Tortellini Skewers image

4 tablespoons olive oil
2 tablespoons jarred pesto
2 teaspoons red wine vinegar
2 packages spinach tortellini, cooked and cooled
2 pints cherry tomatoes
12 ounces fresh mozzarella, cubed
1/4 cup minced fresh parsley

Steps:

  • Mix together the olive oil, pesto and vinegar in a bowl.
  • On small skewers, thread 1 tortellini, 1 cherry tomato and 1 mozzarella cube per skewer. Lay the skewers on a platter and lightly drizzle the dressing over them with a spoon.
  • Serve immediately or refrigerate. Sprinkle on the minced parsley just before serving.

1 package (9 ounces) refrigerated cheese tortellini
40 pimiento-stuffed olives
40 large pitted ripe olives
3/4 cup Italian salad dressing
40 thin slices pepperoni
20 thin slices hard salami, halved

Steps:

  • Cook tortellini according to package directions; drain and rinse in cold water. In a large bowl, combine the tortellini, olives and salad dressing. Toss to coat; cover and refrigerate for 4 hours or overnight., Drain mixture, discarding marinade. For each appetizer, thread a stuffed olive, a folded pepperoni slice, a tortellini, a folded salami piece and a ripe olive on a toothpick or short skewer.

1 (20 ounce) package refrigerated tortellini
2 pints cherry tomatoes
½ cup pesto
toothpicks

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil; stir in tortellini. Cook uncovered, stirring occasionally, until the tortellini float to the top, 5 to 6 minutes. Drain and rinse with cold water.
  • Place tortellini, cherry tomatoes, and pesto in a large bowl; toss until evenly coated.
  • Skewer one tortellini and one tomato on each toothpick. Arrange on a tray. Keep refrigerated until serving.

I made these for my annual Academy Awards party last year! They were a hit! A bit tedious and time consuming, but you make them the day before you serve. Not exactly sure on the actual servings, but 48 kebabs sounds about right.

1 package frozen cheese tortellini
1 package sliced pepperoni
1 jar black olives
1 jar pitted green olives
1 (8 ounce) package cheese (of your choice, I use the white pepperjack for a bit of heat)
1 bottle Italian dressing
1 box toothpick (the kind with the handles)

Steps:

  • Prepare frozen tortellini according to package directions.
  • Drain and cool.
  • Get out a plastic bowl to store the kebabs.
  • Cut your block of cheese into small cubes.
  • On each toothpick, place 1 tortellini, 1 black olive, 1 block of cheese, 1 slice of pepperoni (may cut in half or fold if too large), and 1 green olive.
  • You can vary the order in which you place the ingredients.
  • Place all of the toothpicks in the container and pour the Italian dressing over all.
  • Cover and refrigerate overnight to marinate.
  • When ready to serve, take them out of the container and lay them on a pretty lettuce lined platter.

24 tortellini, cheese-filled spinach, uncooked
1/2 cup Italian dressing
12 medium shrimp, cooked, peeled, deveined
12 small cherry tomatoes

Steps:

  • Cook tortellini as directed on packaged; drain and cool.
  • Place dressing in shallow glass or plastic bowl.
  • Stir in tortellini, shrimp and tomatoes.
  • Cover and refrigerate 1 hour, stirring once to coat.
  • Drain tortellini mixture.
  • Thread tortellini, shrimp and tomatoes alternately on each of twelve 6-inch skewers.
  • Variation:.
  • For a meatless predinner treat, leave off the shrimp and use whole pittted ripe olives or small whole mushrooms.
