OVEN HASH BROWNS
These homemade hash browns are baked in the oven until they're perfectly crispy! It's an easy hands-off method that tastes incredible.

Steps:
- Preheat an oven to 450 degrees Fahrenheit.
- Wash the potatoes, leaving the skins on. Use the large side of a box grater or a food processor large grating blade to grate the potatoes. Place the grated potatoes into a large bowl and fill it with cold water. Tip the bowl to drain off starchy water, then fill it again. Stir the potatoes to release starches, then soak them for 2 minutes.
- Drain the grated potatoes into a strainer, and squeeze fistfulls to remove as much liquid as possible. Place the potatoes in a bowl and stir with the olive oil, kosher salt, garlic powder and ground black pepper.
- Line a baking sheet with parchment paper or brush it with olive oil. Add potatoes in single layer. Cook for 25 to 30 minutes without stirring until browned and crispy on the bottom and cooked through (the exact timing depends on your oven). Scoop off of the sheet with a spatula and serve.

- Cook the potatoes in a saucepan of boiling water for 10 mins then drain and set aside until cool enough to handle.
- Coarsely grate the potatoes into a bowl discarding any skin that comes off in your hand as you grate. Season well with salt and pepper and pour over half the butter. Mix well then divide the mix into 8 and shape into patties or squares. The hash browns can be prepared a day ahead and chilled until ready to cook or frozen for up to a month.
- To cook, heat the oil and the remaining butter in a frying pan until sizzling and gently fry the hash browns, in batches if needed, for 4-5 mins on each side until crisp and golden. Serve straight away or leave in a low oven to keep warm.

BAKED POTATO HASH BROWNS

- Preheat oven to 425 degrees F.
- Peel potatoes and wash. Use a mandolin, or food processor with the grater attachment, to finely shred potatoes. Place in a kitchen towel and squeeze dry.
- Take a 9-inch oven proof skillet and add bacon and sliced shallots. Set over medium heat and render fat, 4 to 5 minutes. Shallots will caramelize. Using a slotted spoon, remove the bacon and shallots and put in a large mixing bowl (reserve the bacon fat and pan) with potato slices, egg white, green onions, and thyme leaves and season well with salt and pepper. Toss to combine. Spoon mixture into the hot pan with the bacon fat. Pack it in well pressing down with a large spoon to compress the mixture a little. Drizzle the top with some extra-virgin olive oil and season with salt and pepper. When it starts to get golden brown and crispy around the edges flip the hash brown over and pop into the oven to bake for 15 minutes. Remove from oven and allow to cool slightly before running a knife around the edges and then inverting the potato onto a cutting board. Slice into wedges, garnish with chopped flat leaf parsley and serve.
HEALTHY OVEN HASH BROWNS
These are the best hashbrowns I've ever had and it's hard to believe they are healthy and vegan! Nice and creamy. It's a great recipe to make ahead of time. It's easy to make in bulk and freeze for future use. These potatoes can also be made into patties before baking. Just form into patties on a cookie sheet instead of spreading them out, and bake the same. Remove from the oven when patties are golden brown on the bottom. May use purchased frozen potatoes, but make sure they are free of unhealthy hydrogenated oils. If you make them from home-cooked potatoes, it works best if potatoes are slightly undercooked. Cooking time doesn't count shreading and pre-cooking hashbrowns if using fresh potatoes. Recipe came from 7 Secrets Cookbook to lose weight, lower cholesterol, and reverse diabetes.

- Blend cashews and water or coconut milk with seasonings for at least 1 minute until smooth.
- Pour over potatoes and add the diced onion. Mix well with hands to coat all the potatoes. May freeze some of the uncooked mix for future use.

- Preheat a waffle iron to medium-high heat. Preheat the oven to 200 degrees F. Peel the potatoes, then shred on a box grater. Squeeze out the excess liquid into a bowl and reserve.
- Combine the shredded potatoes, butter, chives, 2 teaspoons of the potato liquid, 1/2 teaspoon salt and a few grinds of pepper.
- Lightly brush the top and bottom of the waffle iron with melted butter. Pour a scant 1/2 cup of the potato batter into the waffle iron, close gently and cook until golden and crisp, 4 to 8 minutes. - Peel potatoes and cut into small cubes of equal sizes (1/2 inch or less). Place in a pot, cover with about 2 inches of water, add salt, and cook on medium-high heat for 5 minutes, or until just tender enough to be easily pricked with a fork, but not so soft they crumble. Drain well in a colander.
