Frittatas are the ultimate convenience food. Served hot or cold, they're good for breakfast, lunch, or dinner. You can also interchange or add many other ingredients.

8 ounces ground Italian sausage
oil
1/2 cup onion, chopped
1 (10 ounce) package frozen chopped spinach, thawed, well drained
1 (16 ounce) can diced tomatoes, drained
salt and pepper
12 eggs
1/2 cup heavy cream
1 teaspoon kosher salt
1 cup Fontina cheese, shredded

Steps:

  • Preheat the oven to 450°F.
  • Saute sausage in oil in a 10"nonstick ovenproof skillet over medium-high heat until nearly cooked through, about 3 minutes.
  • Add onion and cook 2 more minutes, or until onion is softened.
  • Stir in spinach, tomatoes, salt and pepper. Cook 1-2 minutes.
  • Remove and set aside.
  • Wipe out skillet and coat generously with nonstick spray.
  • Combine eggs, cream, and salt in a blender until frothy.
  • Pour egg mixture into the hot saute pan and cook over medium heat just until curds form, stirring constantly.
  • Stir in sausage mixture and cheese, transfer pan to oven, and bake 15-20 minutes, or until set in the center.
  • To unmold frittata, place a large plate, serving side down, over the pan and carefully flip the pan and plate over simultaneously to release. Place another plate on the frittata, invert again, and slice into wedges.

6 large eggs
2 tablespoons whipping cream
1/2 teaspoon salt, plus a pinch
1/4 teaspoon fresh ground black pepper
1 tablespoon olive oil
1 tablespoon butter
12 ounces asparagus, trimmed,cut into 1/4 to 1/2 inch pieces
1 tomatoes, seeded,diced
salt
3 ounces fontina, diced

Steps:

  • Preheat the broiler.
  • Whisk the eggs, cream, 1/2 teaspoon salt, and pepper in a medium bowl to blend.
  • Set aside.
  • Heat the oil and butter in a 9 1/2-inch-diameter nonstick ovenproof skillet over medium heat.
  • Add the asparagus and saute until crisp-tender, about 2 minutes.
  • Raise the heat to medium-high.
  • Add the tomato and a pinch of salt and saute 2 minutes longer.
  • Pour the egg mixture over the asparagus mixture and cook for a few minutes until the eggs start to set.
  • Sprinkle with cheese.
  • Reduce heat to medium-low and cook until the frittata is almost set but the top is still runny, about 2 minutes.
  • Place the skillet under the broiler.
  • Broil until the top is set and golden brown on top, about 5 minutes.
  • Let the frittata stand 2 minutes.
  • Using a rubber spatula, loosen the frittata from skillet and slide the frittata onto a plate.

TOMATO-FONTINA TORTE WITH ROSEMARY CRUST

2 cups all-purpose flour, plus more for dusting
2 tablespoons sugar
2 teaspoons chopped fresh rosemary
Kosher salt and freshly ground pepper
1 1/2 sticks (12 tablespoons) cold unsalted butter, cut into small pieces
2 large eggs, plus 1 egg yolk
2 1/2 to 3 pounds assorted heirloom tomatoes
3 cups shredded fontina cheese (about 12 ounces)
1/2 cup grated pecorino romano or parmesan cheese
(about 1 ounce)
1/4 cup panko breadcrumbs
1/3 pound thinly sliced capicola ham, cut into strips
2 teaspoons extra-virgin olive oil

Steps:

  • Combine the flour, sugar, 1 teaspoon rosemary, 1/4 teaspoon salt and 1/2 teaspoon pepper in a food processor and pulse until just combined. Add the butter and pulse until the mixture looks like coarse meal.
  • Whisk the eggs and egg yolk in a small bowl. With the motor running, add the eggs to the food processor and process until the dough just gathers into a ball. Turn out onto a lightly floured surface and gently knead until soft and pliable. Press the dough into the bottom and about halfway up the side of a 9-inch springform pan. Cover and refrigerate the crust until very cold, at least 1 hour or overnight.
  • Slice the tomatoes and spread them out on 2 baking sheets in a single layer. Sprinkle lightly with salt and set aside until they release some of their juices, about 30 minutes. Meanwhile, combine the fontina and all but 1 tablespoon of the pecorino in a bowl; add the remaining 1 teaspoon rosemary.
  • Preheat the oven to 400 degrees F. Pat the tomatoes gently with paper towels to absorb the excess moisture. Sprinkle 1 tablespoon panko in the crust, then top with one-third of the tomatoes. Scatter half of the ham over the tomatoes, then half of the cheese mixture. Repeat with the remaining 3 tablespoons panko, another one-third of the tomatoes and the remaining ham and cheese. Top with a final layer of tomatoes and sprinkle with the reserved 1 tablespoon pecorino; drizzle with the olive oil.
  • Transfer the pan to a baking sheet and bake until the crust is golden and the cheese is melted, about 35 minutes. Transfer to a rack and let cool about 1 hour, then remove the springform ring.

2 ounces pancetta, medium diced
1 tablespoon olive oil
7 tablespoons unsalted butter, divided
2 cups Yukon Gold potatoes, 1/2-inch-diced (4 potatoes)
8 extra-large eggs
15 ounces ricotta cheese
3/4 pound Gruyere cheese, grated
1/2 cup whole milk
1/3 cup all-purpose flour
3/4 teaspoon baking powder
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
6 fresh basil leaves, julienned

Steps:

  • Preheat the oven to 350 degrees F.
  • In a medium (10-inch) oven-proof omelet pan over medium-low heat, cook the pancetta in the olive oil for 5 to 10 minutes, until browned. Remove the pancetta from the pan with a slotted spoon and set aside.
  • Melt 2 tablespoons of the butter in the pan (don't wipe it out). Add the potatoes and fry them for 6 to 8 minutes, until cooked through and lightly browned, turning occasionally. Melt the remaining 5 tablespoons of butter in a small dish in the microwave.
  • Meanwhile, whisk the eggs in a large bowl, then stir in the ricotta, Gruyere, melted butter, and milk. Combine the flour, baking powder, salt and pepper and stir into the egg mixture. Add the basil.
  • Put the pancetta back into the pan with the potatoes and pour in the egg mixture. Place the pan in the center of the oven and bake for 50-55 minutes, until the frittata is browned and puffed and a knife inserted in the middle comes out clean. Serve hot.

1 pound penne, or other short pasta
1/4 cup olive oil
2 cloves garlic, thinly sliced
2/3 pound (2 cups) cherry tomatoes, halved or quartered
1 teaspoon dried oregano
1/4 teaspoon crushed red pepper (optional)
1/4 cup Kalamata olives, pitted and sliced
1/4 cup chopped fresh parsley
1/4 cup grated Parmesan cheese, plus more for serving

Steps:

  • In a large pot of boiling salted water, cook penne according to package instructions until al dente, about 13 minutes. Drain.
  • Meanwhile, in a large skillet, heat olive oil over medium heat. Add garlic, and cook, stirring, until just golden, about 1 minute. Add cherry tomatoes, oregano, crushed red pepper, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Reduce heat to low, and cook, stirring, until tomato juices run, about 3 minutes.
  • Add penne, olives, parsley, and 1/4 cup Parmesan to the skillet and toss to combine. Serve with more cheese if desired.

1 (16 ounce) package rotini pasta
2 tablespoons olive oil
1 small onion, chopped
1 jalapeno pepper, chopped
½ medium green bell pepper, chopped
1 (28 ounce) can diced tomatoes
½ cup red wine
20 kalamata olives, pitted and chopped
⅔ cup crumbled feta cheese
⅔ cup shredded reduced-fat Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Bring a large pot of lightly salted water to a boil. Add pasta, cook for 8 to 10 minutes, until al dente, and drain.
  • Heat oil in a large heavy skillet over medium heat. Saute onion, jalapeno, and green bell pepper until onions are soft and translucent. Stir in tomatoes, wine, and kalamata olives. Simmer 15 minutes. Toss pasta with sauce until evenly coated. Pour into a 9x13 inch baking dish. Sprinkle with feta cheese and Cheddar cheese.
  • Bake 5 minutes in the preheated oven. Set oven to broiler setting. Broil for 5 minutes, or until topping is golden brown and bubbly.
