Steps:

  • In a blender, combine basil, oil, vinegar, and 1 tablespoon water. Blend until smooth, 2 to 3 minutes. Season vinaigrette with salt and pepper.
  • With dental floss or a warm knife (wiped clean after each slice), thinly slice cheese. Arrange tomatoes and goat cheese on a serving plate; drizzle with dressing to taste. Serve garnished with basil leaves.

1/4 cup olive oil
5 cloves garlic, finely minced
1 pint red grape tomatoes, halved lengthwise
1 pint yellow grape tomatoes, halved lengthwise
1 tablespoon balsamic vinegar
16 fresh basil leaves, chiffonade, plus more if needed

Steps:

  • In a small skillet, heat the olive oil over medium-high heat. Add the garlic and stir, lightly frying for about a minute and removing from the heat before the garlic gets too brown (it can be golden). Pour it into a mixing bowl and allow to cool slightly. Add the tomatoes, balsamic, basil and some salt and pepper to the bowl. Toss to combine, and then taste and add more basil if needed, and more salt if needed.

1/4 cup fine dried bread crumbs
Gray salt
Freshly ground black pepper
1 large egg
4 rounds fresh goat cheese, about 2 ounces each
4 thick, ripe beefsteak tomato slices
2 tablespoons extra-virgin olive oil, plus more for the salad
2 cups lightly packed mixed tender fresh herb leaves such as basil, chervil, tarragon, Italian flat-leaf parsley, chives (1-inch lengths), or young cress
Red wine vinegar

Steps:

  • In a small, shallow bowl, mix the bread crumbs with salt and pepper, to taste. In another small, shallow bowl, beat the egg just until blended. Dip each goat cheese round in the egg, and then in bread crumbs, patting the crumbs in place. Cover and refrigerate the coated cheese rounds for about 15 minutes.
  • Center the tomato slices on 4 salad plates and season with salt and pepper.
  • Heat a large nonstick skillet over moderately high heat and pour in 2 tablespoons olive oil. When the oil is almost smoking, add the cheese rounds. Cook until lightly browned, about 45 seconds. Turn them over and cook on the other side until the cheese just feels quivery, about 45 seconds longer, depending on the thickness of the rounds. Place a cheese round on each tomato slice.
  • In a bowl, toss the herbs with a light drizzle of olive oil, a splash of red wine vinegar, and salt and pepper, to taste. Mound the herbs on top of the cheese, dividing them evenly. Serve immediately.
  • Michael's Notes: This salad looks best when the tomato slice and the goat cheese slice are about the same size. So if you can only find goat cheese in small logs, you may want to serve 2 goat cheese rounds to each diner and perch them on slices of smaller tomatoes.
  • Be sure you take all the stems off the herbs carefully so your guests can enjoy just the soft leaves.

2 large Beefsteak tomatoes (about 12 ounces each)
1 tablespoon olive oil
1 12-ounce log Montrachet goat cheese
1/2 cup all purpose unbleached flour
2 eggs, beaten
1/2 cup bread crumbs combined with 2 tablespoons each chopped fresh thyme, sage, oregano and basil leaves
Salt and freshly ground pepper to taste
2 cups mixed salad greens
1/2 cup extra virgin olive oil
3 tablespoons balsamic vinegar

Steps:

  • Preheat the oven to 300 degrees. Halve and seed the tomatoes and season with salt and pepper. Lay the tomatoes on a baking rack set over a cookie sheet in the 300 degree oven for 20 minutes or until the skins slip off easily. Remove the tomatoes from the oven, slip off their skins, and brush the tomato halves lightly with olive oil. Return the tomatoes to the oven to roast for an additional hour or until they take on a brilliant, burnished color.
  • Meanwhile, slice the Montrachet log into 12 equal-size disks. Dredge each disk of goat cheese with flour then egg then seasoned bread crumbs. Heat a saute pan with 2 tablespoons of olive oil and quickly cook the cheese on both sides. When all the cheese has been cooked in this manner, divide them among 4 salad plates, alternating slices of goat cheese and roasted tomato halves.
  • Combine the remaining olive oil with the balsamic vinegar, toss the salad greens with the vinaigrette and place some salad alongside each serving of tomatoes and cheese.

LENTIL, TOMATO AND GOAT CHEESE SALAD

1 cup red lentils
1 pound red onion (about 1 very large)
1 large leek to yield 1/2 cup finely chopped
1 small bulb fennel to yield 1/2 cup finely chopped, reserving leftovers for future use
1 teaspoon olive oil
12 ounces ripe tomato (if possible one red and one yellow)
4 tablespoons balsamic vinegar
2 medium cloves garlic
1/8 teaspoon salt
Freshly ground black pepper
4 tablespoons reduced-fat goat cheese (4 slices about 1/8 inch thick)
2 large sprigs basil to yield 4 tablespoons chopped

Steps:

  • Cook lentils in partially covered pot until they are tender but not mushy, 12 to 15 minutes.
  • Slice onion into rings about 1/4-inch thick. Prepare stove-top grill, and grill onion, turning once or twice.
  • Wash, trim and cut white part from leek; mince white part.
  • Wash, trim and chop fennel bulb.
  • Heat olive oil in small nonstick skillet, and saute leek and fennel until fennel softens.
  • Wash, trim and slice tomatoes into 1/4-inch thick slices, and place in bowl with 1 tablespoon of balsamic vinegar, mixing to coat well.
  • Mince garlic.
  • When lentils are cooked, drain and rinse. Stir in leek, fennel, garlic and remaining balsamic vinegar. Season with salt and pepper.
  • Slice cheese, and heat at 400 degrees in toaster oven for a couple of minutes, until it begins to bubble.
  • Wash, dry and chop basil; stir 2 tablespoons into lentils.
  • Arrange lentil mixture on serving platter. Top with tomatoes. Place grilled onions in center, place cheese rounds on top of tomatoes, sprinkle with basil.

4 large tomatoes, washed and sliced
8 ounces fresh goat cheese
salt and freshly ground pepper
4 tablespoons parsley, chopped at the last minute (or basil)

1 teaspoon mustard
2 tablespoons vinegar
6 tablespoons olive oil

Steps:

100ml white balsamic vinegar
600g mixed tomatoes
1 tbsp extra virgin olive oil
½ small bunch basil , leaves picked and any larger ones torn
200g goat's curd or soft mild goat's cheese, broken into large chunks
10g shelled unsalted pistachios , roughly chopped, to serve
5 tbsp extra virgin olive oil
4 tbsp raspberry vinegar (see step 1 of the method)

Steps:

  • Put the raspberries and vinegar in a food processor and blitz until smooth. Push the mixture through a fine mesh sieve, discarding any seeds. Cover and transfer to the fridge until ready to use (the raspberry vinegar is best eaten fresh, but will keep in the fridge for a few days).
  • Cut the tomatoes into wedges and arrange over a large serving platter. Make the dressing by whisking the ingredients together in a small bowl and seasoning to taste.
  • Season the tomatoes, then toss through the olive oil. Scatter over the basil leaves and goat's curd. Season with freshly ground black pepper, then spoon over the dressing. Scatter over the pistachios just before serving.

1 pint mixed baby heirloom tomatoes: cherry, pear and currant

2 tablespoons sherry vinegar
1 tablespoon balsamic vinegar
Salt and freshly ground white pepper to taste
4 ounces fresh goat cheese, at room temperature
1 bunch basil, leaves washed, stemmed, stacked and finely diced (do not chop roughly or the basil will bruise and turn brown) or 1 bunch chives, minced
Brittany gray sea salt to taste

Steps:

  • Slice each large tomato crosswise into 1/4-inch slices. Arrange each variety of tomato in alternating colors in a circle around a serving platter, then place the baby tomatoes in the center.
  • Sprinkle the tomatoes with the minced shallots, oil, vinegars, salt and pepper. Marinate the tomatoes 2 minutes, turn over and marinate 2 minutes on the other side.

Baby Tomato and Fresh Goat Cheese Salad image

This is an early signature dish of my colleague Jonathan Waxman, who has been at the center of the contemporary American food scene since the early 1970s, when he worked at Chez Panisse in Berkeley and at Michael's in Los Angeles. Waxman now presides over Barbuto-he's "the bearded one"-in the far west Greenwich Village, where all- American inclinations meet simple Italian cooking, frequently in the wood- burning oven. Jonathan's cooking has always been defined by its clarity; there are times when I wonder how he has managed to make something as simple as a roasted chicken or a plate of beets seem so special. Top-quality ingredients in season and vigilant preparations are the answers-what I strive for in my own cooking. This dish is a classic example of the early wave of what was known as the New American Cooking-a movement, if not a revolution, now forty years old and counting. It also demonstrates that a new, even trendy, dish can endure and become a classic-if it has integrity. Nevertheless, you can improvise here. Change the herbs according to what you've got, and the oils for the dressing.

4 cups baby tomatoes
1 cup (about 8 ounces) fresh goat cheese
1 teaspoon chopped chives
1 teaspoon chopped basil
1 teaspoon chopped oregano
1 teaspoon chopped thyme
1 cup unseasoned fresh bread crumbs or panko
Salt and freshly ground pepper
1 egg
2 tablespoons each hazelnut, walnut, and olive oils, or any combination equal to 6 tablespoons
1 tablespoon fresh lemon juice
12 sprigs chervil or flat- leaf parsley

Steps:

  • Preheat the oven to 375 degrees.
  • Cut the tomatoes in half horizontally.
  • Mix the goat cheese with the herbs and shape the mixture into four 2- inch cakes and chill them for 30 minutes or so. Season the bread crumbs with salt and pepper to taste. Beat the egg with a pinch of salt. Carefully dip the goat cheese cakes into the egg, then into the bread crumbs to coat lightly. Place the cakes on a buttered cookie sheet and bake them until golden brown, about 8 minutes, or brown them in an oiled heavy skillet over medium- high heat. Whisk together the oils and lemon juice and toss with the tomatoes. Season with salt and pepper. Arrange the dressed tomatoes on a serving platter. Place the baked goat cheese cakes on the tomatoes, garnish with the chervil, and serve.

GRILLED TOMATO, BASIL, AND GOAT CHEESE SANDWICHES

1 16-ounce French-bread baguette
2/3 cup olive oil
8 large garlic cloves, finely chopped
1/2 cup chopped fresh basil
1 tablespoon chopped mixed fresh herbs (such as tarragon, thyme, and rosemary)
3/4 cup soft fresh goat cheese (plain, peppered, or herbed)
4 large plum tomatoes, thinly sliced into rounds
2 cups coarsely chopped pitted Mediterranean olives

Steps:

  • Prepare barbecue (medium heat). Cut baguette crosswise in half. Cut each half lengthwise in half to form 4 pieces total. Combine oil, garlic, and herbs in small bowl. Brush all cut sides of bread with half of oil mixture.
  • Grill bread, cut sides down, until lightly toasted, about 1 minute. Remove from grill. Quickly spread cut sides of toast with goat cheese. Top with tomatoes and olives, dividing equally. Drizzle remaining oil mixture on top.
  • Return open-face sandwiches to grill. Cook until bottom sides are toasted, cheese melts, and tomatoes begin to soften, about 3 minutes. Cut each sandwich diagonally in half and serve.
