This is adapted from a recipe by Rick Bayless. Everytime I think about these subs I feel immediately hungry.

4 ounces mexican chorizo sausage, casing removed
1 (15 ounce) can low-sodium black beans, drained and rinsed
2 crusty rolls
2 tablespoons ricotta salata or 2 tablespoons feta
1 ripe avocado, halved, pitted and slices into 8 slices
2 tablespoons green chili salsa

Steps:

  • In a skillet, over medium heat, add the chorizo. Cook, breaking up, until browned for 5 to 6 minutes.
  • Add the beans, and mash them with a potato masher until everything looks like mashed potatoes.
  • Cut the rolls in half, and scrape out some of the bread center to make room for the filling. Fill each roll with half of the chorizo mix, top with the cheese, salsa, and avocado.

12 ounces chorizo, casing removed
1 15 1/2- to 16-ounce can refried black beans
4 tablespoons olive oil
1 large onion, chopped
4 tostadas (purchased 5- to 6-inch-diameter crisp tortillas)
4 large eggs
1/2 cup drained purchased fresh tomato salsa
1 avocado, peeled, pitted, diced
1/2 cup crumbled soft fresh goat cheese (about 2 ounces)

Steps:

  • Preheat oven to 300°F. Fry chorizo in medium skillet over medium-high heat until meat is cooked through and fat is rendered, about 10 minutes. Drain off all fat from skillet. Add beans to chorizo and stir until heated through, about 2 minutes. Remove from heat; cover to keep warm. Heat 2 tablespoons oil in heavy large nonstick skillet over medium-high heat. Add onion and sauté until onion is soft, about 4 minutes. Arrange tostadas on baking sheet. Spread 1/3 cup bean-chorizo mixture on each tostada. Top with onion. Place in oven to keep warm.
  • Heat remaining 2 tablespoons oil in same skillet over high heat. Drop in eggs 1 at a time. Fry over medium-high heat until whites are firm but yolks are still tender, about 1 minute per side. Using metal spatula, place 1 egg on each tostada; top with salsa, avocado, and cheese.

2 cups shredded lettuce
1 cup chopped radishes
1 cup thin red onion rings
1/4 cup HEINZ Distilled White Vinegar
1/4 tsp. ground black pepper
6 bolillos or Cuban rolls, split
1/4 cup KRAFT Real Mayo
3 cups TACO BELL® Refried Beans (about 2 16-oz. cans)
6 KRAFT Singles

Steps:

  • Toss lettuce with radishes, onions, vinegar, salt and pepper; set aside.
  • Remove bread from insides of bolillo halves, leaving 1/4-inch-thick shells; reserve removed bread for snacking or another use. Spread insides of shells evenly with mayo. Spoon beans into bottom halves of bolillos; top with Singles. Place on rack of broiler pan.
  • Broil 2 min. or until Singles are melted. Top with lettuce mixture; cover with tops of bolillos.
