This was my grandmother's apple pie recipe. I have never seen another one quite like it. It will always be my favorite and has won me several first place prizes in local competitions. I hope it becomes one of your favorites as well!

1 recipe pastry for a 9 inch double crust pie
½ cup unsalted butter
3 tablespoons all-purpose flour
¼ cup water
½ cup white sugar
½ cup packed brown sugar
8 Granny Smith apples - peeled, cored and sliced

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Melt the butter in a saucepan. Stir in flour to form a paste. Add water, white sugar and brown sugar, and bring to a boil. Reduce temperature and let simmer.
  • Place the bottom crust in your pan. Fill with apples, mounded slightly. Cover with a lattice work crust. Gently pour the sugar and butter liquid over the crust. Pour slowly so that it does not run off.
  • Bake 15 minutes in the preheated oven. Reduce the temperature to 350 degrees F (175 degrees C). Continue baking for 35 to 45 minutes, until apples are soft.

My Grandma's Old Fashioned Apple Pie recipe with an amazingly flaky crust and delicious apple cinnamon filling.

For Filling
8-10 apples peeled and sliced
1/2 cup brown sugar
1/2 cup white sugar
1 1/2 tsp cinnamon
2 tbsp Minute tapioca
For Pie Crust
2 1/2 cups all purpose flour
1 tsp salt
1 1/2 tsp sugar
1/2 cup butter (chilled)
1/2 cup lard (chilled)
5-7 tbsp ice cold water

Steps:

  • For the Pie Crust
  • Mix together flour, 1 1/2 tsp. sugar and 1 tsp. salt.
  • Using pastry blender, blend together chilled butter, lard and flour until crumbly (pea size chunks).
  • Start by blending 4 tablespoons of ice cold water into the flour/butter/lard mixture.
  • Add more water a tablespoon at a time until mixed and dough sticks together when pressed. Don't make too wet, just enough water to have dough come together.
  • DO not overmix or your pie crust will be tough.
  • Divide in half, cover with plastic wrap and chill for 30 minutes.
  • While dough is chilling, in large bowl toss together apple slices, white and brown sugar, tapioca and cinnamon.
  • Roll out pie dough to make two crusts that cover pie plate with about an inch excess.
  • Place one in bottom of pie plate.
  • Pile high with apple mix, cover with other pie crust, seal edges, cut slits for venting.
  • Sprinkle top with white sugar and cinnamon.
  • Bake 350 for about 1 - 11/2 hours until top is golden brown. Cover edge with a pie shield or foil if edge starts to brown too much while baking.

It is different that ordinary apple pie, the fresh apples are placed in the crust, covered in a lattice top and smothered in a decadent sauce. Whoever Grandma Ople is, I would really like to thank her for she sure knows how to make a mean apple pie!For my crust, I use a recipe for pie crust that includes vinegar and is found on this site.

1 1/2 pounds short crust pastry, recipe follows
7 cups Royal Gala apples, cored and quartered (about 5 apples)
1/2 cup sugar
1 tablespoon lemon juice
2 teaspoons lemon zest, finely chopped
1/4 teaspoon grated nutmeg
Pinch salt
1 egg yolk
2 tablespoons water
2 tablespoons unsalted butter, cold
3 cups all-purpose flour
1/4 teaspoon salt
4 ounces unsalted butter, cold
8 ounces shortening, cold
1/2 cup ice cold water

Steps:

  • Preheat the oven to 375 degrees F.
  • Roll 1/2 the short crust pastry to 1/4-inch thickness and cut out a 14-inch circle. Line a 9-inch pie plate with the pastry, trim away the excess and crimp the edge.
  • Roll out the rest of the pastry to 1/4-inch thickness. Cut the pastry into 1/2-inch strips. On a piece of parchment paper or waxed paper weave the strips of pastry into a lattice that will cover the top of a 9-inch pie plate with 1-inch of overhang. Refrigerate the pie shell and lattice for at least 30 minutes.
  • Meanwhile, cut the apple quarters into 1/4-inch thick slices. Toss the apples with the sugar, lemon juice, lemon zest, nutmeg, and salt. Whisk together the egg yolk and water to make an egg wash. Brush the inside edge of the pastry with the egg wash. Arrange the apples in the pie shell and dab the top with pieces of cold butter. Slide the lattice top over the apples. Press the pastry of the lattice firmly on the crimped edge to seal the 2 together. Brush the lattice with egg wash. Place the pie on a baking sheet and bake for 1 hour and 15 minutes.
  • Sift the flour and salt into a large mixing bowl. Using a cheese grater, grate the butter and shortening into the flour. Combine the mixture with your fingers until it resembles cornmeal. Add the ice cold water and mix with a spoon, pulling the water into the flour until a dough forms.
  • With your hands, shape the dough into 2 balls and flatten them into disks. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes. Store in the refrigerator for up to 4 days and in the freezer for up to 1 month.

1 tablespoon apple cider vinegar
1/4 cup ice water, plus more if needed
1 cup all-purpose flour
1/3 cup packed light brown sugar
1/4 teaspoon ground cinnamon
1/4 teaspoon salt
1 stick unsalted butter, cut into 1/2-inch pieces, at room temperature
3 pounds mixed apples (such as Golden Delicious, Granny Smith and Gala), peeled and sliced 1/4 inch thick
4 tablespoons unsalted butter, melted
1/3 cup granulated sugar
1/4 cup packed light brown sugar
2 tablespoons all-purpose flour
1 tablespoon fresh lemon juice
1 teaspoon ground cinnamon
1/8 teaspoon salt

Steps:

  • Make the crust: Whisk the flour, granulated sugar and salt in a large bowl. Rub the butter pieces into the flour using your fingers until pea-size pieces form. Drizzle in the vinegar and ice water; stir gently with a fork to combine. If the dough doesn't hold together when you squeeze it, add more ice water, 1 tablespoon at a time. Turn out the dough onto a piece of plastic wrap and form into a disk; wrap tightly. Refrigerate until firm, at least 1 hour or overnight.
  • Roll out the dough on a lightly floured surface into a 13-inch round. Ease into a 9-inch pie plate. Trim the edges, leaving a 1-inch overhang, then tuck the overhanging dough under itself; crimp the edges with a fork. Refrigerate until firm, at least 1 hour or overnight.
  • Meanwhile, make the crumb topping: Mix the flour, brown sugar, cinnamon and salt in a medium bowl. Rub the butter into the mixture with your fingers until no longer floury and crumbs form. Freeze until ready to use.
  • Make the filling: Place a foil-lined baking sheet on the lowest oven rack; preheat to 400˚. Mix the apples, melted butter, both sugars, flour, lemon juice, cinnamon and salt in a large bowl. Spoon the filling into the chilled pie crust. Pat the crumb mixture on top.
  • Bake the pie on the hot baking sheet until lightly browned, about 30 minutes. Reduce the oven temperature to 350˚ and bake until the apples are completely soft when pierced with a paring knife, 60 to 80 more minutes. ¾ cup white sugar
1 tablespoon butter
1 teaspoon ground cinnamon
1 recipe pastry for a 9-inch double-crust pie

THE BEST APPLE PIE EVER. Ingredients from apples -> salt is for filling, from flour -> vinegar for pie crust.

5 cups jonagold apples, peeled, cored and sliced (5-6 apples)
1 tablespoon lemon juice
1/2 cup sugar
1/4 cup flour
1/4 cup brown sugar, packed
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1 tablespoon butter
1 egg
1/4 teaspoon salt
3 cups flour
1 cup shortening
1/2 teaspoon salt
1 large egg, beaten
5 tablespoons cold water
1 teaspoon vinegar

Steps:

  • For crust: cut the 3c flour, shortening, and 1/2 tsp salt together until it resembles small peas.
  • Combine the egg, vinegar, and water and gradually add to flour mixture, stirring until moistened and soft dough forms. Divide into 2 balls and refrigerate. Can be frozen ahead of time. Dough works best when it is cold.
  • Filling: In a large mixing bowl toss the apples with lemon juice.
  • Combine the sugar, flour, brown sugar, cinnamon, and nutmeg.
  • Add the apples and toss until completely coated.
  • Put the filling in a pastry-lined pie pan (from one of the dough balls above), distributing small cubes of the butter over the top.
  • Roll out your other dough ball (use plenty of flour) and use a knife to cut into strips. Place these on top in a lattice-style fashion.
  • To make the egg wash, whisk the egg and 1/4 tsp salt and brush over pie.
  • Cover with foil and bake at 400 degrees Fahrenheit for 25 minutes, remove foil and bake for another 15-20 minutes until crust is flaky and apples tender.
