This is a ridiculously simple 4-ingredient salad with tomatoes and cantaloupe!

1 cantaloupe, scooped with a melon baller
15 cherry tomatoes (about 1 pint), halved
1 tablespoon olive oil
5 leaves basil leaves, chiffonaded or roughly chopped
pinch of salt & pepper

Steps:

  • Combine the cantaloupe and cherry tomatoes in a bowl.
  • Drizzle with olive oil and top with salt and pepper.
  • Garnish with basil, stir to combine, and serve immediately.

1/4 cup olive oil
5 cloves garlic, finely minced
1 pint red grape tomatoes, halved lengthwise
1 pint yellow grape tomatoes, halved lengthwise
1 tablespoon balsamic vinegar
16 fresh basil leaves, chiffonade, plus more if needed
Salt and pepper

Steps:

  • In a small skillet, heat the olive oil over medium-high heat. Add the garlic and stir, lightly frying for about a minute and removing from the heat before the garlic gets too brown (it can be golden). Pour it into a mixing bowl and allow to cool slightly. Add the tomatoes, balsamic, basil and some salt and pepper to the bowl. Toss to combine, and then taste and add more basil if needed, and more salt if needed.

4 pounds ripe beefsteak tomatoes, cored
Coarse salt
1 ripe cantaloupe, halved lengthwise, seeded
2 pounds assorted small ripe heirloom and cherry tomatoes
1/2 cup loosely packed fresh basil leaves
1 tablespoon olive oil
Freshly ground pepper

Steps:

  • Puree beefsteak tomatoes and 3 tablespoons salt in a food processor until smooth. Line a bowl with double thickness of cheesecloth; transfer puree to bowl. Using a melon baller; scoop out as much cantaloupe as possible into balls; set aside. Scrape out remaining cantaloupe; puree in a food processor. Add to tomato puree. Gather cheesecloth and tie into a bundle. Suspend bundle from a large wooden spoon; hang over bowl to collect the juices for 2 hours (to yield 4 cups liquid).
  • Core heirloom tomatoes; slice into wedges and rounds. Slice cherry tomatoes in half. Place tomatoes in a bowl; add melon balls, basil, and olive oil, and season with salt and pepper. Toss to combine.
  • Divide among shallow bowls, mounding salad in center of each. Ladle tomato water around salad and serve immediately.

1/2 cup thinly sliced cucumber
1/2 cup cherry tomatoes ((thinly sliced))
1/4 medium red onion ((thinly sliced))
1 Tbsp olive or avocado oil
2 tsp apple cider vinegar
1 healthy pinch each sea salt + black pepper
3 Tbsp lime juice
1 Tbsp maple syrup
1 pinch sea salt
1 Tbsp olive or avocado oil
3 heaping cups cantaloupe ((cubed or scooped with a melon baller // ~1 cantaloupe as original recipe is written))
2 Tbsp fresh mint

Steps:

  • Add cucumber, tomato, and onion to a small mixing bowl and top with olive oil, apple cider vinegar, salt, and pepper. Toss to combine. Then taste and adjust flavor as needed, adding more vinegar for acidity or salt and pepper for flavor balance. Set in the refrigerator to chill.
  • Next, prepare dressing by adding lime juice, maple syrup, and sea salt to a small mixing bowl and whisking to combine. Then slowly stream in olive oil while whisking to combine. Taste and adjust flavor as needed, adding more lime juice for brightness/acidity, maple syrup for sweetness, or salt for flavor balance. Set aside.
  • Add cantaloupe to a large serving bowl and top with dressing. Gently toss to combine. Then add the cucumber-tomato-onion salad on top, leaving any excess liquid/dressing behind.
  • Gently toss to combine and garnish with fresh mint. Serve.
  • Best when fresh, though leftovers keep in the refrigerator up to 3 days. Leave mint on the side to keep as fresh as possible.

1 cup feta cheese, torn into large crumbles

Steps:

toasted baguette , to serve

  • Gently combine the melon, cucumber, tomatoes and herbs in a large bowl. 300g heirloom tomato (a mixture of colours and sizes looks nice), halved or quartered if large
0.25 large or 0.5 small watermelon
handful mint , leaves picked
100g feta

Steps:

  • Put the tomatoes in a large bowl. Remove the outer rind of the watermelon, cut the flesh into medium-sized cubes and add to the tomatoes.
  • Roughly chop the mint leaves, discarding the stalks but leaving a little for the garnish, and add the rest to the bowl. Crumble over the feta, toss everything together lightly and garnish with the reserved mint.

2 -4 tomatoes, about one per serving,depending on size
1 cup fresh basil leaf
1 clove garlic, minced (to taste)
balsamic vinegar
extra virgin olive oil
salt
fresh ground pepper

Steps:

  • Cut tomatoes in quarters or eighths, depending on size.
  • Roughly chop basil and place in glass container.
  • Add garlic.
  • Mix together thoroughly balsamic vinegar and olive oil.
  • (A couple of tbsp of each), and pour over basil-garlic mix.
  • Season with salt and pepper.
  • Cover tightly and marinate at room temperature for 6-8 hours.
  • Do not refrigerate before serving.
