TORTELLINI WITH EDAMAME AND SMOKED SAUSAGE
I found the original recipe for this on the Disney Family Fun site and changed it up a bit to add some more Asian inspired flavor. The original was featured as a dish that cost under $1.50 a serving and adding the additional ingredients doesn't increase the cost by much! It's still quick, easy, cheap and tastes great!

Steps:
- Set 6 quarts of salted water to boil in a large pot.
- Meanwhile, chop red pepper and slice the smoked sausage into 1/4 inch-thick rounds.
- Stir-fry red pepper and sausage together until heated through -- about 5 minutes.
- Add tortellini to boiling water and cook for 5 minutes.
- Add edamame to water and boil for another 2 minutes. Drain tortellini and edamame well.
- Mix Italian dressing, ginger and teriyaki sauce.
- Toss everything together with the Italian dressing mixture and heat through one final time.

- Cook tortellini according to package directions. Rinse in cold water; drain. Place carrots in a steamer basket over 1 in of boiling water in a saucepan. Cover and steam for 3-4 minutes. Add broccoli; steam 4-5 minutes longer or until crisp-tender. Rinse in cold water; drain. In a large bowl, combine tortellini, carrots, broccoli and onions. In a jar with a tight-fitting lid, combine dressing ingredients; shake well. Pour over salad and toss to coat. Cover and refrigerate for at least 2 hours.

- Cook the tortellini gently in boiling salted water. I cook it a few minutes less than the package instructions state. Drain carefully and rinse in cold water, or put into an ice water bath to stop the cooking. Be gentle with the pasta, you don't want to tear it. Drain and set aside to dry on a clean dish towel. Then add them to a large salad bowl.
- Separate the layers of the onion chunks and add them to the salad bowl along with the peppers.
- Add the drained artichokes, edamame beans, hearts of palm, and dill to the bowl. Add salt and pepper to taste. Toss gently with enough dressing to moisten everything thoroughly.
