2 tablespoons instant coffee
1 1/2 cups sugar
1 12-ounce store-bought pound cake, halved lengthwise
2 large eggs plus 4 egg yolks
1 14-ounce can sweetened condensed milk
1 12-ounce can evaporated milk
1 cup chilled heavy cream

Steps:

  • Preheat the oven to 350 degrees F. Dissolve the instant coffee in a bowl with 1/3 cup warm water. Cook the sugar in a medium skillet over medium-high heat, stirring occasionally, until it begins to melt. Continue cooking, swirling the pan but not stirring, until the sugar turns amber, about 7 minutes. Remove from the heat (don't worry if a few lumps of sugar remain). Carefully stir in the coffee mixture until smooth. Pour the caramel into an 8-inch-square baking pan; tilt the pan to coat the bottom and halfway up the sides. Let cool until the caramel is no longer sticky, about 10 minutes.
  • Lay the cake halves, cut-side down, next to each other on top of the caramel in the prepared pan. Poke the cake all over with a fork.
  • Whisk the eggs and yolks in a bowl until foamy. Slowly whisk in the condensed milk and evaporated milk until smooth. Pour the egg mixture over the cake, gently pressing on the cake so it soaks up the liquid. Cover the pan with foil and bake until set, 50 minutes to 1 hour. Transfer to a rack, remove the foil and let cool 30 minutes.
  • Run a knife around the edge of the pan to loosen the cake, then invert it onto a plate and unmold, letting the caramel drip onto the plate. Refrigerate until cold, about 2 hours. (The cake can be refrigerated, covered, up to 3 days.)
  • Beat the cream with a mixer until soft peaks form. Slice the cake; top with the whipped cream.

Slowly pour over warm cake (some topping will run down onto the serving plate.)

4 tbsp. butter, melted
1 cup dark brown sugar
1 cup walnuts, chopped
2 tsp. ground cinnamon
3 tsp. baking powder
2/3 cup white sugar
1 ¾ white flour
½ tsp. salt
4 oz. cream cheese, plain
1/3 cup unsalted butter
1 cup half and half cream
1 egg
½ tsp. vanilla

Steps:

  • Mix the brown sugar, cinnamon and melted butter well
  • Stir in chopped walnuts and set aside
  • In food processor add dry ingredients, baking powder, flour, white sugar, salt, and pulse until blended
  • Cut softened cream cheese and butter into chunks and add to food processor and pulse until blended. The mixture will stick together if pressed in your hand.
  • Put the mixture from the food processor into a large bowl. Make a well in the centre and add the cream, vanilla, and egg. Break the egg yolk and blend slowly, just until everything is moistened. Like when you are making muffins.
  • Preheat the oven to 375 and grease and 8 X 8 square pan.
  • Press the cake mixture into the plan
  • Add small chunks of cream cheese around the top - I push them in slightly with my finger!
  • Spoon on the brown sugar topping (this will sink into the cake as it bakes)
  • Bake for 30 to 35 minutes.
  • Let cool and Enjoy with a smoky dark coffee.

225g softened salted butter, plus extra for the tins
125g golden caster sugar
100g light brown soft sugar
1 tsp vanilla extract
4 large eggs
225g self raising flour
2 tbsp milk
toffee, chocolate or caramel pieces, to decorate
200g softened salted butter
400g icing sugar (golden icing sugar if you can find it - it adds a golden colour and caramel flavour)
70g caramel sauce, dulce de leche or caramel spread, plus 3 tbsp to serve

Steps:

  • Heat the oven to 180C/160C fan/gas 4. Butter two 20cm springform tins and line the bases with baking parchment.
  • Beat the butter and both sugars in a bowl with an electric whisk for a few mins until lighter in colour and fluffy. Add the vanilla and the eggs, one at a time, adding a spoonful of flour and beating in between each egg. Add the remaining flour and milk. Divide between the cake tins and bake for 25-30 mins until they're golden, spring back when pressed, and a skewer comes out clean when inserted into the middle. Cool in the tins for a few mins, then tip out and leave to cool completely on a wire rack.
  • Meanwhile, for the icing, put the butter and icing sugar in a bowl and whisk for a few mins until light and airy. Whisk in the caramel briefly, adding 1 tbsp of boiling water to loosen, if needed. Set aside until the sponges are completely cool before assembling, or the icing will melt.
  • Use half the icing to sandwich the cakes together, then spread the remainder over the top, smoothing it out with a knife or the back of a spoon. Leave in a cool place until ready to serve. Drizzle with the 3 tbsp extra sauce (warm briefly in the microwave if it's a little stiff), allowing some to drip down the sides if you like, and scatter over the toffee, chocolate or caramel pieces to serve. Edible glitter, birthday candles or sparklers, optional.

1 3/4 cups granulated sugar
1 1/4 cups light corn syrup
1/2 cup light brown sugar
6 tablespoons unsalted butter
1 1/2 tablespoons finely ground espresso powder
1 teaspoon vanilla extract
1/2 teaspoon sea salt
2 cups dark chocolate chips, melted
Chocolate wafer cookie crumbles, for garnish

Steps:

  • Lightly spray the bottom and sides of a 9-inch square baking pan with cooking spray. Line the pan with parchment paper, leaving an overhang; lightly spray the parchment with cooking spray. Set aside. Prepare a large heatproof bowl of cold water that will accommodate the bottom of a large heavy saucepan.
  • Place the cream, granulated sugar, corn syrup, brown sugar, butter and espresso powder in a large, heavy saucepan. Bring the mixture to a light boil over medium-high heat, stirring until the sugars have dissolved and the butter is melted. Reduce the heat to medium and cook, stirring occasionally, until the caramel is thick and bubbling and reaches a temperature of 245 degrees F on a candy thermometer.
  • Remove the saucepan from the heat and immediately stir in the vanilla and salt. Cool the caramel to room temperature by placing the bottom of the pan in the prepared water bath.
  • Pour the caramel into the prepared baking pan and let stand, uncovered, until set, at least 8 hours.
  • Lift the caramel out of the pan using the parchment overhang, and slice into 1-inch cubes.
  • To finish, dip the bottom half of each caramel into the melted chocolate. Top with cookie crumbles. Set aside until set, about 30 minutes

  • Preheat oven to 400 degrees F.

2 tsp instant coffee granules/powder
2 tbsp cocoa powder
2 tbsp hot water
175g softened butter
175g golden caster sugar
2 eggs
2 tbsp golden syrup
200g self-raising flour
4 tbsp milk
2 x 50g/2 x 2oz chocolate caramel bars
100g chocolate caramel bars
50g butter
2 tbsp milk
100g icing sugar , sifted

Steps:

  • Preheat the oven to 180C/Gas 4/fan oven 160C. Butter a 20cm/8in round cake tin and line the base with baking parchment.
  • Measure the coffee and cocoa into a cup, add the hot water and mix to a smooth paste. Put the butter, sugar, eggs, syrup, flour, milk and cocoa paste in a large mixing bowl and beat with a wooden spoon or electric beaters for 2-3 minutes until smooth. Break the caramel bars into sections and stir into the mixture.
  • Turn the mixture into the prepared tin and smooth the top. Bake for 35-40 minutes, until the top springs back when you press it lightly. Cool in the tin for 5 minutes, then turn out, peel off the lining paper and leave to cool.
  • To make the icing, break up the caramel bars and put in a small pan with the butter and milk. Gently heat until smooth, stirring all the time, then remove from the heat and stir in the icing sugar (don't worry if it doesn't dissolve immediately, just keep stirring). Leave to cool until it thickens enough to leave a trail when you lift the spoon. Put the cake on a serving plate, spread the icing over the top, letting it fall softly down the sides, then leave to set.

Bake the meringue in the preheated oven for 3 hours; when done, the meringue will sound hollow when tapped on top. Turn the oven off and leave the oven door closed and allow the meringue to cool completely; overnight or for at least 3 to 4 hours.
  • Next, prepare the coffee cake layers. Preheat the oven to 350F/177C and prepare three, 8-inch (20-cm) cake pans - line the bottoms with parchment paper and spray the sides with a baking spray. Place the softened butter and sugar into a mixer bowl and whisk for 3 to 4 minutes, scraping down the sides of the mixing bowl often, until the butter is light and fluffy. Remove the cakes from the oven and allow them to cool completely on a wire rack. Once cooled completely, use a long serrated knife to level off the tops.
