Easy, spicy and YUMMY!!! A friend and I made these about 10 years ago and I have been making them ever since. It is one of my husband's favorite meals. Mine too!

Steps:

  • Season the Pork Chops with Seasoning.
  • Coat skillet if it is non-stick or you just want too.
  • Cook on each side until done.

4 (1 inch thick) pork chops
2 tablespoons all-purpose flour
1 tablespoon vegetable oil
1 (15 ounce) can diced tomatoes
1 green bell pepper, seeded and chopped
1 onion, chopped
1 tablespoon Worcestershire sauce
1 ¼ teaspoons salt

Steps:

  • Coat the pork chops with flour, shaking off the excess. Heat the oil in a large skillet over medium-high heat. Add pork chops and cook until browned on each side, about 5 minutes per side. Reduce heat to low and add the tomatoes, bell pepper and onion. Season with Worcestershire sauce and salt. Cover and simmer for about 1 hour, until chops are fork tender.

3 pork chops, about 1 inch thick
1 -2 tablespoon oil (I use a blend of canola and veggie)
1/2 teaspoon salt
1/2 teaspoon cayenne pepper (I have also used a cajun blend such as Tony Chachere's)
3/4 cup dry white wine
1/2 cup bell pepper, chopped
1/2 cup onion, chopped
1 clove garlic, chopped
1 1/2 tablespoons soy sauce
1/2 cup pineapple chunk (reserve some of the juice, about 1/2 cup?)

Steps:

  • Use salt and cayenne to coat chops.
  • Heat oil in a large skillet.
  • Add chops and brown slowly.
  • Add wine, bell pepper,onion and garlic.
  • Cover and simmer for 25-30 minutes.
  • Remove pork chops (keep them warm).
  • Add soy sauce and reserved pineapple juice.
  • Stir and allow to simmer for 10 minutes.
  • Add pineapple chunks and pork chops.
  • Bring to a boil, turn off heat.
  • Serve over rice.

cajun seasoning, to taste
1/2 cup rice
1 (14 ounce) can beef broth
1 teaspoon Worcestershire sauce

Steps:

  • Preheat oven to 350°.
  • Brown the pork chops, onion, bell pepper, and garlic together in small amount of oil in heavy skillet.
  • When chops are browned and vegetables are tender, place in a casserole dish with Cajun seasoning, rice, broth, and Worcestershire sauce.
  • Bake covered about 20 minutes or until rice is done and chops are tender.

I got the idea for this recipe off of Tony Chachere's website.Thanks to my holiday swap partner, Susie in Texas, who sent me crerole spices. I altered to origional recipe and this is what I came up with.

2 lbs pork roast
tony chachere creole seasoning
1 bell pepper (any color is fine)
1 clove garlic
1 onion

Steps:

  • Make slits in the top of the roast.
  • Add 1 tbsp creole seasoning to the vegetable mixture and stuff into slits.
  • Rub seasoning over the outside of the roast.
  • Place on roaster uncovered at 350F until roast is browned.
  • Reduce heat to 300F cover and continue to cook for 1 1/2 to 2 hours.

1 (3 lb) package center-cut pork chops (or the assorted will work)
garlic powder
seasoning salt (I use Tony chachere's)
1/3 cup cooking oil, to fry pork chops (of your choice )
1 (6 ounce) can tomato paste
1 (10 ounce) can tomatoes and green chilies (Ro-tel)
1 (14 1/2 ounce) can stewed tomatoes (I use Italian seasoned)
1 (8 ounce) can tomato sauce
1 cup water

Steps:

  • Wash the pork chops and season with the Garlic Powder and the season salt. Place in a heated skillet with enough of the cooking oil to fry the chops. They do not have to be fried all the way through.
  • Take them out lay them on a paper towel to cool.
  • While they are cooling, Mix all of the remaining ingredients including 2 Tbs of the drippings into a large sauce pan, turn the heat on low, and stir.
  • While that is simmering cut the pork chops up into about 1 inch cubes, drop them into the red sauce and stir. You can turn the heat up a little at this point if you want, but this needs to simmer at least 15 mins.once the last piece of meat is added to the simmering pot. Stir occasionally.
