TORTELLINI WITH SAUSAGE AND PEPPERS

Steps:
- Combine sausage links and water in a large skillet and bring to a boil, about 5 minutes. Cover, reduce heat, and simmer until juices run clear, about 15 minutes. Drain off water and cook links in the skillet, stirring frequently, until browned, 2 to 4 minutes more. Remove from skillet, allow to cool, and cut into 1/2-inch diagonal slices. Wipe skillet clean using a paper towel.
- Place skillet over medium heat and add olive oil. Add onion to hot oil and cook until tender but not brown, 3 to 5 minutes. Add garlic and cook until fragrant, about 30 seconds. Stir in tomatoes, tomato paste, wine, oregano, and red pepper. Add cooked sausage and bell pepper to the skillet. Bring to a boil, about 5 minutes. Reduce heat and cover. Simmer to desired thickness, about 20 minutes.
- Meanwhile, bring 4 quarts of water to a boil in a saucepan, about 5 minutes. Add tortellini, reduce heat slightly and boil until pasta is tender but still firm to the bite, 5 to 10 minutes. Drain and return pasta to the warm saucepan. Stir parsley into the sausage mixture, pour over pasta, and serve immediately.

- In a large saucepan, cook cream and broccoli, uncovered, over medium-low heat for 5-6 minutes or until broccoli is crisp-tender. Meanwhile, cook tortellini according to package directions. , Stir 2 cups cheese and pepper into broccoli mixture. Bring to a boil. Reduce heat; simmer, uncovered, for 8-10 minutes or until mixture is thickened, stirring occasionally. , Drain tortellini; add to sauce and toss to coat. Sprinkle with parsley and remaining cheese.

This is a great vegetarian pasta dish from Canadian Living's Make It Tonight. All you need is a crunchy green salad and you've got dinner.

Steps:
- Cook tortellini in a large pot of boiling water until tender but firm (about 5 min).
- Add broccoli and cook until tender (about 3 min).
- Drain.
- In a large saucepan or Dutch oven, combine tomatoes, garlic, oregano, salt and pepper.
- Bring to a boil, reduce heat and simmer, stirring occasionally, until sauce has thickened slightly (about 10 min).
- Add green onions and cook 2 more minutes.
- Add sauce to pasta/broccoli mixture and toss together.
- Sprinkle with Parmesan and serve.

TORTELLINI WITH SPICY SAUSAGE AND BROCCOLI
From the December 2007/ January 2008 issue of Cooking Pleasures magazine. The recipe is posted as written, but personally, I double the sauce amounts; there just doesn't seem to be enough sauce to go around otherwise.

Steps:
- Cook the tortellini according to package directions, adding the broccoli during the last 2 minutes of cooking. Drain, reserving 2 to 3 Tbs of the pasta cooking water.
- While pasta is cooking, pulse tomatoes and oil in food processor until coarsely chopped. Add olives, rosemary and garlic; pulse until olives are coarsely chopped.
- Heat a large nonstick skillet over medium heat.
- Cook the sausage 3 to 4 minutes until it begins to brown. Stir in tortellini, tomato mixture and reserved pasta water if needed to loosen the sauce.
- Top with cheese.
