¼ cup olive oil
¼ cup balsamic vinegar
¼ teaspoon salt
⅛ teaspoon ground black pepper
¼ cup minced fresh basil

Steps:

  • Place tomato slices, alternating with mozzarella slices, on a large serving platter.
  • Combine oil, balsamic vinegar, salt, and pepper in a jar with a tight-fitting lid; shake well. Drizzle over tomatoes and mozzarella; sprinkle with basil.

2 ounces fresh mozzarella cheese, cut into 3/4-inch cubes
1/2 cup halved cherry tomatoes
2 teaspoons chopped onion
1 tablespoon minced fresh basil
1 tablespoon olive oil
1-1/2 teaspoons balsamic vinegar
1/2 teaspoon sugar
1/8 teaspoon salt

Steps:

  • In a small bowl, combine the cheese, tomatoes and onion. In another small bowl, combine the remaining ingredients. Drizzle over salad; toss to coat. Let stand at least 15 minutes. Stir just before serving.

1/2 lb fresh mozzarella cheese (if all you can find is the tub, make sure to pat it real dry)
1/2 cup torn basil leaves
3 tablespoons olive oil
4 teaspoons balsamic vinegar
kosher salt or sea salt, to taste

Steps:

  • Cut up the tomatoes and mozzarella into large cubes.
  • Add basil leaves and drizzle w/ vinegar and olive oil.
  • Stir lightly.
  • Sprinkle with a little salt.
  • Chill at least one hour.
  • Store in refrigerator.

Enjoy this super-quick tomato and mozzarella salad as a side dish, or add some sliced avocado for a filling lunch. Top with basil leaves and crushed crostini for extra flavour and texture

200g mixed heritage tomatoes , sliced
1 large shallot , sliced into thin rings
5 tbsp olive oil
3 drops of Tabasco
1 tbsp white wine vinegar (muscatel is good)
6 basil leaves , shredded, plus extra small leaves to serve
4 shop-bought crostini , roughly crushed
1 ball buffalo mozzarella , or burrata if you can find it (about 150g), halved

Steps:

  • Put the tomatoes in a bowl with the shallots and season with a large pinch of salt. Leave for 10 mins for the tomatoes to release their juices.
  • Lift the tomatoes and shallots out of the bowl using a slotted spoon, and reserve the juices. Arrange the tomatoes over two plates, then sprinkle over the shallots.
  • Whisk the olive oil, Tabasco and vinegar into the reserved tomato juices to make a dressing. Drizzle over the tomatoes and shallots, then scatter with the shredded basil and crushed crostini. Put one half of the mozzarella in the centre of each plate, and season with freshly ground black pepper. Top with the extra basil leaves, and serve.

4 medium heirloom tomatoes, wedged (I like mixing green, deep purple, yellow and orange)
6 ounces fresh mozzarella cheese, either in bite size balls (Bocconcini)
4 ounces kalamata olives, pitted and chopped
12 leaves fresh basil, torn
2 tablespoons extra virgin olive oil
1 tablespoon red wine vinegar
1 tablespoon balsamic vinegar
sea salt
cracked pepper

Steps:

  • In a wooden salad bowl toss all ingredients together.
  • Season with salt and pepper according to taste.
  • Serve immediately.

Avocado & Mozzarella Salad With Sun-Dried Tomato Dressing image

This makes a refreshing meal, served with a loaf of crusty french bread and good bottle of red wine; could also be used as a first course, in reduced quantities. I recommend using the finger-tip sized fresh mozzarella balls if you can find them. Which salad greens you use are up to you, but a combination half dark green leaf/half alfalfa sprouts seems to work particularly well, and is also quite attractive. I'd never eaten alfalfa sprouts before trying this recipe but was a quick convert to their clean, spicy flavor.

2 tablespoons chopped sun-dried tomatoes packed in oil, drained first
1 garlic clove, minced
1/8 teaspoon salt
1 1/2 tablespoons balsamic vinegar
2 tablespoons extra virgin olive oil (the good stuff)
1 tablespoon water
1 tablespoon minced fresh basil or 1/2 teaspoon dried basil
1 ripe avocado, halved, pitted, peeled and sliced
2 teaspoons fresh lemon juice
1/4 lb fresh mozzarella cheese, in 1 inch cubes, or the finger-tip sized balls
4 cups salad greens, washed
2 tablespoons fresh grated parmesan cheese

Steps:

  • Combine the first 7 ingredients in a small jar.
  • Put the lid on, and shake well to emulsify.
  • In a bowl, combine the avocado slices, lemon juice, and mozzarella.
  • Add the dressing to the avocado/cheese combination, and toss to coat all pieces well.
  • Place the salad greens on two plates, putting alfalfa sprouts on top (if using).
  • Arrange the avocado and mozzarella on top of greens, and top each with a tablespon of the parmesan.
