APRICOT SCONES
Popular served with tea in Victorian days, scones are making a big comeback. Apricots and nuts are stirred into the batter in this recipe I baked for the theme shower. Spread with Devonshire cream, they delighted the bride-to-be and guests. -Robin Fuhrman, Fond du Lac, Wisconsin

APRICOT WALNUT SCONES
These are my favorite scones. The cake flour and the little bit of extra sugar helps keep them light and tender. If you don't have the cake flour, just use 2 cups of regular flour. Handling the dough gently and only as much as necessary helps preserve the texture.

Steps:
- Combine both flours, sugar, baking soda, and salt.
- Cut butter into flour mixture till it resembles large crumbs.
- Coat apricot pieces with 1 or 2 tbs flour to keep from sticking together. Add apricots and walnuts to flour mixture.
- In a separate container, beat 1 egg and mix with cream. Drizzle into flour mixture and mix gently. Turn out mixture onto lightly floured cutting board.
- Gently knead dough just till it sticks together. Be sure to turn the dough on the board so it doesn't stick. Add a little more flour to the board if required. Pat or roll out dough to an approximate thickness of 3/4 inches thick. Cut out scones with a 2" floured cutter.
- Place scones on a baking sheet. Lining sheet with parchment paper or silicone liner helps keeps bottoms from getting too dark.
- If desired, brush tops of scones with mixture of 1 egg beaten with 1 tbs water.
- Bake at 425 degrees F for 12 to 15 minutes or until golden. Cool on wire rack.
MAPLE GLAZED MAPLE WALNUT SCONES
These moist maple scones are a hit in our home. Glazed with a maple glaze and garnished with toasted walnuts, they are a good anytime treat.

Steps:
- Using a food processor, place flour, oats, salt, baking powder, baking soda and sugars into bowl of processor. Pulse briefly to combine. While motor is running, drop in chunks of cold butter. Now throw in the toasted, but cooled walnuts, and briefly pulse.
- In a measuring cup, lightly beat the egg, then add the maple syrup and extracts. Then add enough cold buttermilk to bring the liquid to one cup. (You may not need all the buttermilk. But here in Colorado where it is very dry, I sometimes use it all.) With motor running, pour the liquid slowly into the bowl of the processor until mixture starts to form a wet, moist ball. Once mixture has formed a ball, stop adding buttermilk! You may need to scrape some of the dough off of the sides of the ball using floured hands.
- On a well floured counter, scrape out the wet dough and bring together with floured hands into a large round or square, flouring both sides well. If you need to add a bit more flour, feel free because it is important to get the right consistency.
- Divide in two and using your hands pat each into a 6-8″ disc. These should be thick. Thin scones become crispy and no one likes a crispy dry scone! Cut each round into 6 or 8 triangles.
- Place on a baking sheet lined with parchment or a Silpat and chill dough for about 20 minutes.
- Preheat oven to 400. Place baking sheet in oven and bake for about 18-20 minutes until scones are lightly browned and firm on top.
- While scones are baking, prepare glaze.
- Combine powdered sugar, maple extract and syrup and mix together with a whisk. Stir in 1 T of milk or cream at a time, until glaze is of a drizzling or spreadable consistency.
- Let scones cool and drizzle away! Garnish with a few extra walnuts if you'd like.

APRICOT-CITRUS SCONES
Based on a recipe from the Starbucks Passion for Coffee cookbook. In its intro it recommends "Use soft, moist dried apricots. If yours are firm and chewy, soak them for 15 minutes in boiling water and drain well. As a counterpoint to the tartness of the dried fruit, choose a full-bodied Indonesian coffee."

APRICOT, CHOCOLATE, AND WALNUT SCONES
With Valentine's Day coming up I just had to share this scrumptious-looking recipe for heart-shaped scones. I plan on trying it very soon using margarine and soy milk in place of the heavy cream! I got this from Care2.com's Eat Well Naturally newsletter. They also say you can make the dough hearts ahead of time and freeze them, then bake the frozen dough hearts 20 to 25 minutes.
