TOMATO BISQUE WITH FRESH GOAT CHEESE

Tomato Bisque With Fresh Goat Cheese image

A classic crumbler like Vermont Creamery's fresh goat cheese can be swirled into a creamy tomato bisque just before serving, enriching the soup and preserving the occasional lemony crumb.

Provided by Suzanne Lenzer

Categories     dinner, lunch, soups and stews, main course

Time 45m

Yield 4 servings

Number Of Ingredients 10

2 tablespoons olive oil
1 tablespoon minced garlic
1 tablespoon grated ginger
1 cup diced onion
1 28-ounce can crushed Italian plum tomatoes
1 tablespoon sugar
1 tablespoon fine sea salt, or to taste
1/2 teaspoon red chile flakes, more to taste
Pinch of cayenne pepper
4 ounces good-quality fresh goat cheese, such as Vermont Creamery

Steps:

  • Put oil in a large saucepan over medium-high heat. When it shimmers, add garlic and ginger and sauté until just fragrant, 1 to 2 minutes. Add onion and continue cooking until soft and translucent, about 5 minutes.
  • Add tomatoes, sugar, salt, chile flakes, cayenne and 1 cup water. Reduce heat to medium-low and simmer for 30 minutes or until flavors have melded. Using an immersion blender, purée soup until smooth. Add goat cheese and stir well until mixture is creamy but with a few evident crumbles of cheese. Ladle into bowls and serve.

Roasted Tomato Bisque image

Provided by Jeff Mauro, host of Sandwich King

Categories     main-dish

Time 1h5m

Yield 4 servings

Number Of Ingredients 14

Two 28-ounce cans whole tomatoes, drained of their juices
1 tablespoon olive oil
1 tablespoon light brown sugar
4 carrots, peeled and chopped
2 shallots, quartered
Salt and freshly cracked black pepper
3 tablespoons unsalted butter
1/2 teaspoon crushed red pepper
2 cloves garlic, minced
1 tablespoon tomato paste
2 tablespoons dry sherry
One 28-ounce can crushed tomatoes
1 to 2 cups chicken stock
1/4 cup heavy cream

Steps:

  • Preheat the oven to 400 degrees F.
  • In a mixing bowl, combine the drained whole tomatoes, olive oil, light brown sugar, carrots and shallots, and toss to coat. Season the vegetables with salt and pepper. Place the vegetables on a silicone or parchment-lined baking sheet and roast until caramelized, about 30 minutes.
  • Heat a soup pot over medium heat. Add the butter and cook until foaming. Add the crushed red pepper and garlic and saute for 1 minute. Add the tomato paste and cook for 1 to 2 minutes. Then add the sherry. Cook until all the liquid has evaporated and the alcohol has cooked off, 1 to 2 minutes. Add the roasted vegetables, crushed tomatoes and 1 cup chicken stock. Season with salt and pepper and bring to a simmer. Let simmer for 15 minutes.
  • Add the heavy cream and, using an immersion blender, puree the soup until uniform in texture. Add more chicken stock to adjust the consistency to how you like it.

TOMATO BISQUE

Provided by Food Network Kitchen

Categories     appetizer

Time 1h

Yield 4 to 6 appetizer servings

Number Of Ingredients 15

4 tablespoons unsalted butter
1 tablespoon minced bacon (about 1/2 ounce)
1 Spanish onion, chopped
1 carrot, chopped
1 stalk celery, chopped
4 cloves garlic, minced
5 tablespoons all-purpose flour
5 cups chicken broth, homemade or low-sodium canned
1 (28-ounce) can whole, peeled tomatoes (with liquid), roughly chopped
3 parsley sprigs
3 fresh thyme sprigs
1 bay leaf
1 cup heavy cream
1 3/4 teaspoon kosher salt
Freshly ground black pepper

Steps:

  • Heat the butter in a large soup pot over medium-high heat. Add the bacon and cook, stirring, until crisp and most of the fat has rendered, about 1 minute. Using a slotted spoon, transfer the bacon to a paper towel-lined plate and set aside. Lower the heat to medium, add the onion, carrots, celery, and garlic and cook, covered, stirring occasionally, until soft and fragrant, about 8 minutes.
  • Stir in the flour and cook, stirring, for 3 minutes. Pour in the broth and tomatoes and bring to a boil while whisking constantly. Tie the parsley sprigs, thyme, and bay leaf together with a piece of kitchen twine and add to the pot. Lower the heat and simmer for 30 minutes. Remove from the heat and allow to cool.
  • When the soup base is cool, remove and discard the herb bundle. Working in batches, transfer the mixture to a blender and puree until smooth. Using a sieve over a large bowl, strain the tomato puree. Return the puree to the pot and reheat over medium heat.
  • Whisk the heavy cream and salt into the soup and season with pepper to taste. Divide among warm soup bowls, garnish with the crispy bacon, and serve immediately.

HOW TO MAKE TOMATO BISQUE

How to Make Tomato Bisque image

You don't need a whole basket of vine-ripened tomatoes to make a delicious tomato bisque. We're going to use canned tomatoes. Rice makes this soup silky, not starchy.

TOMATO-BASIL QUICHE WITH GOAT CHEESE

Tomato-Basil Quiche With Goat Cheese image

I alwaysmake this for brunch parties, and everybody seems to love it. I get a lot of requests for the recipe, so now I can give my friends & family the RZ link. I use a frozen pie crust to keep it easy, but it would be even better with your favorite home-made pie crust. I hope you enjoy it as much as I do!

Provided by Spice Boy

Categories     Breakfast

Time 1h10m

Yield 8 serving(s)

Number Of Ingredients 8

1 frozen pie shell (9-inch, preferably deep-dish)
3 eggs
1 1/2 cups half-and-half
1 roma tomato
5 fresh basil leaves
1/4 cup goat cheese (approximately 4 oz)
1 dash nutmeg
salt and pepper

Steps:

  • Blind-bake the pie shell according to package directions (approximately 12 - 15 minutes at 375 for the type I use. I also use pie weights to keep the crust from puffing.) Set crust aside to cool for approximately 10 minutes.
  • Meanwhile, slice the Roma tomato thinly and let it sit on a paper towel to draw out some liquid. Chiffonade the basil leaves (i.e., roll them up and slice them into thin strands.).
  • Crumble the goat cheese into the warm pie shell, distributing it evenly over the bottom. It's okay if it begins to melt a bit.
  • Layer the tomato slices in one layer over the goat cheese. Sprinkle the basil leaves over the top evenly. Top with a dash of nutmeg and some salt and pepper.
  • Whisk the eggs with the half and half thoroughly. Pour the egg mixture into the pie shell carefully. (I like to do this when the pan in on the oven rack to avoid any spillage.).
  • Bake at 325 for 40 - 50 minutes, until the top is slightly puffed and lightly browned. Keep an eye on the crust - halfway through baking (or even earlier) you'll need to use a pie-guard or tin foil to cover the crust so it doesn't get too brown. Allow the quiche to cool a bit before serving. It is best slightly warm, but not hot.

  • To make the croutons, preheat your oven to 375 degrees. Take half of a French bread loaf and cut/rip it into bite sized pieces. Place the bread pieces in a large bowl, drizzle with 2 tablespoons of olive oil. Season with 1/2 teaspoon of garlic powder, 1/4 teaspoon of salt, and 1/2 teaspoon of dried thyme. Stir to combine then pour into a large baking sheet. Bake for 15 minutes, remove from oven and set aside until the bisque is done.
  • To start making the bisque, in a large pot over medium heat add the diced white onions and cook for 5-6 minutes until soft and lightly browned. Add the grated garlic and chopped basil and cook an additional minute. Pour in the crushed tomatoes, the can of peeled plum tomatoes (the tomatoes and the tomato liquid in there). Using you spoon, lightly press on the tomatoes to start breaking them up. Add the sugar, salt, and pepper and simmer over medium-low heat for 30 minutes.
  • After 30 minutes, turn off the heat and it’s time to blend this into the bisque. Using a blender or other blending device (I use my Nutribullet), pour into the tomato mixture and blend until completely smooth. If your blender is small, you may need to do this in batches.
  • Pour the blended smooth tomato bisque back into the large pot, add the half & half and the water. Simmer over medium-low heat for 10-15 minutes.
