- Heat up your olive oil in a non-stick pan.
- Crush the garlic and fry in the oil for around 40 seconds.
- Add a tin of chopped tomatoes.
- Cook the tomatoes and garlic until it begins to bubble.
- Add the Mascapone cheese and the chopped herbs.
- Stir through until hot again.
- Serve with pasta.

Steps:
- Heat oven to 200C/180C fan/ gas 6. Place the tomatoes, cut-side up, in a roasting dish and drizzle with the vinegar, oregano and some seasoning. Roast for 1 hr until soft.
- Heat the oil in a saucepan, then cook the onion for 5 mins until soft. Add the garlic and cook for 1 min more. When the tomatoes are ready, tip into the pan with the stock. Simmer for 5 mins, then add the mascarpone. Remove from the heat and blitz with a hand blender until smooth.
- Meanwhile, cook the pasta following pack instructions, drain and set aside in a colander. Heat grill to High. Season the sauce and stir in the basil and pasta. Mix, then tip into an ovenproof dish and cover with the cheese. Grill for a few mins until golden and bubbling.

- Preheat the oven to 350 °F (180 °C)
- Grease an oven dish with oil
- Bring a pan of water to the boil and shake the macaroni in it. Cook it according to the instructions on the package until it is al dente.
- Drain in a colander.
- Pour some oil into the skillet and fry the onion until they're glassy.
- Add the ground beef and brown it.
- Add the tomato puree and fry for 2 minutes until it no longer smells sour.
- Now put the vegetables in the pan and bake everything while you keep stirring, about 5 minutes.
- Pour the passata, the mascarpone, and the sugar into the pan and stir well.
- Also, add half of the grated cheese, mix everything well and let it simmer for 5 minutes.
- Taste and season with salt, pepper, and Italian herbs.
- Turn off the heat and mix the macaroni with the vegetable beef sauce.
- Put everything in the baking dish.
- Sprinkle the rest of the grated cheese over the oven dish.
- Place the casserole in the oven for 15 minutes so that the cheese melts. Optional: Garnish with fresh basil

- Pour a good glug of olive oil into a large saucepan on a medium high heat. Add the chopped onion and cook until soft and translucent. Add the garlic, salt and pepper and cook for just one more minute.
- Add the chopped tomatoes, basil and oregano to the pan and simmer on a lower heat for around 30 minutes, or until the sauce has thickened nicely.
- Add both cheeses and stir well until melted. Season to taste.
- If a smooth sauce is required, now pour the sauce into a food processor or blender and pulse until the desired consistency is achieved.

- Chop the bacon up and brown/crisp it in a saucepan with olive oil. Once crisp, deglaze pan with balsamic vinegar and stir all together and salt and pepper to taste. Add tomatoes and garlic powder and cover pot, simmering over low heat and stirring occasionally for 30 minutes.

- Heat the olive oil in a non-stick skillet, over a medium heat.
- Add the garlic and cook for 1 minute.
- Add the cherry tomatoes, onion and salt. Stir frequently. This mixture will need to cook for about 25 minutes until the sauce has developed.
- When the tomatoes soften and the skins start to burst, press on them to release the juices inside. Once the majority of the skins have burst, it does not need stirring more than once every 5 minutes.
- Cook the pasta according to the directions on the package, so it will be ready in time for the sauce.
- After about 25 minutes, the tomatoes should all have split and the juices should have created a sauce. Stir in the mascarpone cheese until melted and blended in.
- If desired, use a blender or hand-blender to puree the sauce, otherwise it can be left chunky.
- Add the parmesan cheese and basil leaves to the sauce, stir and serve on top of the pasta or mixed together with the pasta.

- Boil water and cook linguini to package directions.
- Dry scallops very well with a paper towel. Season with salt and pepper. In a large skillet, drizzle with olive oil and saute scallops until just opaque, about 2 minutes.Remove scallops to a plate.

- Put the tagliatelle in a large pot of salted boiling water and cook according to package instructions.
- While the pasta is cooking heat the olive oil in a large frying pan, then add finely diced onion and cook for 5 minutes over low heat, then add minced garlic and stir briefly, deglaze the pan with the white wine and let it simmer for 5 minutes until the wine is reduced.
