Whenever I take these bars to an event, I bring along the recipe. People love them! The almond flavoring gives them an extra yum!

1 cup butter, softened
2 cups packed brown sugar
2 eggs
2 teaspoons vanilla extract
½ teaspoon almond extract
3 cups quick-cooking oats
2 ½ cups all-purpose flour
½ cup sliced almonds
1 teaspoon baking soda
1 teaspoon salt
2 cups semisweet chocolate chips
1 (14 ounce) can sweetened condensed milk
2 tablespoons butter
½ teaspoon salt
2 teaspoons vanilla extract
½ teaspoon almond extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Beat 1 cup butter and brown sugar in a large bowl until smooth and creamy. Stir in eggs, 2 teaspoons vanilla extract, and 1/2 teaspoon almond extract; mix well. Combine oats, flour, sliced almonds, baking soda, and 1 teaspoon salt in another bowl; stir into butter mixture until batter is just mixed. Spread 2/3 batter into a 10x15-inch rimmed baking sheet.
  • Heat chocolate chips, condensed milk, 2 tablespoons butter, and 1/2 teaspoon salt in a saucepan over medium heat until chocolate is melted, about 5 minutes, stirring occasionally. Remove from heat and stir in remaining 2 teaspoons vanilla extract and 1/2 teaspoon almond extract. Spread chocolate mixture into baking sheet over oat batter. Spoon remaining 1/3 oat batter over chocolate.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 20 to 25 minutes.

1 cup butter
2 cups brown sugar
2 eggs
2 teaspoons vanilla
2 1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups quick-cooking oats (or old-fashioned)
1 (14 ounce) can sweetened condensed milk
12 ounces semi-sweet chocolate chips
1/4 cup butter
2 teaspoons vanilla
1 cup chopped walnuts (optional, I don't use them)

Steps:

  • Grease a 9x13 baking pan; set aside.
  • In a large bowl cream butter and sugar; add eggs and vanilla.
  • In a small bowl, sift flour, baking soda, and salt; add to creamed mixture. Mix in oats.
  • In a heavy saucepan, mix sweetened condensed milk, chocolate chips, and butter; heat just until melted. Stir in vanilla and nuts if using.
  • Spread 2/3 of the oatmeal dough (will be stiff) into prepared baking pan. Spread with chocolate mixture. Drop remaining 1/3 of dough on top by spoonfuls.
  • Bake at 350°F for 25 minutes. Allow to cool completely (if you cut them while they are still warm at all they will be gooey and fall apart), then cut into bars.

2 3/4 cups gluten free quick oats
1/2 teaspoon salt
1/2 cup maple syrup or honey
1/4 cup SunButter
1 teaspoon vanilla
5 oz dairy free chocolate (chopped)
1/2 cup SunButter

Steps:

  • Line a 8x8 pan with parchment paper
  • Make the oat layer. Combine oats, salt, maple syrup, SunButter and vanilla. Stir until well combined and press 2/3 of the mixture into the prepared pan and place in the fridge. Save the remaining 1/3 for the topping.
  • Make the fudge filling. Place the chocolate and SunButter in a microwave safe glass measuring cup or bowl and microwave until smooth and creamy- about 2 minutes, stirring every 30 seconds. Pour over the oats in the pan, spreading evenly and then top with remaining 1/3 oats, sprinkle on evenly and press gently in.
  • Place in the fridge for at least 2 hours to set.
  • Cut into bars. Store covered in the fridge.

Remove from heat; stir in the nuts, vanilla and salt. Spread over oat mixture in pan. , Drop reserved oat mixture by teaspoonfuls onto filling. Bake at 350° for 25-30 minutes. Cut into bars while warm.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
