- Preheat oven to 375°. In a small skillet, warm enchilada sauce over medium heat. Dip four tortillas, one at a time, in sauce to coat both sides; arrange on bottom of a greased 9-in. pie plate, overlapping to fit., Layer with 1 cup chicken, 1 cup cheese and 2 tablespoons olives. Repeat tortilla and chicken layers. Pour remaining enchilada sauce over top. Sprinkle with the remaining cheese and olives., Bake 10-15 minutes or until heated through and cheese is melted. If desired, serve with salsa.

- 1. Preheat oven to 325 degrees F. Spray 8x8-inch baking dish and medium skillet with cooking spray. Heat skillet over medium-high heat. When hot, add bell pepper and onion; cook 5 minutes or until tender, stirring several times.
- 2. Stir in broth, soup, undrained tomatoes and chicken; blend well. Bring to a boil; remove from heat.

- Preheat oven to 400 degrees F (200 degrees C).
- In a large bowl, mash pinto beans. Stir in 3/4 cup salsa and garlic.
- In a separate bowl, mix together 1/4 cup salsa, cilantro, black beans and tomatoes.
- Place 1 tortilla in a pie plate or tart dish. Spread 3/4 cup pinto bean mixture over tortilla to within 1/2 inch of edge. Top with 1/4 cup cheese, and cover with another tortilla. - Preheat oven to 400 degrees. Using a paring knife, trim tortillas to fit a 9-inch springform pan (use the removable bottom of the pan as a guide). Assemble pan with the bottom upside down; lightly oil bottom and sides. Set aside.
- In a large skillet, heat oil over medium. Add onion, cumin, and red-pepper flakes; season with salt and pepper. Cook until onion has softened, 3 to 5 minutes. Stir in tomato paste. Raise heat to medium-high; add beef and garlic. Cook, breaking up meat with a spoon until no longer pink, 4 to 6 minutes. Add corn and spinach; stir until spinach has wilted, about 2 minutes.
- Place one tortilla in the prepared pan. Spreading evenly, top with 1 1/2 packed cups beef mixture, then 1/2 cup cheese. Repeat with two more layers. Top with last tortilla, and sprinkle with remaining 1/2 cup cheese.
- Bake pie until top is lightly browned, 15 to 20 minutes. Run knife around edge of pan; remove sides. Using two wide metal spatulas, lift pie from bottom of pan, and transfer to a cutting board. Cut into wedges. If desired, serve with cilantro and sour cream.

- Season chicken with salt and pepper, use a little oil to make the salt and pepper to stick
- Heat a large skillet or pan on medium heat. Add oil for 30 seconds. Add chicken and cook, stirring frequently, until light brown (10 mins). Add onion and cook til translucent (2-3 mins). Add garlic and mixed herbs. Reduce to a medium-low heat and cook, stir frequently until meat is coated and spices are fragrant (2-3 mins)
- Add tomatos and stock. Bring to the boil. Reduce heat, cover and simmer until chicken is tender, 25-30 mins.
- Heat oven to 350 F
- Spread 1 - 2 cups chicken mixture in baking dish and top with 4 - 8 tortilla quarters. Add another 1 - 2 cups chicken mixture, top with 1 1/2 cups of cheese and 4 - 8 tortilla quarters. Top with remaining chicken mixture and then remaining cheese.
- Bake until cheese is melted and sauce bubbling (30 mins)
- Serve hot and with veg, personal suggestion of peas and or carrots. Any left over veg you have left over can always be thrown into the next pie. Perfect for diabetics!

An easy and delicious version of the classic "Mexican lasagna." For an extra flourish, alternate spinach tortillas with plain flour or multigrain ones. If you don't like spicy hot food, substitute a can of chopped green chilis for the sliced jalapeños. I like to use a hot chipotle salsa, but a mild one is fine. For a lighter version, use lowfat cheeses.

- Preheat oven to 350°.
- In a small saucepan, combine beans, salsa, rice, and salt and heat through.
- In another saucepan, thaw the frozen vegetables.
- Add the goat cheese, cream cheese, and jalapeños to the vegetables and heat through.
- Spray a Dutch oven or deep baking dish with oil spray.
- Place one tortilla flat in bottom of baking dish, cover with 1/3 of the bean mixture, and top with 1/4 of the grated cheese.
- Place another tortilla on top and cover with 1/3 of the spinach mixture.
- Repeat, alternating fillings, until you have six layers. Top with the seventh tortilla.
- Pour sauce over all and top with the remaining grated cheese.
- Cover and bake for 30 minutes.
- Remove cover and broil until cheese begins to brown.
- Remove from oven; for best results, let stand for 5 minutes before slicing.

You really can't make a casserole any quicker than you can this one. I keep cooked chicken in the freezer in 2 cup batches just for dishes like this one. You can have this on the table in under an hour.

- Heat the oil in a pan. Fry the peppers and onion until soft, about 10 mins. Add the beans, fajita spice mix, chopped tomatoes and some seasoning. Bubble for 5 mins to reduce the tomatoes a little, then stir in most of the coriander. Heat the grill and warm the tortillas in the microwave for 30 seconds.
- Spread a quarter of the pepper and onion mixture over the base of an ovenproof dish (a round one, if possible) or frying pan. Top with some of the soured cream and a warm tortilla, then repeat the layers three more times, finishing off with a final layer of soured cream. Sprinkle over the cheese and grill for 5 mins, or until golden and bubbling. Scatter with the remaining coriander before serving.
