5 beefsteak tomatoes
1 cup chopped flat-leaf parsley leaves
3/4 cup Italian-style bread crumbs
1 cup grated provolone
1/4 teaspoon freshly ground black pepper
1 teaspoon butter, softened
2 tablespoons extra-virgin olive oil

Steps:

  • Preheat the oven to 375 degrees F.
  • Cut the tomatoes in half, horizontally. Use a small spoon to gently hollow out the inside of the tomatoes, discarding the seeds and reserving the pulp and being careful not to puncture the outer shell. Chop the reserved pulp and put in a medium bowl. Add the parsley, bread crumbs, cheese, and pepper and mix gently to combine. Place the tomato halves in a buttered casserole dish, and fill with the bread crumb mixture. Drizzle the top of the tomatoes with olive oil. Bake until the tops are browned, about 20 minutes.

8 medium tomatoes
1/2 pound bulk Italian sausage
3/4 cup chopped onion
2 garlic cloves, minced
1 cup chopped zucchini
2 tablespoons minced fresh basil or 2 teaspoons dried basil
1 tablespoon minced fresh oregano or 1 teaspoon dried oregano
1 tablespoon red wine vinegar
1/2 teaspoon salt
1/4 teaspoon pepper
1-1/2 cups cooked long grain rice
3/4 cup shredded provolone or part-skim mozzarella cheese
6 tablespoons shredded Parmesan cheese, divided
3 tablespoons chopped fresh parsley

Steps:

  • Cut a thin slice off the top of each tomato. Leaving a 1/2-in. thick shell, scoop out the pulp; chop pulp and set aside. Invert the tomatoes onto paper towels to drain. , Meanwhile, cook sausage, onion and garlic in a skillet until sausage is no longer pink; drain. Add tomato pulp, zucchini, basil, oregano, vinegar, salt and pepper. Simmer, uncovered, for 10 minutes. Remove from the heat. Stir in rice, provolone, 3 tablespoons Parmesan and parsley; spoon about 2/3 cup into each tomato. , Place in an ungreased 13-in. x 9-in. baking dish. Sprinkle remaining Parmesan on top. Cover and bake at 350° for 20 minutes. Uncover and bake 15 minutes more or until the tomatoes are heated through.

1 cup cooked asparagus, sliced
1 cup cooked tiny peas
1/2 cup mayonnaise or 1/2 cup salad dressing
1/2 cup sour cream
2 tablespoons finely chopped onions
2 teaspoons lemon juice
1 teaspoon Worcestershire sauce
1 dash white pepper
8 medium tomatoes

Steps:

  • Combine vegetables.
  • Stir together the mayonnaise, sour cream, onion, lemon juice, Worcestershire, and white pepper.
  • Add to vegetables; stir gently to combine.
  • Chill at least 1 hour.
  • Cut a small slice from the top of each tomato.
  • Scoop out seeds, leaving a 1/2" shell.
  • Sprinkle cups lightly with salt.
  • Invert tomatoes, cover and chill until ready to serve.
  • To serve, spoon vegetable mixture into shells.

1 cup Arborio rice (or other short-grain white rice)
6 ripe but firm large tomatoes
4 tablespoons olive oil, plus extra for drizzling
Salt and freshly ground black pepper
1 garlic clove, minced
3 tablespoons chopped fresh basil leaves
2 tablespoons chopped fresh Italian parsley leaves
1/4 cup grated Parmesan

Steps:

  • Cook the rice in a medium saucepan of boiling salted water, stirring periodically, until just cooked through, about 10 minutes. Drain. Rinse the rice under cold running water. Set the rice aside.
  • Preheat the oven to 350 degrees F.
  • Cut a 1/2-inch thick slice off the top of each tomato; reserve the tomato tops. Cut and scoop the seeds, pulp, and juice from each tomato into a small bowl. Reserve 1/4 cup of the tomato juice and pulp.
  • Oil the bottom of an 8 by 8-inch baking dish with 2 tablespoons of the olive oil. Place the hollowed tomatoes in the prepared dish.
  • Toss the rice with the reserved tomato juice and pulp. Add garlic, basil, parsley, Parmesan, the remaining 2 tablespoons of olive oil, and salt and pepper, to taste. Combine well.
  • Spoon the rice mixture into the hollowed tomatoes, mounding slightly. Sprinkle leftover stuffing on the bottom of the pan. Drizzle entire dish with olive oil. Place the reserved tomato slices atop the tomatoes. Bake until the rice is heated through, about 20 minutes. Serve hot or at room temperature.

Well, I actually discovered, when I opened the newspaper to the food section this morning, that there actually are recipes like that out there! This is a recipe from La Zucca Magica in Nice, France. Brought to us by Mark Bittman, the minimalist.

4 large tomatoes
salt & freshly ground black pepper
1 yellow pepper, minced
2 tablespoons olive oil
2 garlic cloves, minced
1/4 lb spaghetti (scant)
3 tablespoons nicoise olives, pitted and chopped
1 tablespoon capers (rinsed with warm water if salt-packed)
12 basil leaves, chopped
2 -3 marjoram leaves (or a pinch of dried) or 2 -3 oregano leaves (or a pinch of dried)
1/2 lb fresh mozzarella cheese, chopped

Steps:

  • Preheat oven to 425 degrees. Remove top third of each tomato. Scoop out some flesh and chop it, along with the top third. Salt inside of tomatoes and turn them upside down as you procede.
  • Cook yellow pepper in a tablespoon of oil with half the garlic, until soft. Break spaghetti into little bits and cook in salted boiling water just until tender. Drain and rinse in cold water.
  • Mix together the chopped tomato, cooked pepper, spaghetti and all other ingredients except mozzarella. Stuff tomatoes, first with cheese, then with tomato mixture. Put in a lightly oiled baking dish and bake for about 15 minutes, or until hot. Serve hot or warm.

3 new red potatoes
Salt and freshly ground pepper
4 large tomatoes
1 teaspoon Dijon mustard
2 tablespoons red-wine vinegar
1 tablespoon freshly squeezed lemon juice (1/2 lemon)
3 tablespoons olive oil
1 small fennel bulb, cut into 1 1/2-inch-long matchsticks, plus fronds for garnish (optional)
1 Kirby cucumber, seeded and cut into 1 1/2-inch-long matchsticks
1/2 bunch arugula (1 1/3 cups), cut into thin strips
4 red pearl onions, peeled and cut into thin rounds

Steps:

  • Place potatoes in a small saucepan; cover with salted water. Bring water to a boil, and cook potatoes until fork tender, 12 to 15 minutes. Remove pan from heat, and transfer potatoes to an ice-water bath until cool. Drain potatoes, and slice into 1 1/2-inch-long matchsticks; set aside.
  • Slice off the tops of tomatoes; discard tops. Using a melon baller, scoop out the seeds and flesh; discard. Set the tomato "bowls" aside.
  • In a small bowl, whisk together mustard, vinegar, and lemon juice. Season with salt and pepper. Slowly whisk in oil. Set vinaigrette aside.
  • In a medium bowl, combine potatoes, fennel, cucumber, arugula, and onions. Add reserved vinaigrette; toss gently to combine. Divide salad among tomato bowls, and garnish with fennel fronds.

I found this recipe on the Premio website, and it was a hit with my husband and best friend. A little to spicy for the kids, but you can always use mild sasuage.

1/2 lb hot Italian sausage or 1/2 lb mild Italian sausage, casings removed
4 large firm tomatoes
2 tablespoons butter
1 medium onion, chopped
1 clove garlic, chopped
1/2 cup seasoned bread crumbs
1 dash salt
1 pinch pepper
1/4 cup grated parmesan cheese

Steps:

  • Preheat oven to 350 Degrees.
  • Cut a slice from the top of each tomato.
  • scoop out insides of tomatoes and mash with hands.
  • In a skillet, heat butter and sauté onion, garlic and sausage meat until it is brown and crumbly.
  • Stir in tomato pulp and simmer for ten minutes.
  • Remove Sausage Mixture from pan, put into a big bowl.
  • Add bread crumbs, salt, pepper, and cheese, mixing well.
  • Add as much cheese as you would like.
  • You may not need all the tomatoe pulp either.
  • The final mixture should be kind of sticky, but easily formable.
  • Place tomato shells in a shallow baking dish and fill with sausage mixture.
  • Bake in for thirty minutes.
  • I find that the left over sausage mixture can be put in between the tomatoes, just to bake.
  • I also put grating cheese on top of the tomatoes before baking.

  • In the bowl of a food processor add the stale bread and chop until coarse bread crumbs form. Set aside.
  • In a large skillet on a medium low flame add the olive oil and anchovies. Sautee together for a couple of minutes until the anchovies melt into the oil. Stir in the garlic and cook for just 20 seconds or so until it starts releasing its flavors. Take good care not to burn it.
