TEX-MEX PULLED CHICKEN

2 medium tomatoes, quartered
2 jalapeno peppers, halved and seeded
1 medium white onion, cut into 8 wedges
1 red bell pepper, halved and seeded
1 yellow bell pepper, halved and seeded
2 tablespoons olive oil
1 teaspoon dried oregano
1 teaspoon chili powder
1/2 teaspoon ground cumin
Kosher salt and freshly ground black pepper
1 pound thin chicken cutlets
12 flour tortillas
2 limes, 1 juiced, 1 cut into 8 wedges, for serving
8 ounces salsa
8 ounces sour cream
8 ounces crumbled cotija cheese
Fresh cilantro leaves, for serving

Steps:

  • Position an oven rack 5 to 6 inches below the broiler element and preheat the broiler on high.
  • Add the tomatoes, jalapenos, onion and bell peppers to a baking sheet, drizzle with the olive oil, sprinkle with the oregano, chili powder, cumin, 1/2 teaspoon salt and 1/4 teaspoon pepper and toss everything together to get it all coated with the oil and spices. Push it to one side of the baking sheet. Lay the chicken flat on the other side and season it with salt and pepper.
  • Broil for 5 minutes. Flip the chicken and vegetables and return to the broiler until the chicken is cooked through and the vegetables are softened and charred, about 5 more minutes.
  • Wrap the tortillas in kitchen paper and heat in the microwave for 30 seconds Remove, unwrap and put on a platter.
  • Shred the chicken. Spoon the roasted vegetables into a blender with any juices from the baking sheet and blend until smooth. Toss 1 cup of the sauce with the chicken. Squeeze the juice of 1 lime over it. Put the remaining sauce in a bowl to serve on the side.
  • Serve with the warm tortillas, salsa, sour cream, crumbled cotija cheese, lime wedges and cilantro.

I created this recipe to taste like my favorite Mexican restaurant that I went to when I was a child - Casa Hernandez. Jalapeno, cilantro, onion, salt, and garlic can be adjusted to taste. Chili powder may give this a nice touch, also. It just depends on your taste. This is a no-cook recipe. I am unsure of the amount of servings this makes.

2 fresh jalapenos, stems removed
1 medium onion, peeled and quartered
2 garlic cloves
1 (28 ounce) can whole tomatoes
1 (28 ounce) can diced tomatoes
2 teaspoons salt
2 tablespoons vinegar
1/4 cup fresh cilantro, no stems

Steps:

  • In a food processor or blender add onion, garlic, cilantro, vinegar, and jalapenos. (If you like it hot, add whole jalapeno or an extra jalapeno. If you like it mild, removed seeds.)
  • Pulse until thoroughly chopped.
  • Add canned tomatoes and salt.
  • Pulse until throughly combined.
  • Store in refrigerator until ready to use.

Steps:

  • Toss chicken with seasoning mix and flour in slow cooker sprayed with cooking spray. Add peppers, corn and salsa; mix lightly. Cover with lid.
  • Cook on LOW 6 to 8 hours (or on HIGH 3 to 4 hours).
  • Stir chicken mixture. Serve over rice topped with cheese and onions.

1 pound raw jumbo shrimp, peeled, tails left on
1 tablespoon olive oil
½ teaspoon paprika
½ teaspoon chili powder
¼ teaspoon ground cumin
4 Roma tomatoes
½ large onion
½ head head garlic
1 jalapeno pepper
1 tablespoon lime juice
1 teaspoon salt
¼ cup chopped fresh cilantro

Steps:

  • Combine shrimp, olive oil, paprika, chili powder, and cumin in a large bowl. Gently stir until evenly combined. Cover and refrigerate while you prepare the salsa.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate. Grill tomatoes, onion, garlic, and jalapeno for 4 minutes. Flip and grill until tomatoes and jalapenos are blistered, about 4 minutes more.
  • Cut tops off the tomatoes and discard. Cut jalapeno in half, scrape the skin off, and discard seeds. Quarter the onion. Squeeze garlic cloves from their skins.
  • Place the grilled vegetables in a blender. Add lime juice and salt; blend until smooth. Add cilantro and pulse until evenly blended.
  • Transfer shrimp to the hot grill and cook for 2 minutes per side. Serve with the salsa.

15 oz canned whole tomatoes
2 tsp minced garlic or 1 large clove of garlic chopped
1/2 tsp salt
1 jalapeno, chopped (or more to taste)
12 oz can of campbell's tomato juice
2 green onions, chopped
1/2 c fresh cilantro, lightly chopped
2 tsp lime juice

Steps:

  • 1. Put all ingredients in a food processor or blender (reserve 1/2 can of (6 oz) the tomato juice). Blend well for about 10 to 20 seconds on high. Do not puree. Pour into bowl and add remaining tomato juice. Stir well. Serve with tortilla chips
  • 2. For a milder salsa, remove the seeds from the jalapeno before blending.
  • 3. I always double this recipe and make one salsa mild and the other much spicier. *** Please use whole tomatoes and not diced as it will effect the thickness of the salsa.

1 lb fusilli
3 tablespoons butter
1/4 cup all-purpose flour
2 1/2 cups milk
1 teaspoon salt
2 cups old cheddar cheese, grated
2 cups diced cooked chicken or 2 cups ham
3/4 cup frozen corn
1/3 cup green onion, thinly sliced
1/3 cup salsa

Steps:

  • Cook Pasta according to package directions.
  • Meanwhile, in a medium sauce pan, melt butter over medium heat.
  • Stir in flour until blended.
  • Gradually whisk in Milk and salt, making sure there are no lumps.
  • Stir and bring to a boil.
  • Reduce heat to medium-low and simmer for 1 minute.
  • Reduce heat to low, add cheese a handful at a time, stirring until melted.
  • Stir in chicken or ham, corn, green onions and salsa; heat through.
  • To serve, drain pasta; turn into a large bowl.
  • Toss sauce with pasta and sprinkle with additional grated Cheddar cheese, if desired.

2 tablespoons olive oil
4 chicken breasts, patted dry
1 teaspoon ground cumin
2 teaspoons chili powder
1/4 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon pepper
1 poblano pepper, seeded and chopped
1 red pepper, seeded and chopped
1/2 cup red onion, halved and sliced
1 15 ounce can of black beans, drained and rinsed
1/2 cup grated cheddar cheese
1 avocado, chopped for garnish

Steps:

  • In small bowl combine cumin, chili powder, garlic powder, salt and pepper
  • Heat cast iron skillet (or your everyday skillet) to medium high heat.
  • Add olive oil and heat until shimmering about 2 minutes.
  • Sprinkle both sides of chicken breasts with half the cumin/chili powder mixture, reserving the rest for the vegetables.
  • Sear seasoned chicken. Cook about 4-5 minutes on each side until cooked through and internal temperature reaches 165 degrees. Remove chicken to platter.
  • Saute peppers and onion until soft. About 3-4 minutes. Add drained and rinsed black beans.
  • Sprinkle veggies with remaining chili seasoning and add chicken back to the pan.
  • Top chicken with grated cheese and garnish with fresh avocado chunks.
