4 Tyson Grilled and Ready Breast Fillets, thawed
8 basil, fresh leaves only
4 slices mozzarella cheese, 1/4-inch-thick
1/4 teaspoon salt
1/4 teaspoon pepper
8 slices prosciutto
1 tablespoon olive oil

Steps:

  • 1. Preheat oven to 375 degrees F. Place chicken on cutting board. Holding sharp knife horizontal to board, cut a 3-inch deep pocket lengthwise in the thick side of each breast.
  • 2. Place 2 basil leaves on each slice of mozzarella, then sprinkle with salt and pepper. Stuff each breast pocket with a cheese bundle. Wrap 2 slices prosciutto around each breast, anchoring with toothpicks.
  • 3. Heat oil in large oven-proof nonstick skillet over medium-high. Add chicken and cook about 3 minutes on each side or until browned. Transfer chicken in skillet to oven; bake 12 minutes or until done (internal temp 170 degrees F).
  • Serving Suggestion: Serve with pasta primavera and freshly grated Parmesan cheese.

I cut this recipe from Taste of Home magazine. This sounds wonderful and I plan to make it soon, will update then!! I cut the recipe in half, but could easily be doubled or tripled.

2 slices mozzarella cheese
4 fresh basil leaves
salt and pepper
4 slices prosciutto
1/2 tablespoon olive oil

Steps:

  • Place chicken on cutting board. Holding sharp knife horizontal to board, cut a 3-in.-deep pocket lengthwise in each breast. Stuff each pocket with one slice of mozzarella cheese and two basil leaves. Sprinkle chicken with salt and pepper; wrap two slices prosciutto around each chicken breast. Heat oil in a large ovenproof skillet. Add chicken and cook over medium-high heat until browned, about 3 minutes each side. Transfer chicken in skillet to oven; bake at 350 degrees for 12-15 minutes or until juices run clear.

1/2 cup minced fresh parsley
1 can (4-1/4 ounces) chopped ripe olives, drained
2 green onions, chopped
2 tablespoons finely chopped red onion
2 garlic cloves, minced
1/4 teaspoon pepper
16 thin slices prosciutto (about 10 inches x 3-1/2 inches)
32 whole chives

Steps:

  • In a small bowl, beat the cream cheese, parsley, olives, onions, garlic and pepper until blended., Cut each prosciutto slice in half widthwise; place about 2 teaspoons of filling on the center of each piece. Bring up corners of prosciutto and tie with a chive, forming a bundle. Refrigerate until serving.

48 thin asparagus spears
2 1/2 ounces soft fresh goat cheese (such as Montrachet), room temperature
2 tablespoons chopped fresh basil
1 tablespoons toasted pine nuts, chopped
1 tablespoon water
1 teaspoon grated orange peel
2 ounces thinly sliced prosciutto, cut into twenty-four 4x1-inch strips

Steps:

  • Cut stalks from asparagus, leaving 2-inch-long tips. (Reserve asparagus stalks for another use; see note in recipe introduction.) Cook asparagus tips in large pot of boiling salted water until just crisp-tender, about 1 minute. Drain. Transfer asparagus to paper towels and drain well.
  • Mix goat cheese, basil, pine nuts, water and orange peel in small bowl to blend. Season with salt and pepper. Spread scant 1 teaspoon filling over each prosciutto strip. Arrange 2 asparagus tips atop filling at 1 short end of prosciutto. Roll up prosciutto, enclosing base of asparagus. Press to seal. Place on platter. (Can be made 1 day ahead. Cover; chill.)

1 lb asparagus spear, washed and dried
5 slices prosciutto, di parma sliced paper thin
1 teaspoon olive oil
1 teaspoon lemon juice
salt and pepper

Steps:

  • Preheat oven to 375.
  • Line a baking sheet will aluminum foil and coat with cooking spray.
  • In a dish, coat asparagus with olive oil, lemon juice salt and pepper.
  • Cut each slice of prociutto in half lengthwise.
  • Gather bunches of 5 asparagus (if they are the small ones, other wise use 3 at a time) spears and wrap them in the prociutto and place on the baking sheet.
  • Bake at 375 for 15 minutes.
