A friend of mine makes these for me all the time and they are scrumptious! Make these ahead of time, and pop into the oven 15 minutes before guests arrive. The aroma will make their mouths water.

10 small ripe tomatoes
½ cup homemade or purchased pesto
1 cup grated Parmesan cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Slice tomatoes in half, and scoop out about a tablespoon of flesh from the center of each half. Fill pocket with pesto, and sprinkle generously with cheese. Place tomato halves in a well oiled baking dish.
  • Bake in preheated oven until cheese is melted and bubbly, and slightly browned. Serve warm.

1 (32 fluid ounce) container chicken broth
1 (14.5 ounce) can diced tomatoes with juice
1 (14.5 ounce) can diced tomatoes with garlic and onion
1 cup half-and-half cream
salt and pepper to taste
2 tablespoons basil pesto

Steps:

  • Pour chicken broth into a large saucepan, and bring to a boil. Boil until reduced by about 1/3.
  • Pour in both cans of the tomatoes, and return to a simmer. Pour in the half-and-half, and turn heat to low. Simmer for 15 minutes. Puree in batches in a blender, or use an immersion blender in the pan. Season with salt and pepper to taste. Ladle into bowls, and swirl in a spoonful of pesto before serving.

3/4 cup sun-dried tomatoes
boiling water
4 cloves garlic (or more if you're a big garlic fan)
1 tbsp fresh parsley
1/4 cup Parmesan cheese (grated)
2 tbsp walnuts
1/4 tsp salt
1/8 tsp ground black pepper
2 tbsp olive oil
1/2 tsp balsamic vinegar (optional)
saucepan
blender or food processor

Steps:

  • Boil water in a saucepan
  • Soak tomatoes in boiling water until soft, about 10 minutes.
  • Drain but reserve the liquid.
  • Place tomatoes and remaining ingredients in blender or food processor and process until well mixed. If too thick, add a little of the liquid you reserved above.
  • Serve with your pasta or chicken recipes or as a spread on crostini (recipe coming next). Goes well with basil on any of these dishes or appetizers.

CREAMY PESTO CHICKEN WITH ROASTED TOMATOES

4 boneless, skinless chicken breasts
3 tbsp Homemade pesto (see the recipe in tip section below)
85g mascarpone
4 tbsp olive oil
100g breadcrumb, preferably from day-old bread
175g baby tomatoes, on the vine
handful pine nuts
handful basil leaves

Steps:

  • Heat oven to 200C/fan 180C/gas 6. Use a small sharp knife to make a slit along the side of each chicken breast to form a pocket. Mix together the pesto and mascarpone, then carefully spoon a quarter of the mixture into each chicken breast and smooth over the opening to seal.
  • Brush a little oil, about 1 tsp, all over each chicken breast and season well. Tip the breadcrumbs onto a large plate and season. Place each breast on the plate and press all over with the breadcrumbs. Place in a lightly oiled shallow baking dish along with the tomatoes (kept together on the vine in a couple of bunches). Drizzle over the remaining oil.
  • Cook in the oven for 20-25 mins until the chicken starts to turn golden and is cooked through. Scatter over the pine nuts and cook for 2 mins more. Sprinkle with basil leaves and serve with new potatoes or crusty bread.

8-10 medium sized ripe tomatoes ((4 cups chopped))
1/2-1 clove of garlic
1-2 2 slices raw onion ((if you have trouble eating raw onions try chives or green onions))
5-6 fresh basil leaves
1 teaspoon oregano
1 teaspoon basil dried
1/2 teaspoon salt
2 tablespoons olive oil
dash of hot pepper flakes if desired ((I added 2 dashes and it was perfect))
2-3 tablespoons freshly grated parmesan cheese
3 cups cooked pasta

Steps:

  • Using either a blender, bullet or a food processor (I used a bullet only because that was what was available and it worked great) add all ingredients (you may have to add half the ingredients if there is not enough room in your machine) except the parmesan cheese.
  • Blend until everything comes together, or until it reaches the desired texture (I left it a little on the chunky side, not creamy creamy). Makes approximately 1 3/4 cups enough for 2 meals of 3 cups of cooked pasta. Top with freshly grated parmesan cheese. Enjoy!

1/2 pound bacon strips, diced
1 small onion, chopped
2 tablespoons all-purpose flour
1/8 teaspoon salt
Pinch pepper
1 can (14-1/2 ounces) diced tomatoes, undrained

8 hot biscuits, split

Steps:

  • In a large skillet, cook bacon over medium heat until crisp, stirring occasionally. Remove with a slotted spoon; drain on paper towels. Discard drippings, reserving 2 tablespoons in pan. Add onion to drippings; cook and stir over medium-high heat until tender, 3-5 minutes. Stir in flour, salt and pepper until blended; cook and stir over low heat until mixture is golden brown (do not burn). Gradually whisk in tomato juice. Stir in tomatoes. Chef Note: This is a great sauce for pasta salad because it's delicious at room temperature. You could also slather it on bruschetta, grilled fish or chicken. Or make a brunch dish by topping a thick slice of toast with proscuitto, a poached egg and a little of this summer pesto. In summer, when you can get your hands on vine-ripe tomatoes, you don't even need to peel them. To intensify the flavor, you can add a few oven-dried tomatoes. The pesto keeps several days in a tightly sealed container in the refrigerator.

I love pesto & found this recipe in Australian Good Taste, it is recommended to serve with roast turkey but I served it with an Italian basted roast lamb & it was still delicious.

pan juices, reserved from roast
2 1/2 tablespoons plain flour
250 ml dry white wine
375 ml chicken stock
3 teaspoons sun-dried tomato pesto
salt & freshly ground black pepper

Steps:

  • Strain the pan juices into a large heatproof jug. Use a metal spoon to skim as much fat as possible from the surface.
  • Place the roasting pan (used to roast your meat) over medium heat. Add the flour and use a fork to stir for 2-3 minutes or until the mixture bubbles. Gradually add 125ml (1/2 cup) of the wine and cook, scraping the pan with the back of the fork to dissolve any bits that have cooked onto the base, until the mixture returns to the boil.
  • Gradually add remaining wine, pan juices and stock to the pan, stirring with a wooden spoon until smooth. Boil gently for 10 minutes or until the mixture has the consistency of thin cream. Stir in pesto. Taste and season with salt and pepper. Pour into a warmed jug and serve immediately.

Kosher salt and black pepper
2 garlic cloves (minced)
Extra virgin olive oil
1 lb thin spaghetti
1 cup basil pesto (I used this homemade pesto recipe)
6 oz fresh baby mozzarella
Fresh basil (for garnish)

Steps:

  • Heat the oven to 450 degrees F and arrange a rack in the middle.
  • In a larger bowl, toss the tomatoes with kosher salt, black pepper, garlic and extra virgin olive oil. Transfer to a sheet-pan and bake in heated oven 25 to 35 minutes or just until the tomatoes collapse and develop some char (if you don't want them too soft, take the tomatoes out earlier). When ready, remove from the oven. (See notes)
  • While the tomatoes are roasting, cook the spaghetti in boiling water according to the package to al dente (about 10 minutes). Reserve ½ cup of the pasta cooking water. Drain the pasta.
  • Transfer the cooked spaghetti to a large bowl (same bowl used earlier for the tomatoes). Add the pesto and toss to coat. If you need to, add a little bit of the pasta cooking water to help mix it evenly. Taste, and if needed, add a bit of kosher salt and black pepper to season.
  • Add the roasted tomatoes and mozzarella to the bowl of pasta. Toss to combine. Serve warm. Garnish with fresh basil, if you like.

x cans chopped tomatoes
2 tsp sugar
190g jar basil pesto
few capers or olives (optional)
140g white bread - stale or fresh, whizzed into crumbs (or 140g/5oz breadcrumbs)
50g pine nuts , roughly chopped
4 tbsp grated parmesan , or vegetarian alternative (optional)
25g butter
350g/12oz-400g/14oz linguine , spaghetti, tagliatelle or whatever you have in the cupboard

Steps:

  • Gently cook the onion and half the garlic in 2 tbsp olive oil for 10 mins until soft. Stir in the tomatoes and sugar and simmer for 15-20 mins until saucy. Stir in half the pesto, some seasoning and a few capers or olives, if you have them. Cover and keep warm.
  • While the sauce is simmering, heat oven to 220C/200C fan/gas 7. Toss the crumbs in a large baking tray with the remaining 2 tbsp olive oil, the rest of the garlic, the pine nuts and Parmesan, if Simple yet special storecupboard supper using. 1 -2 leftover pork spareribs
1/4 cup extra virgin olive oil
2 large onions, chopped
4 garlic cloves, crushed
1 lb italian sweet sausage
2 (28 ounce) cans crushed tomatoes
2 teaspoons dried oregano
2 tablespoons sugar
1/2 cup parmesan cheese
4 tablespoons dried parsley flakes
2 bay leaves
2 tablespoons dried basil
1 (4 ounce) can tomato paste
1/2 cup red wine (Lambrusco)

Steps:

  • In a large dutch oven, saute the onions in the oil until tender. Add the garlic and saute about 30 seconds, stirring often. Take pot off burner so garlic won't cook further. Add in oregano, parsley, bay leaves, basil, and tomato paste. Put the pot back on the burner. Mix ingredients well and stir constantly for about 1-2 minutes. Add tomatoes, sugar, spareribs, Parmesan, and wine. Stir well and take it back off the burner.
  • Poke several holes in each of the Italian sausages. Cook the sausages in microwave until they are halfway done. Take out of microwave and discard grease. Cut each sausage in half. Drop the sausages into the pot of tomato gravy. Stir a little.
  • Put the pot back on the burner. (**Add the braciole if you made them.) Cook slowly with a lid partly on for 1 1/2 hours. Check it often. Stir as needed. You may add a little water if it gets too thick for your taste.
  • (You may also add meatballs if you made them.).

1 lb pork sausage, sliced into patties
3 tablespoons flour
1 cup milk
1 (14 ounce) can Rotel tomatoes & chilies, drained

Steps:

  • Cook sausage patties in a black cast iron skillet till done, obviously. Then remove the sausage and put it on some paper towels to blot up some of the grease.
  • Drain grease from pan leaving only enough to coat the bottom (about 2 tablespoons), add a handful of flour (3 tablespoons will do) to the grease and cook it, stirring ALL the time, till it turns brown.
  • Add the milk to the browned flour and stir till all the lumps are gone and it's thick. Add the drained Ro-Tel tomatoes and stir till it's the consistency that you like. (add more milk if it's too thick).
  • Crumble up the sausage and add back to the gravy then spoon it over hot biscuits.
  • Then turn around and slap the person next to you on account of it's so good you just have to slap somebody!

  • In cast iron skillet, cook 8-10 slices of bacon until cripsy.
  • Drain bacon and pour off all but 4-5 tablespoons of bacon drippings.
  • Crumble bacon and set aside.
  • In the same skillet with bacon drippings, add diced tomatoes.
  • Then add crumbled bacon pieces.
  • Stir all together and add salt and pepper to taste.

1/2 cup cooking oil (I prefer olive oil)
1/2 cup flour
salt and pepper
1 teaspoon sugar

  • Peel and chop tomatoes, set aside.
  • Heat large heavy skillet, I prefer an iron skillet.
  • Pour in oil.
  • Add flour to oil and lightly brown flour, stirring constantly.
  • Add tomatoes, salt, pepper, sugar and water.

  • PIE DOUGH Place flour, salt, pepper, and parmesan into a large bowl. Cut butter into chunks, and add to the flour. Toss lightly to coat. Working quickly, using a pastry blender or your fingers, cut the butter into the flour mixture until there are only large pea-sized chunks left. You want a few lumps of butter remaining to keep the pastry nice and tender. Combine ice, water and cider vinegar in a bowl. Sprinkle a few tablespoons of the ice water into the flour and butter mixture, and using a stiff spatula or your hands, mix in well. Continue adding water a tablespoon at a time ( I normally need about 8-10 tbsp) until you have a dough that holds together well, but is not too wet. Squeeze together with your fingertips to make a homogenous dough. Shape one into a disc and one into a rectangle, and wrap in plastic wrap. Rest in the fridge for at least two hours, or preferably overnight. (See notes for rolling out dough during resting period)
  • MUSHROOM FILLING Heat a glug of oil in a large frying pan or skillet over medium high heat. Add about a third of the mushrooms, and cook, stirring occasionally, until golden brown. Remove and transfer to a bowl. Season with salt and pepper. Repeat the process in two more batches with the remaining mushrooms until all are cooked. Lower the heat to medium and add the butter. Add the onion and garlic, and cook, stirring frequently, until the onion is translucent. Add the flour and stir to incorporate, then add the stock, cream, and soy sauce, and cook over medium heat, stirring often, until the sauce has thickened. Remove from the heat and add in the Filippo Berio Sundried Tomato Pesto and thyme. Add the cooked mushrooms and stir to incorporate and to ensure the mushrooms are covered in the sauce. The filling will seem thick. Taste and adjust for seasoning if needed. Transfer to a container allow to cool to room temperature. This filling can be made up to a few days ahead and stored in an
  • ASSEMBLY On a lightly floured surface, roll the disc into a circle slightly larger than your pie dish. You want it to be approximately ⅛ inch (3mm) in thickness. Line a 9 inch pie dish, leaving the extra dough overhanging. Trim the dough so there is about 1 inch overlapping the edge of your dish. Place in the fridge while you prepare the lattice. Roll out the second piece of dough (the rectangle) into a rough rectangle approximately ⅛ inch thick. Use a pastry cutter to cut strips for your lattice. Add the cooled filling to the lined pie dish, spreading down slightly with a spoon or spatula. Lattice the top (I did a very simple pattern and laid the strips down), and either cut the lattice flush with the edge of the pie, or fold the edges over and crimp as desired.
  • Rest the pie in the fridge for at least 30 minutes. While the pie is resting in the fridge, preheat the oven to 425°f/ 220°c. Place a baking tray on the bottom rack of the oven. Brush the pie with egg wash. Bake at 425˚f / 220˚c for 20 minutes, or until the pastry is set and beginning to go golden. Reduce the temperature 375°f / 190°c, and bake until the pastry is deeply golden and the filling is bubbling, 40 to 50 minutes. Remove from the oven and cool on a wire rack. Store leftovers in an airtight container in the fridge, and re-warm in the oven before serving.

This is the pesto I made to go on my Sun-dried Tomato Pesto Sandwich and man was it good. I was a bit skeptical of the garlic roasting step because I didn’t think it’d make much difference.
