Steps:

  • Mix all ingredients well.
  • Store in an airtight container or in freezer.
  • You can also roast and grind these spices yourself first before mixing.

Arabic Seven Spice Mix is a spice blend of 7 different spices. It's used heavily in Middle-Eastern cooking specially in Lebanon and Syria. It adds fabulous Lebanese flavors to your home cooking.

3 tbsp black pepper
2 tbsp cumin
1 tbsp coriander
1/2 tbsp cardamom
1 nutmeg
1 tbsp clove
1/2 cinnamon stick

Steps:

  • Put the black pepper, cardamom, clove, coriander, cinnamon stick, nutmeg, and coriander seeds in the oven tray, and put them in the oven on medium heat (350 F) for ten minutes.
  • 2- Let the mixture of spices cool completely.
  • Break the nutmeg.
  • Place all the spices in a spice grinder and process until finely ground. if the spice grinder is not available you can use the garlic pestle to grind the grains.
  • After grinding the grains well, put them in an airtight container.
  • Arabic Seven Spice blend is ready to use.
  • Note:
  • The seven spices mixture can be used to season meat, fish, chicken, kibbe, vegetables, salads and even to prepare different types of soups with an irresistible middle eastern touch.

This is just one variation of the classic Arabian spice mix which is used in the ancient Saudi Arabian dish called Al Kabsa or Al Kabsah; a chicken and rice dish which is fragrant and lightly spiced - and is thought to originate from the nomadic Bedouin tribes. Arabic cuisine has its roots in tent cookery. Nomadic tribes could use only transportable foods such as rice and dates, or their nomadic stock like sheep and camels in their recipes. As the caravans journeyed throughout the Middle East, new seasonings and vegetables were discovered and added to the existing repertoire. Each new discovery was incorporated into the diet in quantities palatable to a particular tribe - a fact that many cooks believe is responsible for the anomalies found in some Arabic dishes today.

1 tablespoon cumin seed
