1 (13 1/2 ounce) package Johnsonville Smoked Split Rope Sausage, diced
3 cups frozen cut green beans, cooked according to package directions and drained
1 (10 3/4 ounce) can condensed cream of chicken soup
3/4 cup sour cream
1 (6 ounce) box chicken flavor stuffing mix
1/4 cup butter, melted
1/3 cup chicken stock

Steps:

  • In a non-stick skillet, cook sausage over medium heat until lightly browned.
  • Add prepared beans to skillet; remove from heat.
  • In a small bowl, combine soup and sour cream.
  • Pour over sausage mixture and stir gently.
  • In a bowl, combine stuffing mix and butter.
  • In a greased 2-1/2 quart baking dish, spoon one-half of stuffing mixture; cover with sausage mixture.
  • Top with remaining stuffing mixture.
  • Drizzle with chicken stock.
  • Bake, covered, at 350ºF for 25-30 minutes or until heated through.
  • Serve.

4 eggs
2 cups milk
1 box (12.5 oz) Old El Paso™ soft taco dinner kit
2 smoked andouille sausage links (from 12-oz package), chopped
1 can (2.25 oz) sliced ripe olives, drained
1 can (4.5 oz) Old El Paso™ chopped green chiles, drained
1 cup shredded pepper Jack cheese (4 oz)
1 cup Old El Paso™ Thick 'n Chunky salsa, if desired

Steps:

  • Spray ovenproof 10-or 12-inch cast-iron skillet with cooking spray.
  • In large bowl, beat eggs, milk and taco seasoning (from dinner kit) with whisk until well blended.
  • In a medium bowl, mix smoked sausage, ripe olives, chopped green chiles and 3/4 cup of the cheese.
  • Pour about 1/2 cup milk mixture into skillet. Arrange 5 tortillas (from dinner kit) in bottom of skillet, overlapping slightly.
  • Spread half of the sausage mixture over tortillas, then top with about half of the milk mixture. Arrange remaining 5 tortillas and sausage mixture on top, then pour rest of milk mixture over to cover.
  • Scatter remaining 1/4 cup cheese over casserole. Drizzle with taco sauce (from dinner kit).
  • Spray sheet of foil with cooking spray; place sprayed side down over skillet. Cover; refrigerate at least 4 hours but no longer than 24 hours.
  • Heat oven to 350°F. Uncover skillet, and bake 40 to 45 minutes or until puffed, golden brown and eggs are set.
  • Serve with salsa.

1 pound ground beef
1/2 cup chopped onion
1/2 cup chopped green pepper
1 envelope taco seasoning
1 can (8 ounces) tomato sauce
1 can (6 ounces) tomato paste
1/2 cup sliced ripe olives
1/4 cup water
1/2 teaspoon chili powder
2 large eggs
1 cup sour cream
1/4 teaspoon pepper
4 flour tortillas (7 inches)
2 cups crushed corn chips
2 cups shredded Monterey Jack cheese

Steps:

  • Crumble meat into a 2-qt. microwave-safe dish; add onion and green pepper. Cover and microwave on high for 5-6 minutes or until meat is no longer pink; drain. Stir in the taco seasoning, tomato sauce, tomato paste, olives, water and chili powder. Cover and cook at 50% power for 10 minutes or until thickened, rotating dish once., In a bowl, whisk the eggs, sour cream and pepper. Place two tortillas in an 11x7-in. microwave-safe dish. Layer with half of the sour cream mixture and meat sauce; repeat. Top with corn chips and cheese., Microwave, uncovered, at 50% power for 10-15 minutes or until a thermometer reads 160° and cheese is melted. Let stand for 5 minutes before cutting.

This was another one of our favorites in the 70's Very inexpensive and very easy to make. Just recently found this recipe hand-written by my Mom, and the warm feelings flood back to me, because this was a true favorite in our house. Little did I know that she was on such a tight budget, yet made things like this that we all loved!! NOTE: The meat that was used in this recipe always varied, according to whatever we had available at the time.

3 cups idaho potatoes, peeled, boiled and cut into cubes when cool, approx. 1 lb
4 tablespoons butter
4 tablespoons flour
2 cups milk
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 lb Velveeta cheese, diced
1/2 cup sharp cheddar cheese, shredded
1 lb skinless smoked sausage (Eckrich is my favorite brand)
1/8 teaspoon paprika

Steps:

  • Cut skinless smoked sausage in half, lengthwise, and then chop into 1/2 inch "half moon" cuts. Cook in a frying pan for about 15 minutes, turning frequently to SLIGHTLY brown.
  • Meanwhile, put cooked & diced potatoes in 2 quart casserole. Add cooked meat and give it a gentle toss.
  • Mix all remaining ingredients (except for shredded cheddar cheese & the paprika) in a saucepan over medium heat until warm, melted and smooth. (Use a whisk and stir constantly.).
  • Pour white/cheese sauce over potatoes and meat. Sprinkle shredded sharp cheddar cheese on top, and then sprinkle paprika evenly over the top.
  • Bake in preheated 350°F oven for 35-45 minutes (watch, until golden brown on top).
  • NOTE: You can substitute: 1/2 lb. hot dogs, sliced into 1/2-inch slices OR 1/2 lb. ham diced into 1/2-inch dices OR 12 oz. can of Spam diced into 1/2-inch dices, instead of the smoked sausage.

6 medium burrito size flour tortillas
1 pound hot breakfast sausage (for Authentic Mexican Flavor use Chorizo) I still like Jimmy Dean Sausage
1 small onion, finely chopped
1/2 cup salsa
5 large eggs
1 cup milk
8 ounces shredded Colby jack cheese
pinch of salt and pepper
1/4 teaspoon mustard powder

Steps:

  • Brown sausage in a skillet, using a wooden spoon to break the meat apart while cooking. Turn off the heat and stir in the salsa. Combine and set aside. In a bowl, whisk together the eggs, milk, salt, pepper and mustard powder, set aside. Slice the tortillas in half. Spray a casserole dish with cooking spray, place the straight end of the tortilla (4 pieces) towards the outside of the dish. Sprinkle with some cheese, then half of the sausage mixture, a little more cheese and repeat with an additional layer beginning with the tortillas and the end with a final layer of tortillas on top (make sure to save a little cheese for the top). Pour the egg mixture over the entire thing. Using your hands press the top layer down. Bake in a 350˚F oven for 35 minutes. Remove and top with remaining cheese and bake an additional 5-10 minutes or until cheese is bubbly.

1/2 cup canned diced tomatoes and green chiles

3 tablespoons oil (I actually use bacon fat)
32 ounces southern style hash browns, thawed
14 ounces smoked sausage, diced
3 tablespoons minced onions or 1/2 diced onion
1 -2 teaspoon cajun seasoning
3 ounces cooked bacon bits
1 . 5 c. sharp cheddar cheese, shredded
1 family sized can cream of chicken soup

Steps:

  • Heat 12" skillet to medium high, then add oil.
  • Add potatoes, smoked sausage, onion and cajun seasoning. Cook until browned, about 10-12 minutes.
  • Stir in cheese, allow to at least melt partially.
  • Add soup, folding in to combine fully.
  • Pour into slightly greased 9 X 13 pan. Put into preheated 350 degree oven; cook for 30 - 35 minutes or until brown and bubbly. Remove and let stand 5 - 10 minutes.
