TORTELLINI WITH EDAMAME AND SMOKED SAUSAGE



Tortellini With Edamame and Smoked Sausage image

I found the original recipe for this on the Disney Family Fun site and changed it up a bit to add some more Asian inspired flavor. The original was featured as a dish that cost under $1.50 a serving and adding the additional ingredients doesn't increase the cost by much! It's still quick, easy, cheap and tastes great!

Number Of Ingredients 7

1 lb frozen cheese tortellini
1 cup edamame, shelled
1 cup red pepper, diced
1 lb smoked sausage (I use kielbasa)
1/4 cup low-fat Italian salad dressing
1/2 teaspoon ground ginger
1/4 cup low-sodium teriyaki sauce

Steps:

  • Set 6 quarts of salted water to boil in a large pot.
  • Meanwhile, chop red pepper and slice the smoked sausage into 1/4 inch-thick rounds.
  • Stir-fry red pepper and sausage together until heated through -- about 5 minutes.
  • Add tortellini to boiling water and cook for 5 minutes.
  • Add edamame to water and boil for another 2 minutes. Drain tortellini and edamame well.
  • Mix Italian dressing, ginger and teriyaki sauce.
  • Toss everything together with the Italian dressing mixture and heat through one final time.

Adapted from Short Cut Mom; quick, and easy with ingredients you can keep on hand. I substitute frozen peas for the frozen edamame.

1 lb frozen cheese tortellini
1 cup frozen shelled edamame
1 cup diced red pepper
1 lb smoked sausage
1/2 cup Italian dressing

Steps:

  • Set 6 quarts of salted water to boil in a large pot.
  • Meanwhile, chop red pepper and slice the smoked sausage into 1/4 inch-thick rounds.
  • Stir-fry red pepper and sausage together until heated through -- about 5 minutes.
  • Add tortellini to boiling water and cook for 5 minutes.
  • Add edamame to water and boil for another 2 minutes. Drain tortellini and edamame well.
  • Toss everything together with the Italian dressing and heat through one final time.

"This tried-and-true salad is simple to toss together and convenient since you make it ahead," reports May Sisk Hazlet, New Jersey. "Now that my husband and I are retired, we travel a lot and enjoy having more time for family and hobbies."

1 package (16 ounces) frozen cheese tortellini
2 cups julienned carrots
3-1/2 cups broccoli florets
1 to 2 tablespoons chopped green onions
DRESSING:
1/2 cup olive oil
3 tablespoons cider or red wine viengar
3 tablespoons minced fresh parsley
4-1/2 teaspoons Dijon mustard
1 tablespoon minced fresh basil or 1 teaspoon dried basil
1 tablespoon minced fresh thyme or 1 teaspoon dried thyme
1 to 1-1/4 teaspoons salt
1/2 teaspoon pepper
3 garlic cloves, minced

Steps:

  • Cook tortellini according to package directions. Rinse in cold water; drain. Place carrots in a steamer basket over 1 in of boiling water in a saucepan. Cover and steam for 3-4 minutes. Add broccoli; steam 4-5 minutes longer or until crisp-tender. Rinse in cold water; drain. In a large bowl, combine tortellini, carrots, broccoli and onions. In a jar with a tight-fitting lid, combine dressing ingredients; shake well. Pour over salad and toss to coat. Cover and refrigerate for at least 2 hours.

  • Cook the tortellini gently in boiling salted water. I cook it a few minutes less than the package instructions state. Drain carefully and rinse in cold water, or put into an ice water bath to stop the cooking. Be gentle with the pasta, you don't want to tear it. Drain and set aside to dry on a clean dish towel. Then add them to a large salad bowl.
  • Separate the layers of the onion chunks and add them to the salad bowl along with the peppers.
  • Add the drained artichokes, edamame beans, hearts of palm, and dill to the bowl. Add salt and pepper to taste. Toss gently with enough dressing to moisten everything thoroughly.
