with foil, and bake at 400°F until heated through, 25 to 30 minutes. Remove the foil and continue to bake until the top is slightly browned and crusty, about 20 minutes more.

- Preheat oven to 350°F.
- Butter a pretty casserole dish 15"x10" baking dish or a souffle dish would be perfect.
- Melt butter in large skillet and add mushrooms, onions, & celery.
- Saute for 3-5 minutes until translucent.
- Add garlic and cook for another 2-3 minutes.
- Now add salt, thyme, rosemary, sage, black pepper, savory, parsley & poultry seasoning & mix well.
- Add nuts and mix well again.
- Beat the eggs.
- Place bread into a large bowl along with vegetable mixture, beaten eggs and 1 cup warm chicken broth or vegetable broth.
- Continue mixing and pouring in broth until stuffing looks moist, use at least 4 cups of stock or broth. It should not be too dry - remember you are going to bake it.
- Transfer stuffing to prepared dish.
- Cover with buttered foil and bake until heated through, about 45 minutes.
- Uncover and bake until top is golden brown, about 15 minutes.

MOM'S TRADITIONAL SOUTHERN CORNBREAD DRESSING
Moist cornbread dressing with celery and onions is an absolute must on every Southern Thanksgiving table. My mom's recipe for Southern Cornbread Dressing is simple and classic with all the nostalgic flavors that I need from my Thanksgiving plate!

- Preheat oven to 425. In a 10-inch cast iron (or a 9-inch cake pan if you don't have a cast iron, melt 2 Tb of bacon drippings, or butter if you're substituting, in the preheated oven for 5 minutes until completely melted. Remove from the oven and set aside.
- Combine the first five ingredients in a large mixing bowl and whisk to combine well. Ditch the whisk and switch to a spatula to combine with the liquid to avoid overmixing. Overmixing will give you a tough cornbread. Mix 2 C of buttermilk and 2 eggs, breaking up the eggs in a separate small bowl before adding to the mix. Stir until combined without overmixing.
- Last, add the melted bacon drippings or butter. Pour back into the prepared cast iron and back for 25 minutes or until golden brown.
- Once cooled, break up the cornbread into rough chunks and spread out onto a baking sheet to dry out for a minimum of 8 hours or preferably overnight. The more dry the cornbread, the more flavors it will soak up.
- Preheat the oven to 350 degrees.
- Melt 1/2 C butter in a large skillet over medium-high heat. Add the green onions, onion, and celery. Cook until tender or about 5 minutes. Crack the eggs into a small mixing bowl and beat slightly.
- Add the cornbread and sautéed veggies to a large mixing bowl. Mix to combine. Add the eggs, stuffing mix, and chicken broth and mix until combined. The amount of chicken broth will depend on your personal preference. Check out the post content above for more on this topic.
- Pour into a 9" x 13" baking pan. Bake for 50 minutes or until lightly browned.

- Note about the bread cubes! You have options here. Stale or toasty bread works best. The first option is that you can cut 1 ½ pounds of bread into cubes, place it in a large baking dish, loosely tent with foil and let it sit overnight. You can also cut the cubes and put them in oven, toasting them at 350 degrees F until they are like croutons, about 15 minutes or so. Finally, you can buy the toasted bread cubes in bags from the store. It's your choice! You can also choose the size of your cubes. They can be small or larger for a more rustic stuffing.
- My mom has always used a mixture of stale and fresh bread. Also, I like to use different kinds of bread (usually two), like a sourdough and italian, and mix the cubes. It provides great texture.
- Preheat the oven to 350 degrees F. Brush a 9x13 baking dish (you can also use a larger baking dish or a larger foil roasting pan too!) with melted butter, olive oil or spray with nonstick spray. Place the bread in a large mixing bowl (this may be easier for you to stir!) or the baking dish that you will bake it in. You can also separate this into two baking dishes if it's easier.
- Heat the butter in a large skillet or dutch oven over medium heat. Once melted, stir in the onion, celery and garlic with a big pinch of salt and pepper - at least ½ to 1 teaspoon each. Cook until the onions and celery soften, about 8 to 10 minutes. Stir in the sage, parsley and rosemary. Cook for another minute. Stir in 1 cup of stock.
- Pour the onion celery mixture over the bread crumbs and toss well to coat.
- In a small bowl or measuring cup, whisk together the remaining 1 ½ cups stock and 2 eggs.
- Pour that mixture into the bread cubes and stir and fold the bread cubes until thoroughly combined. Bake the stuffing for 45 to 50 minutes, until the internal temperature registers 160 degrees F. If the stuffing is getting too browned, you can tent it with foil.
- I have successfully made this a day ahead of time and reheated it - it's just as good! emove the pan from the fridge 60 minutes before reheating it. You can also use this mixture to stuff the bird if you wish!
- To serve 4: Cut this recipe in half exactly and bake it in an 8x8 or 9x9 inch dish. I bake for the same amount of time.
- To serve 12 to 18: Double this recipe exactly. Bake in a large baking dish, like a 10x15 roasting pan, or baking in two 9x13 baking dishes. I bake for roughly the same amount of time, or about 15 minutes longer.

my husband likes cornbread dressing, I find it dry. A friend gave me this recipe 35 years ago and it is still my favorite. And so easy! I use Pepperidge Farm Herb Seasoned Stuffing mix.

- DO AHEAD – Trim crusts from the bread slices. Cut each slice into 1/2″ – 3/4″ cubes. Discard crusts and heels of the loaf. Arrange cubes on rimmed baking sheets to dry, uncovered, for 18-24 hours. You can do this two days ahead and package the cubes in zip plastic bags or an airtight container. Cubes can be stored at room temperature or refrigerated until ready to use.
- For the vegetables – Trim dark green top and root end from the leek, saving the white and light green part. Discard top or save for making broth or stock. Slice the reserved leek in half lengthwise and run under cold water to clean out any sand or dirt. Cut the leek crosswise into thin pieces.
- For the fennel, trim stalks off the top. Save the fluffy fronds for garnish if desired. Cut the bulb in half top to bottom. Slice the halves into long thin, strips, then crosswise into small dice. For the celery and onion, dice small. You can do these a day ahead, combine, and refrigerate until cooking time.
- When ready to prepare the stuffing, heat the oven to 350 degrees. Heat the oil or oil/butter combination in a large saute pan (I use a 6 quart All Clad) or large skillet until melted. Add the leek, fennel, celery and onion. Add a little salt and pepper. Cook until soft and translucent. Add the garlic and cook another 60 seconds. Remove the pan from the heat. Stir in the bread cubes and herbs. Whisk together the milk and egg if using. Start with a 1/2 cup of milk (pr liquid of choice). The mixture should be pretty moist and hold together. If it seems dry, add the other 1/4 cup of liquid. Season with additional salt and pepper to taste.

- Cube bread that is several days old into bite size pieces. I like to set it out on a sheet pan the night before to help it dry out. Place cubed bread in the biggest bowl you have. Seriously, a big one! Add the poultry seasoning to the bread. Set aside.
