TORTELLINI WITH PARMESAN CREAM SAUCE
Absolutely delicious! Cheese filled tortellini in a creamy parmesan sauce with prosciutto and peas. A fabulous entree for a romantic dinner that is fairly quick to put together.

Steps:
- Cook tortellini according to box directions. While it cooks, be sure to assemble all the other ingredients to be at your fingertips for when the directions begin to move quickly.
- Melt butter in large pan over medium heat.
- Add cooked tortellini. Stir gently until coated with butter.
- Add cream and prosciutto ham, combining gently. Cook until mixture thickens slightly, about 5 to 8 minutes.
- Add peas, cheese, and generously pepper (to taste). Turn over several times, allowing cheese to melt before serving.
TORTELLINI WITH ZUCCHINI IN PARMESAN SAUCE

- 1. Chop nuts, and slice zucchini and green onions 2. Boil tortellini until tender and drain 3. Meanwhile, heat olive oil in large skillet and add nuts. Cook until lightly toasted, 2 or 3 minutes, and remove with a slotted spoon. Add zucchini and green onion and cook until slightly tender, but firm. 4. Add pasta,nuts, *cooked chicken if desired, milk and 3/4 cup of Parmesan cheese to pan. Toss and cook for one minute, being careful that Parmesan cheese does not clump. Season with salt and black pepper. Transfer to serving bowls and top with remaining Parmesan cheese. Serve hot!
CAPELLINI WITH SPICY ZUCCHINI-TOMATO SAUCE

- Heat the olive oil in a large skillet over medium heat. Add the garlic and red pepper flakes and cook until the garlic is just golden, about 1 minute. Crush the tomatoes into the skillet with your hands and add the juice. Add 1/2 teaspoon salt and simmer, stirring occasionally, until the sauce is slightly thickened, about 15 minutes. Add the zucchini and cook until crisp-tender, about 5 minutes. Season with salt.
- Meanwhile, bring a large pot of salted water to a boil. Add the capellini and cook as the label directs. Drain and add to the sauce along with the basil; toss to coat. Top with parmesan.
BAKED TORTELLINI WITH ITALIAN SAUSAGE
While this baked tortellini dish requires a bit of chopping and some stove preparation, it can be refrigerated and baked longer for a ready-to-go meal. The fresh ingredients make the dish taste a thousand times more complicated and gourmet than it really is, which is another reason this large dish is great to feed a crowd. Serve with crusty bread to mop up the delicious, creamy sauce, and prepare for compliments. Even the leftovers are to die for!

- Fill a large pot with lightly salted water and bring to a rolling boil; stir in tortellini and return to a boil. Cook uncovered, stirring occasionally, until tortellini float to the top and filling is hot, about 10 minutes. Drain and set aside.
- Preheat the oven to 375 degrees F (190 degrees C).
- Heat a large skillet over medium-high heat. Cook and stir Italian sausage in the hot skillet until browned and crumbly, 5 to 7 minutes, breaking into bite-sized pieces as it cooks. Drain and discard grease, but do not rinse or clean the skillet. Place cooked sausage into a 9x13-inch baking dish.
- Heat the same skillet over medium heat. Cook and stir onion until slightly browned and tender, 5 to 7 minutes. Add bell peppers, zucchini, and squash; reduce heat to low, cover, and cook until vegetables are crisp-tender, 3 to 5 minutes. Pour in diced tomatoes, Neufchatel cheese, Italian seasoning, salt, and pepper. Heat until combined and smooth, about 5 minutes.
- Pour cooked tortellini into the baking dish with sausage. Add vegetable mixture and stir gently to combine. Drizzle with marinara sauce; top with shredded Parmesan cheese.
- Bake in the preheated oven until cheese is golden, 25 to 30 minutes. Let cool 5 minutes before serving.

- Cook tortellini according to package instructions. Once cooked, drain and rinse with cold water. Set aside. TIP: I found it easy (and a timesaver) to cook the tortellini at the same time the zucchini/sauce mixture was cooking.
- Heat olive oil in large skillet on medium high heat. Add diced zucchini and chopped onions, stir often, and cook on medium high heat for about 5 minutes (the veggies will be very lightly browned). Add the minced garlic to the skillet, stir to combine, and cook for another minute (be careful to stir and not let the garlic burn, or it will taste bitter).
- Add baby spinach leaves, 1 cup (reserve the rest) of marinara sauce, red pepper flakes, salt and pepper to the skillet. Stir well, to combine. TIP: The spinach can be added in small batches... it looks like a LOT of spinach going in the skillet, but it will definitely wilt down! Once it has wilted, add more to skillet. Once all spinach has been added, cover the skillet, and simmer on low heat for 2-3 minutes, until the spinach has fully wilted. At this point, additional salt and pepper can be added, to suit your taste.
- Layer the casserole this way: Spoon 1/2 cup of the reserved marinara sauce over bottom of dish. Add HALF of the cooked/drained tortellini on top of the sauce. Cover the tortellini with HALF of the veggie/sauce mixture. Cover that with the rest of the tortellini. Cover that with the rest of the veggie mixture. Pour remaining 1/2 cup of marinara sauce over top of veggies, then sprinkle with grated mozzarella and Parmesan cheese.
