1 can tomato soup (Family Size)
2 (15 ounce) cans dark red kidney beans
1 small onion
2 teaspoons chili powder
salt and pepper

Steps:

  • Brown onion and ground beef in large stock pot.
  • Add the seasonings and bring to a boil.
  • Reduce heat and simmer.
  • I like to simmer this for at least an hour, then taste test.
  • The trick is to let it simmer to mix the flavors.

35 fresh tomatoes, peeled, seeded and chopped
3 fresh hot chile peppers, seeded and chopped
4 red bell peppers, cored, seeded and cut into 2-inch pieces
1 large onion, chopped
2 cups apple cider vinegar
⅓ cup fresh lime juice, or amount to taste
1 cup white sugar
1 cup packed brown sugar
1 tablespoon salt, or amount to taste

Steps:

  • Place the tomatoes in a large pot over medium heat, and simmer 1 hour. Skim off any excess liquid or foam. Stir in the chile peppers, bell peppers, onion, vinegar, lime juice, white sugar, brown sugar, and desired amount of salt. Reduce heat to low, and simmer 3 to 5 hours until liquid reduces and thickens. Adjust seasonings to taste.
  • Remove chili sauce from heat, and skim off any foam. Pour into hot, sterilized jars, leaving 1/4 inch headroom. Adjust lids. Process for 10 minutes in a boiling-water bath.

1 Kg (2 lbs) Ripe Tomatoes, chopped into halves
2 Fresh Red Chili Peppers, minced
2 Garlic cloves, finely chopped
1/2 teaspoon Ground Paprika (Red Chilli Powder)
1/4 cup Vinegar
1/4 cup Sugar
1 teaspoon Corn Flour
2 teaspoons Water
Salt

Steps:

  • Directions:Blend chopped tomatoes, chopped garlic in a food processor or blender until smooth.Pour it in a saucepan; add minced red chilli pepper, ground paprika, sugar, salt and vinegar. (You can adjust the quantity of fresh red chilli according to your taste to make it more or less hot and spicy).Cook over low to medium heat until it becomes darker or for around 10-15 minutes. Keep stirring occasionally in between.Strain and pour in to large bowl, discard tomato seeds. Transfer back to saucepan.Dissolve 1 teaspoon corn flour in 2 teaspoons water and add it in tomato puree. Stir continuously and cook over low heat until mixture becomes thick.Turn off heat and let it cool for 3-4 minutes.Tomato sauce with chili is ready. Pour it in a sterilized jar or store in a refrigerator.

10 -12 fresh tomatoes, peeled & blended
olive oil
5 -6 garlic cloves
1 -2 lb pork (optional) or 1 -2 lb sausage (optional)
1 cup red onion, diced
2 -3 cups green peppers, diced
1 -2 jalapeno, diced
1 (14 ounce) can black beans, drained and rinsed
1 cup corn
2 cups chicken stock
1 cup white rice, cooked
1/2 bunch cilantro, roughly cut, some reserved for topping
2 green onions, diced
fat free sour cream

Steps:

  • Heat oil with garlic over med-hi heat.
  • (if using meat, add meat and brown. Drain excess grease).
  • Add onions and cook 5 min.
  • Add peppers and cook until soft.
  • Add beans and corn and cook 1 min, just to warm.
  • Add blended tomatoes, chicken stock, cilantro, and cooked rice.
  • Season to taste with salt and pepper.
  • Simmer 15-20 minutes, or until desired thickness is achieved.
  • Serve topped with green onions, chopped cilantro and a dab of (fat free) sour cream.

1 pound tomatillos, husked and rinsed
2 plum tomatoes
1/4 cup vegetable oil
4 poblano chile peppers
2 jalapeno peppers
3 pounds boneless pork shoulder, trimmed of excess fat, cut into 2-inch pieces
2 tablespoons chili powder
2 tablespoons ground cumin
Kosher salt and freshly ground pepper
1 onion, chopped
3 cloves garlic, chopped
2 tablespoons cornmeal
4 cups low-sodium chicken broth
Sliced scallions, pickled jalapenos and/or grated cheddar cheese, for topping

Steps:

  • Preheat the broiler. Toss the tomatillos and tomatoes with 1 tablespoon vegetable oil on a baking sheet and push to one side. Put the poblanos and jalapenos on the other side of the baking sheet. Broil, turning the vegetables occasionally, until charred, about 10 minutes. Transfer the tomatillos and tomatoes to a cutting board and let cool. Put the peppers in a bowl and cover with a plate; set aside 10 minutes. Pull the skins off the tomatoes, then core and chop them along with the tomatillos. Peel, seed and chop the peppers; set all the vegetables aside.
  • Toss the pork with the chili powder, cumin, 2 teaspoons salt and a few grinds of pepper in a large bowl. Heat 2 tablespoons vegetable oil in a large Dutch oven or pot over medium heat. Working in batches, add the pork to the pot and cook, turning, until browned, about 3 minutes. Transfer to a plate.
  • Add the remaining 1 tablespoon vegetable oil, the onion and garlic to the pot; cook, stirring, until softened, about 3 minutes. Sprinkle in the cornmeal and cook, stirring, until lightly toasted, about 1 minute. Add the broiled tomatillos, tomatoes and peppers. Stir to combine, scraping up any browned bits from the bottom of the pot. Add the broth and pork and any collected juices, then bring to a simmer.
  • Cover and cook, stirring occasionally, until the pork is tender, about 1 1/2 hours. Uncover, season generously with salt and continue simmering, stirring occasionally, until the liquid reduces slightly, about 30 more minutes. Remove from the heat and let stand about 10 minutes; spoon off any excess fat from the top. Season the chili with salt and pepper and serve with toppings.

2 cloves garlic, chopped
One 8-ounce can tomato sauce
2 tablespoons chili powder
1 teaspoon ground cumin
1 teaspoon ground oregano
1 teaspoon salt
1/4 teaspoon cayenne pepper
1/4 cup masa harina
One 15-ounce can kidney beans, drained and rinsed
One 15-ounce can pinto beans, drained and rinsed
Shredded Cheddar, for serving
Chopped onions, for serving
Tortilla chips, for serving
Lime wedges, for serving

Steps:

  • Place the ground beef in a large pot and throw in the garlic. Cook over medium heat until browned. Drain off the excess fat, and then pour in the tomato sauce, chili powder, cumin, oregano, salt and cayenne. Stir together well, cover, and then reduce the heat to low. Simmer for 1 hour, stirring occasionally. If the mixture becomes overly dry, add 1/2 cup water at a time as needed.
  • After an hour, place the masa harina in a small bowl. Add 1/2 cup water and stir together with a fork. Dump the masa mixture into the chili. Stir together well, and then taste and adjust the seasonings. Add more masa paste and/or water to get the chili to your preferred consistency, or to add more corn flavor. Add the beans and simmer for 10 minutes. Serve with shredded Cheddar, chopped onions, tortilla chips and lime wedges.

500g red onions, finely sliced
1kg fresh tomatoes, chopped
4 garlic cloves, finely sliced
8 - 12 fresh red chilli's, roughly chopped
a thumb-size piece of ginger, peeled and chopped
250g brown sugar
150ml red wine vinegar
5 cardamom seeds
1/2 tablespoon paprika

Steps:

  • Place all of your ingredients into a large, heavy-based pan and bring to a gentle simmer, stirring occasionally.
  • Simmer for 1 hour.
  • Using a handheld blender, blend all of the ingredients, but not so much that it becomes a puree.
  • After simmering, bring to a gentle boil so that the mixture turns dark, jammy and shiny.
  • Place into sterilized jars and place in the fridge for the night. Will keep for 6 weeks.

1 Anaheim chile pepper, chopped
2 red jalapeno pepper, chopped

¼ cup Worcestershire sauce
1 pinch garlic powder, or to taste
2 beef bouillon cubes
1 (12 fluid ounce) can or bottle light beer (such as Coors®)
1 (28 ounce) can crushed San Marzano tomatoes
1 (14.5 ounce) can fire-roasted diced tomatoes
1 (12 ounce) can tomato paste
½ cup white wine
2 tablespoons chili powder
2 tablespoons ground cumin
1 tablespoon brown sugar
1 tablespoon chipotle pepper sauce
2 ½ teaspoons dried basil
1 ½ teaspoons smoked paprika
1 teaspoon salt
½ teaspoon dried oregano

Steps:

  • Heat oil in a large pot over medium heat; cook and stir onion, bell pepper, Anaheim pepper, jalapeno peppers, and garlic in the hot oil until softened.
  • Meanwhile, heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes; add Worcestershire sauce and garlic powder. Crumble bouillon cubes over beef and add beer. Continue to cook , scraping any browned bits from the bottom of the skillet, until liquid is hot, about 3 minutes.   • Stir crushed tomatoes, diced tomatoes, tomato paste, and wine to the beef mixture. Season with chili powder, 2 tablespoons cumin, brown sugar, pepper sauce, basil, paprika, salt, oregano, and black pepper. Bring to a boil and reduce heat to medium-low. Cover and simmer until meat and vegetables are very tender and flavors have developed in the chili, about 90 minutes, stirring occasionally.
  • Mix kidney beans into beef and vegetables. Continue to simmer until beans are hot, about 30 minutes more.
  • Blend sour cream, cilantro, and remaining 1/2 teaspoon cumin in a food processor until smooth. Serve sour cream mixture with chili.
