2 Tbs butter, divided
1/2 cup chopped almonds
1/2 cup chopped onion, or pearl onions
A few shakes of ginger
1.5 cups whole wheat Israeli / pearl couscous
1/2 large cinnamon stick (or a couple shakes cinnamon)
1 fresh or dried bay leaf
1.75 cups low sodium chicken broth (I use low sodium better than buillion)
1/2 tsp low sodium salt
1/4 cup parsley or cilantro, minced
zest of 1/2 lemon (or a few shakes of lime/lemon juice)
1/4 cup raisins (optional)
Black pepper, to taste

Steps:

  • Melt 1 Tbs butter in a large saucepan over medium-low heat. Add nuts and stir until golden brown. Transfer to a small bowl. Melt remaining 1 Tbs of butter in the same pan over medium heat. Add onion and saute until golden. Add couscous, fresh spices and bay leaf, and stir often until couscous browns slightly. Add broth, dry spices and salt and bring to a boil. Reduce heat to low, cover and simmer until liquid is absorbed and couscous is tender. Remove from heat and stir in cilantro, nuts and lemon zest. Add the reaisins for a savory sweet taste. Kosher salt
2 cups Israeli couscous
Extra-virgin olive oil
3 cloves garlic, smashed
Pinch crushed red pepper flakes
1/2 cup sliced almonds, toasted
1 cup chicken stock
1 cup pomegranate seeds
1/2 cup dried apricots, cut into 1/2-inch dice
4 scallions, white and green parts, cut thin on the bias

Steps:

  • Bring a small pot of well-salted water to a boil over high heat. Add the Israeli couscous and cook until cooked through, 6 to 7 minutes. Strain from the water and reserve.
  • Coat a large saute pan with olive oil. Add the garlic and crushed red pepper and bring to high heat. After a few minutes, add the almonds to toast them in the oil. When the garlic is golden and very aromatic, remove it from the pan and discard it. Add the cooked couscous and chicken stock. Season with salt and cook until the stock has reduced by half. Add the pomegranate seeds, apricots, and scallions. Stir to combine and taste to make sure it is delicious.
  • Serve hot or at room temperature.

I got this recipe from Trader Joe's after trying a sample because we loved it. Posting it here for safekeeping! Great for BBQs and picnics because it won't spoil in the heat. I left out the green onions and used a couple tablespoons of a good balsamic vinegar. You could easily add other veggies to this too!

8 ounces israeli couscous (TJ's brand)
14 ounces of corn and chile salsa (TJ's brand)
1 seedless cucumber, chopped fine
1 red bell pepper, chopped fine
1 bunch green onion, chopped fine
1 splash balsamic vinegar

Steps:

  • Prepare couscous according to package instructions and allow to cool.
  • Chop veggies and combine with the whole jar of salsa and balsamic, stir in couscous.
  • Add salt and pepper to taste
  • Serve cold or at room temperature.
