TO DIE FOR CHICKEN MARSALA
A MUST HAVE for anyone that loves Italian food. This is a extremely easy recipe and it is great for dinner parties or a romantic dinner with your Honey. Try it and let me know what you think! I buy pre-sliced mushrooms and pre-made broth and it really cuts down the time you spend preping.

Steps:
- Place chicken breasts between two pieces of plastic wrap.
- With a meat tenderizing mallet, pound chicken breast until they are 1/4 inch thick.
- Dredge breasts in flour until all sides are coated.
- Heat olive oil in a large skillet or frying pan.
- Cook breasts until almost done, about 3-4 minutes on each side.
- Remove from pan being sure to keep warm.
- (I put them in a small cake pan and place in a 200 degree oven) Deglaze pan with Marsala wine, making sure to scrape bottom of pan to loosen all browned bits that may be stuck on.
- Add broth, mushrooms and garlic.
- Cook on medium/high for 10 minutes or until reduced by half.
- Add breasts back to pan and cook for another 10 minutes.
- (Sauce should have reduced more and thickened some) Serve over angel hair pasta.

CHICKEN MARSALA

Steps:
- Season the chicken tenders with salt and pepper, then dredge in the flour, shaking off excess. Heat a 12- to 14-inch nonstick pan over medium-high heat. Add the olive oil and brown each side of the chicken until golden brown, 2 minutes a side (you want to actually undercook the chicken a bit; it will finish in the pan later). Transfer the chicken to a plate.
- To the same pan, add the cremini mushrooms, butter, dried porcini and shallots and cook until deeply caramelized, about 15 minutes.
- Meanwhile, in a small bowl, whisk the gelatin and 1/4 cup of the broth together and let sit to bloom.
- Add the garlic to the pan and cook for another 20 seconds. Deglaze with the Marsala, scraping up any bits. Whisk in the remaining broth and the gelatin mixture and bring to a simmer. Simmer until slightly thickened, about 5 minutes. Season with salt and pepper.
- Nestle the browned chicken in the pan and gently simmer for 3 minutes. Top with the fresh parsley and lemon juice. Serve with warm crusty Italian bread.
TOM'S MOM'S CHICKEN MARSALA
This is my MIL's recipe for chicken marsala, it is minus the mushrooms because they never eat them, but I always add some! Every time she makes it, there's never enough for leftovers.

Steps:
- Egg and bread the chicken breasts Melt few tbsp of butter and garlic in pan; brown chicken.
- (few minutes each side) When chicken is brown, remove and place in baking dish, cover to keep warm in same pan, melt remaining butter add flour, water, bouillon, wine, pepper and parsley; whisk together.
- Bring all ingredients to a boil and stir.
- Pour mixture over chicken in baking dish bake at 375°F for 45-60 minutes depending on how much chicken you have used.
- Serve over buttered noodles.
- Enjoy!

ROASTED CHICKEN MARSALA
This recipe cooks in the oven rather than sauteeing. Basically just pop it in and let the oven do the work.

Steps:
- Preheat oven to 425.
- Place chicken in roasting pan and sprinkle with 1/2 tsp salt and 1/2 tsp Italian seasoning.
- In a separate bowl toss mushrooms, red peppers and onion with remaining salt and Italian Seasoning.
- Arrange vegetables around chicken in roasting pan.
- Pour Marsala wine into the pan.
- Roast chicken approximately 50 minutes until no longer pink inside.
- Remove chicken and vegetables from pan.
- In a bowl mix flour with 1/4 cup of water.
- Place pan juices into pot and cook over medium high heat.
- Whisk in flour mixture and cook until thickened.
- Pour over chicken and serve.
HEALTHIER CHICKEN MARSALA

- In a large resealable plastic bag, combine the flour, 1/4 teaspoon salt, 1/4 teaspoon pepper, and oregano.
- Add chicken breasts to bag and shake to coat.
- Spray a large nonstick skillet with cooking spray, cook chicken in oil over medium heat for 7 to 8 minutes on each side or until juices run clear.
- Remove and keep warm.
- In the same skillet, saute mushrooms in butter for 3 minutes or until tender.
- Stir in broth and wine. Cook for 15 to 17 minutes over medium heat or until liquid is reduced by half. Stir in lemon juice, 1/4 teaspoon salt, and 1/4 teaspoon of pepper.
- Pour over chicken breasts.
GLUTEN FREE CHICKEN MARSALA
One of my favorite dishes is Chicken Marsala, and it's one that I make pretty frequently. I often share my recipes with my sister in law, as well as a small group of friends on Facebook. My sister in law said that because of my brother's recent diagnosis of Type 2 Diabetes, she was trying to convert as many of his favorite recipes into GLUTEN FREE recipes. This is one that I make whenever I see my brothers. I've also started doing my francaise this way.

- Split each chicken breast through the middle to make 2 pieces. ( I used tenders that were on sale, and pounded them out. PERFECT portion size!) Place plastic wrap over them and pound each one flat using a meat tenderizer/mallet until they are about a quarter inch thick. Season with a good amount of salt and pepper on both sides of each piece. (I often use lemon pepper instead, also adding some to the cornstarch.) Place some flour on a plate and and dredge each piece of chicken in it. ( I use cornstarch. GLUTEN FREE and gives a nicer crisp IMO ).
- Heat the oil over medium-high heat and when the oil is hot fry each piece of chicken for 3-4 minutes on each side until they are golden brown (this may require you to do this in 2 batches). Remove chicken and place them on your serving platter covering them with foil. Delicately pat off any residual oil with paper towels.
- Reduce the heat to medium and add butter and mushrooms. Saute mushrooms for 4-5 minutes, seasoning them with salt and pepper lightly. Add marsala wine, dry white wine, cream, and chicken stock. Allow the liquid to reduce slightly; approximately 3-4 minutes. When desired consistency is obtained, pour mushrooms and sauce over finished chicken. Serve with a side salad, or if you aren't intolerant, on a 1 cup bed of your favorite whole grain pasta. Enjoy!

- Flatten chicken to 1/2-in. thickness. Place in a large resealable plastic bag; add salad dressing. Seal bag and turn to coat; refrigerate for 8 hours or overnight. , Drain and discard marinade.
