8 ounces bulk lean turkey breakfast sausage
1/2 cup canned diced tomatoes and green chiles
6 corn tortillas (6 inches)
1/2 cup shredded Monterey Jack cheese
1/4 cup shredded pepper jack cheese
2 green onions, chopped
6 large eggs
3/4 cup fat-free milk
3/4 teaspoon paprika
1/4 teaspoon ground cumin
Reduced-fat sour cream, optional
Salsa, optional
Additional chopped green onions, optional

Steps:

  • Preheat oven to 350°. In a large skillet, cook and crumble sausage over medium heat until no longer pink, 4-6 minutes. Stir in tomatoes., Coat a 9-in. deep-dish pie plate with cooking spray. Line pie plate with half the tortillas. Sprinkle with half of each of the following: sausage mixture, cheeses and green onions. Repeat layers. , In a bowl, whisk together eggs, milk, paprika and cumin; pour slowly over layers. Bake, uncovered, until set, 25-30 minutes. Let stand 10 minutes. Cut into wedges. If desired, serve with sour cream, salsa and additional green onions.

1 cup roasted red peppers
1/2 cup pitted kalamata olives
1/4 cup golden raisins
1/4 cup extra-virgin olive oil
3 tablespoons minced fresh parsley
2 tablespoons small capers in brine, plus 1 tablespoon caper brine
2 teaspoons red wine vinegar
1 pinch crushed red pepper flakes
1 clove store-bought or homemade garlic confit, recipe follows
Juice of 1/2 lemon
Kosher salt and freshly ground black pepper
1 cup olive oil
2 pounds Yukon gold potatoes, peeled and thinly sliced
1 large Spanish onion, thinly sliced
Kosher salt and freshly ground black pepper
1/3 cup panko breadcrumbs
12 extra-large eggs
1/2 cup grated Gruyere
1/4 cup diced pickled cherry peppers
2 tablespoons chopped fresh parsley
1 plum tomato, seeded and diced
1/2 cup grated Parmesan
Extra-virgin olive oil, for drizzling
1 head garlic, cloves separated and peeled
1 1/2 cups olive oil

Steps:

  • For the red pepper tapenade: In a food processor, add the red peppers, olives, raisins, olive oil, parsley, capers and brine, vinegar, red pepper flakes, garlic confit and lemon juice and process until combined but still slightly chunky. Season with salt and pepper. Set aside.
  • For the tortilla: Preheat the oven to 300 degrees F.
  • In a 12-inch ovenproof nonstick pan, heat the olive oil over medium heat until hot. Add the potatoes and onions, season with salt and pepper and cook, stirring frequently, until the potatoes are tender but not breaking, 8 to 10 minutes. Strain the oil from the potato mixture and reserve 1 tablespoon of the oil. Leave the potato mixture in the pan.
  • In a small nonstick pan, toast the panko breadcrumbs in the reserved 1 tablespoon oil. Season with salt and pepper.
  • In a large bowl, whisk the eggs to a smooth, even consistency. Add the Gruyere, cherry peppers, chopped parsley, tomato, toasted breadcrumbs and 1/4 cup of the Parmesan. Season with salt and pepper and stir to combine. Pour the egg mixture into the pan with the potato mixture. Cook over medium-low heat until the eggs are just starting to set, 5 to 6 minutes. Transfer to the oven and bake until the eggs are set, 20 to 30 minutes. Let cool until warm.
  • Slide the tortilla onto a cutting board or turnout onto a large serving plate and cut into slices. Serve the slices at room temperature topped with the red pepper tapenade, a drizzle of extra-virgin olive oil and a sprinkle of the remaining Parmesan.
  • Put the garlic cloves in a small pot and cover with the olive oil. Cook over low heat until the cloves are very soft, 50 minutes to 1 hour. Let cool, then store in a resealable container in the refrigerator.

1 lb. hot Italian sausage, casings removed, cooked and drained
2-1/2 cups KRAFT Mexican Style Finely Shredded Cheddar Pepper Jack Cheese
8 Eggland's Best® Eggs
1/2 cup milk
1 can (4 oz.) chopped green chiles, undrained
1/2 tsp. garlic powder
1/2 tsp. ground cumin
1/2 tsp. ground black pepper
1/2 tsp. paprika
2 cups grape tomatoes, halved

Steps:

  • Layer half each of the tortilla strips, sausage and cheese in 13x9-inch baking dish sprayed with cooking spray; repeat layers.
  • Whisk eggs, milk, chiles, garlic powder, cumin and pepper until blended; pour over ingredients in baking dish. Sprinkle with paprika. Refrigerate overnight.
  • Heat oven to 350ºF. Spread tomatoes over casserole. Bake (uncovered) 45 to 50 min. or until center is set and edges are lightly browned.

Inspired by the Egg and Cheese Bread Omelet, we made a complete breakfast wrap--tortilla, eggs, spinach, cheese and ham included--entirely in one skillet, for a go-to dish you can make in a hurry. Enjoy right out of the pan or with a few dashes of your favorite hot sauce.

2 large eggs
Kosher salt and freshly ground black pepper
1 tablespoon unsalted butter
One 8-inch whole-wheat tortilla
1/3 cup lightly packed baby spinach
2 slices American cheese
2 thin slices deli Black Forest ham

Steps:

  • Combine the eggs with a pinch of salt and several grinds of pepper in a small bowl and whisk to combine.
  • Melt the butter in a medium nonstick skillet over medium heat. Pour in the egg mixture and swirl the skillet to coat the bottom. Working quickly, dip the tortilla in the eggs, then flip it over and place it back in the skillet (both sides should be coated in egg). Season with another pinch of salt.
  • Continue to cook the eggs until they are completely set on the bottom, 1 to 2 minutes. Slide a large rubber or silicone spatula under the tortilla and flip the whole tortilla and egg over in one single motion. Scatter the spinach on the half of the tortilla that's closest to you, then top with the cheese and finally the ham. Continue to cook until the bottom is golden brown, about 1 minute more. Remove from the heat and slide onto a plate.
  • Starting with the side that has all the filling, start rolling the tortilla into a tight wrap or burrito. Keep the seam side facing downward so the wrap stays closed. Cut in half crosswise and serve.

12 corn tortillas (6 inch)
4 green onions, sliced, divided
1-1/2 cups KRAFT Shredded Cheddar Cheese, divided
1 jar (16 oz.) red salsa
1/2 cup sour cream

Steps:

  • Heat oven to 375º F.
  • Blend eggs and cream cheese in blender until smooth.
  • Arrange 6 tortillas on bottom of 13x9-inch baking dish sprayed with cooking spray, overlapping as necessary to evenly cover bottom of dish. Cover with egg mixture, and half each of the onions and cheddar. Top with remaining tortillas and salsa; cover.
  • Bake 25 min. Top with remaining cheddar; bake, uncovered, 15 min. or until center is set.
  • Let stand 10 min. before serving topped with sour cream and remaining onions.

2 tablespoons olive oil
2 cups diced fresh tomatoes (about 3 to 5)
1 onion, diced
3 cloves garlic, minced
4 teaspoons chili powder
2 teaspoons paprika
2 teaspoons ground cumin
1 large boneless, skinless chicken breast (about 12 ounces), cut into bite-size pieces
Kosher salt
1 15-ounce can pinto beans, drained and rinsed
1 15-ounce can kidney beans, drained and rinsed
1 16-ounce jar salsa verde
10 large (burrito-size) flour tortillas or 12 small flour or corn tortillas
2 cups cooked rice (from 2/3 cup dry)
1 11-ounce can corn kernels, drained
1 pound grated cheddar-jack cheese
1 1/2 cups red enchilada sauce
Sour cream and cilantro, for serving

Steps:

  • In a large skillet over medium-high heat, heat 1 tablespoon of the olive oil. Add the tomatoes, onion and garlic, stir and cook for a minute or two to soften the onion. Add 2 teaspoons of the chili powder, 1 teaspoon of the paprika and 1 teaspoon of the cumin. Stir and cook the mixture for another minute or two to release the flavors of the spices. Remove the mixture to a bowl and set aside.
  • In the same skillet, heat the remaining 1 tablespoon olive oil. Add the chicken along with the remaining 2 teaspoons chili powder, 1 teaspoon paprika, 1 teaspoon cumin and 1/2 teaspoon salt. Saute the chicken until it's deep golden brown and done in the middle, about 4 to 5 minutes. Add 1 cup water and stir to make a sauce. Bring the sauce to a boil and cook until it's reduced by half, about 3 to 4 minutes. Stir in the beans and set aside.
  • To assemble the casserole, pour half a jar (about 1 cup) of salsa verde into the bottom of a 9-by-13-inch casserole dish or disposable foil baking pan. Add a layer of half the tortillas on top of the salsa verde, overlapping the edges. Spoon the rice over the tortillas, spread the tomato mixture over the rice, then sprinkle the corn over the tomatoes. Next, add the chicken and bean mixture, then sprinkle on half the cheese and pour over half the enchilada sauce. Next, add the rest of the tortillas, then pour on the rest of the salsa verde and the rest of the enchilada sauce and sprinkle on the rest of the cheese.
  • If you're baking the casserole right away, preheat the oven to 375 degrees F and bake, covered with foil, for 20 minutes. Then remove the foil and continue baking for 15 to 20 minutes, or until hot and bubbly. Serve with sour cream and cilantro.
