ROSEMARY-GARLIC ROAST BEEF AND POTATOES WITH HORSERADISH SAUCE
Top round roast is low in fat but has great flavor, enhanced here by a rosemary-garlic rub.

- Preheat oven to 400 degrees. In a small bowl, stir together 3 tablespoons oil, rosemary, garlic, and lemon zest; season with salt and pepper. In a large ovenproof skillet, heat 1 tablespoon oil over medium-high. Pat beef dry and add to skillet. Increase heat to high and cook, turning with tongs, until beef is browned on all sides, about 10 minutes.
- Brush or spoon rosemary mixture over roast and place in oven. Roast 20 minutes. Remove from oven and place potatoes around roast, tossing in pan juices. Roast until potatoes are tender and beef is medium-rare (an instant-read thermometer inserted in thickest part of roast should read 120 degrees to 125 degrees), 30 to 35 minutes. Transfer roast to a cutting board, loosely tent with foil, and let rest 10 minutes. Toss potatoes with pan juices; tent with foil. Thinly slice meat against the grain and serve with potatoes and horseradish sauce.

ROSEMARY STEAK AND POTATOES (ON THE STOVE)

- Remove steaks from the fridge at least 30 minutes before cooking.
- Rinse potatoes and place in a bowl. Cover and microwave* for 5-7 minutes or until potatoes are tender (If you don't have a microwave, potatoes can be boiled in salted water until tender).
- While potatoes are cooking, dab steaks dry with a paper towel and generously season with steak spice.
- Preheat 1 tablespoon oil in a large skillet over medium high heat until it is very hot.
- Add steaks and cook 4 minutes without disturbing. Flip steak over and cook an additional 4-7 minutes or until steaks reach desired doneness (below).
- Remove from the skillet and place on a plate, loosely tented with foil.
- While steaks are resting, season potatoes with rosemary, garlic, salt, & pepper.
- Add oil, remaining butter, and potatoes to the pan. Allow potatoes to crisp on one side without moving, for about 4-5 minutes. Once crisp, remove potatoes and add to the plate with the steak.

- Steak: Combine rosemary, dressing, & Worcestershire sauce in a zip lock bag. Add Steaks and shake to coat.
- Let marinade at least 10 minutes.
- Place steaks in broiler.
- Broil on high for 4-7 minutes each side.
- Potatoes: Combine Rosemary, dressing, potatoes, and seasoning.
- Wrap in aluminum foil. Fold all sides and seal on top and edges of the foil. Broil 20-25 minutes until potatoes are tender, turning once during cooking.

GARLIC ROAST POTATOES
Crispy roasties are essential to any Sunday dinner. Everyone's favourite side can only be improved by roasting in goose fat, with garlic and herbs

- Peel the potatoes, leaving the smaller ones whole and cutting the larger ones so that they are all roughly the same size. Put them in a large pan of cold salted water, bring to the boil and simmer gently for about 15 mins until cooked through. Tip gently into a colander and leave to drain and cool - there's no need to shake. When they stop steaming, put them on a tray in a single layer and place in the fridge, uncovered, until ready to roast. Can be done up to two days ahead.
- Once you have put the loin in to start roasting, spoon the goose fat into a flameproof roasting tin and heat on the hob for a few mins. Turn the heat off and, one at a time, turn each potato in the fat so they are completely coated. Make sure they are in a single layer and not touching. Once the oven has been turned down to 180C/160C fan/gas 4, put the potatoes in the oven with the pork and cook for 40 mins undisturbed.
- Remove from the oven and, again, turn each potato. Return to the oven for 20 mins, then remove and repeat the turning process. The pork should have come out of the oven by now, so turn the oven up to 220C/200C fan/gas 7 and cook the potatoes for a final 20 mins. Add the rosemary and garlic 5 mins before the end. Once cooked, the potatoes should be deep golden and crunchy on the outside and fluffy in the middle. Sprinkle with sea salt and serve.

GRILLED DELMONICO STEAKS WITH GARLIC-ROSEMARY OIL
I'm not certain from where this recipe originated, but it is one of my husband's and my favorites. This past Valentine's Day, which happened to be on the day of a blustery snowstorm, he actually made this recipe on the outdoor grill. Now that's love!

- Preheat grill to medium-high heat.
- Tenderize steaks and season on both sides with salt and pepper.
- With two layers of aluminum foil cut into a square, make a sack-like shape (rounded on the bottom and pinched in the middle) and do not seal just yet.
- Place garlic, rosemary and oil in the sack and swish from side to side to combine.
- Tightly seal the sack.
- Place sack on top rack of grill (as not to be too close to the flame, which may burn the garlic).
- Grill steaks on bottom rack for 5-8 minutes on each side or until desired doneness. Close grill cover between flipping of steaks.
- Remove foil sack from grill at the same time as steaks.
- Plate steaks, open foil sack slightly and drizzle oil over steaks. If desired, spoon garlic and rosemary from sack onto steaks as well.

- Combine the garlic, rosemary, salt and pepper; set aside 4 teaspoons. Rub the remaining mixture over roast; place in a greased shallow roasting pan., In a small bowl, whisk reserved herb mixture with oil. In a shallow dish, combine the potatoes, yellow peppers and onion; add oil mixture. Toss to coat. - Prepare the beef: Dry the steaks with a paper towel and let them sit in room temperature for 20 minutes before crackling a generous amount of both salt and pepper on all sides. Rub the seasonings into the meat.
- Add corn oil or other high temperature oil to a cast iron skillet on high heat. Let this be really hot before the next step.
- Cook the steaks for about 6-8 minutes for medium-rare. Flip them every minute to get an even cook. The last 3 minutes, add in the butter, garlic and rosemary. If really thick steaks, you should also flip to the sides.
- Usin a spoon, baste (pour the butter over) the beef with the butter oil and rub the garlic on top of the steaks. Let them rest for 10 minutes before serving.
