Time 20m

Yield 4 servings as a side dish

Number Of Ingredients 5

2 cups water
3 cloves garlic, smashed
2 teaspoons kosher salt, plus extra for seasoning
1 1/2 cups vegetable or canola oil
2 green plantains

Steps:

  • Combine water, garlic and salt in medium size glass bowl and set aside.
  • In a large (12-inch) saute pan, heat oil to 325 degrees F. Peel plantains and slice crosswise into 1-inch pieces. Carefully add plantains to oil and fry until golden yellow in color, about 1 to 1 1/2 minutes per side. (The oil should come halfway up the side of the plantain). With a spider or slotted spoon, remove the plantains from the pan and place them on a cookie sheet lined with parchment paper, standing them on their ends. With the back of a wide, wooden spatula, press each piece of plantain down to half its original size. Then place the plantains in the water and let soak for 1 minute. Remove and pat dry with a tea towel to remove excess water.
  • Bring oil back up to 325 degrees F and return plantains to pan and cook until golden brown, approximately 2 to 4 minutes per side. Remove to a dish lined with paper towels, and sprinkle with salt, if desired. Serve immediately.

FRIED PLANTAINS

Fried plantains are a traditional treat in many parts of the world. Try them once and you'll be hooked. Overly ripe plantains work best for this recipe.

SWEET PLANTAINS

Sweet Plantains image

Recipe courtesy Tyler Florence. This is a lovely dessert or sweet accompaniment to Arroz Con Pollo or another savory latin dish! I love to eat it with Lechon Asado and Black beans and rice; I think it offsets the garlic well.

Time 25m

Yield 4 serving(s)

Number Of Ingredients 5

2 -3 ripe black plantains
5 tablespoons unsalted butter, divided
1 teaspoon ground cinnamon
1 teaspoon natural vanilla extract
2 tablespoons brown sugar

Steps:

  • To peel the plantains, cut off ends and discard. With a paring knife, make 3 shallow slits lengthwise along the seams of the skin and peel away. Split the plantains lengthwise.
  • Heat 4 tablespoons butter in a large skillet and place over medium low heat (plantains have a high sugar content and will burn if the heat is too high.)
  • Fry the plantains in a single layer, until golden on the bottom then turn over with a spatula.
  • Add the cinnamon, vanilla, and sugar and let cook a few more seconds, just to begin caramelizing the sugar.
  • Just before serving, melt remaining tablespoon of butter to finish the sauce. Serve immediately.

  • Bahamian Boiled Fish. One of the perks to island life is the easy access to a fresh catch of the day. Travel across the island, and you’ll find boiled fish is a popular menu item commonly eaten for breakfast.
  • Conch Fritters. You can’t talk Bahamian appetizers without talking conch fritters. Conch fritters are a delicacy in the Bahamas and a must for any visitor.
  • Traditional Johnny Cakes. On a trip to Nassau, I quickly came to the realization that Johnny cakes are served everywhere. And I couldn’t be more delighted.
  • Pigeon Peas and Rice. While the name may not sound the most appetizing, this side dish is a winner! It’s full of sweet, salty, and savory flavors. Simmer pigeon peas with rice, onion, red bell pepper, corn, tomatoes, spices, and chicken stock.
