2 cloves garlic, peeled and thinly sliced
1 1/2 pints yellow, red, and orange pear and cherry tomatoes, in any combination
Salt and freshly ground pepper
8 large basil leaves

Steps:

  • Heat oil in a large skillet over medium-low heat. Add garlic and cook until soft and golden, about 3 minutes. Add tomatoes, season well with salt and pepper, and cook, stirring often, until tomatoes are just warm and ready to burst, 3 to 5 minutes. Add basil and cook until just wilted, about 1 minute. Spoon compote over pork skewers.

1/2 pound farfalle (bowtie) pasta, cooked
16 slow roasted tomatoes, halved (recipe follows)
1/4 cup Calmata olives, pitted and chopped
1 1/2 teaspoons roasted garlic, mashed
1 tablespoon capers, drained
2 tablespoons reduced balsamic vinegar
1/4 cup fresh basil, chiffonade
8 plum tomatoes, sliced in half, lengthwise
2 cloves garlic, minced
1 tablespoon chopped fresh thyme
1 tablespoon chopped fresh parsley
1 tablespoon chopped fresh rosemary
3 tablespoons olive oil
Salt and pepper, to taste

Steps:

  • Julienne the roasted tomatoes. Add the olives, garlic, capers, vinegar and basil. Toss tomato mixture with pasta.
  • Preheat oven to 250 degrees F.
  • Toss all ingredients in a large bowl. Arrange tomatoes, cut-side up, on an oiled cookie sheet. Roast in oven for 3 1/2 hours or until tomatoes have reduced in size by 1/2.

  • Remove from the heat and stir in the lemon juice and parsley.

20 pearl onions, peeled
Kosher salt and freshly ground black pepper
One 14-ounce can whole peeled tomatoes, seeded and chopped, juices reserved
1 cup white wine
1 teaspoon balsamic vinegar
1/2 cup loosely packed basil, washed

Steps:

  • In a large, ovenproof skillet, heat the olive oil over medium heat. Add the onions and salt and pepper and cook until the onions are soft and golden, about 8 to 10 minutes. Add the tomato juice, wine, and vinegar and bring to a boil. Reduce the heat to low and simmer until the onions are tender and begin to separate, about 15 minutes.
  • Stir in the tomatoes and cook 5 minutes more. Stir in the basil. Transfer to a bowl and cover to keep warm. The compote will keep, tightly covered, in the refrigerator for 3 days.

This is a perfect starter dish. I would replace this with a salad any day. I take advantage of prepared polenta cut into slices to make it a bit easier. Fresh tomato and basil make this a perfect dish. This was recreated from a dish I had at a wedding a few years back. I absolutely loved the taste and thanks to a server who was nice enough to get me the ingredients ... well most of them, this is the end result. I serve this all the time at parties and every one loves it. It is a nice change from the traditional salad to start the dinner.

24 ounces herb prepared polenta
1/4 cup roasted red pepper (now you can always make your own, but I always have a jar on hand)
1 large yellow tomatoes, fine chopped (yellow is important, it has a sweeter taste)
1 medium sweet onion (cut in thick slices)
4 tablespoons pitted kalamata olives, cut in half
1/3 cup chickpeas, rinsed and drained
3 tablespoons crumbled feta
3/4 cup dry white wine
3 garlic cloves, rough chopped (smashed, skins removed)
3 tablespoons basil, fine chopped
5 tablespoons olive oil (2 for compote, 2 for polenta, 1 for garnish)
2 tablespoons butter
1/4 teaspoon kosher salt
1/4 teaspoon ground black pepper

Steps:

  • Compote -- In a medium sauce pan, add 2 tablespoons of the olive oil and bring to medium heat. Add the garlic and cook 3-4 minutes. Once nice and brown, add the tomatoes, roasted and yellow along with the peppers to the pan and cook about 15 minutes until very soft.
  • Wine -- As the tomatoes cook add the wine to a small sauce pan and let it reduce on medium heat. You want it to reduce so you end up no more than 2-3 tablespoons of wine.
  • Polenta and Onion -- Now as the wine reduces, grill the polenta and onions. I slice the polenta into 1/2" thick slices as well as the onion and then brush the grill pan with the olive oil and grill both until golden brown on each side. Now you can do this in a skillet, but I prefer the outdoor grill or a indoor grill pan.
  • Finishing the Compote -- Add the butter to the wine and mix well. Then add another teaspoon of olive oil, chick peas and olives to the tomato mix. Cook another 3-4 minutes as you finish the polenta and the onion slices. Then stir in salt, pepper, and the fresh basil.
  • Plate -- Arrange the grilled polenta on the plate and top with the tomato compote, grilled onion rings, drizzle with the last tablespoon of olive oil and the feta. You can add a few fresh basil leaves if you want to garnish.
  • NOTE: You can make the tomato compote the day ahead and just heat up before you use it. Just do not add the basil until you are ready to serve it.

This savory compote - a typically sweet, slow-simmered fruit preserve - is a delicious way to eat cherry tomatoes, especially those that are on the verge of being too soft. But it's also a great way to intensify the flavor of middling supermarket cherry tomatoes in the winter. Either way, the sweet-tart tomatoes can build super-quick meals: Put them on top of ricotta or avocado toast, or squish them into a grilled cheese. Toss them with hot or cold pasta. Use the oil and juices in salad dressings and the tomatoes in the salad itself. The compote can be used right away, but it's best the next day and will keep in the fridge for at least a week. Feel free to throw in any hardy, woody herbs you like, but don't add very delicate herbs like basil, chives or dill before cooking. You can add a handful of those softer herbs before serving, if you like.

1/2 cup extra-virgin olive oil

Steps:

  • In a 6- to 8-quart slow cooker, add the tomatoes, garlic, olive oil, honey, vinegar, herbs and red-pepper flakes (if using), and stir to combine. Season with 2 teaspoons salt and a few generous grinds of pepper. Cook on low for 6 hours, until the tomatoes are wrinkled, sweet and very soft, and some have burst. Remove the herb sprigs and squeeze in the lemon juice. Taste, and add more salt and pepper if necessary. Store in a covered container in the refrigerator.

This tasty sauce is simmering on top of my stove as I write this, and it smells fantastic. I got the recipe from the September 2004 BBC Good Food Magazine. It is a very versatile sauce and would go good with pasta or also as a pizza topping. it is also an essential ingredient in the Tomato, Goat's Cheese and Olive Gratin that I am posting seperately.

3 tablespoons olive oil
1 onion, finely chopped
2 cloves garlic, finely chopped
2 slices dried orange zest (see note)
2 tablespoons balsamic vinegar
21 ounces tomatoes, roughly chopped
1 teaspoon tomato paste
1 tablespoon light muscovado sugar (optional)
salt & fresh ground pepper, to taste

Steps:

  • Note: To dry orange zest, heat oven to 110*C.
  • Remove zest from oranges with a vegetable peeler and dry in a single layer, on a nonstick baking tray for up to 6 hours, until dry enough to snap in your fingers.
  • Heat the oil in a pan.
  • Toss in the onion, garlic and orange zest.
  • Fry in the oil until the onion is soft, but not coloured.
  • Add the balsamic vinegar and stir until it is completely evaporated.
  • Tip the tomatoes and tomato paste into the pan and cook over a medium heat for aobut 10 to 15 minutes, or until the compote is as thick as you want it.
  • Remove and discard the orange zest.
  • Season with salt and pepper if you like, plus the muscovado sugar to taste.
  • This keeps in the fridge for up to three days or in the freezer for up to 6 months.

For the tomato compote:
2 tablespoons olive oil
2 cloves of garlic, minced
2 cups cherry tomatoes (any variety will work)
¼ cup dry white wine
8 to 10 fresh basil leaves, thinly sliced
Healthy pinch of fine sea salt

For the frittata:
2 tablespoons cooking fat
1 bunch of scallions, white parts and green parts diced separately
2 cloves of garlic, minced
1 medium potato, scrubbed and cut into 1/4-inch chunks
2 cups fresh or thawed frozen corn kernels
4 large eggs
½ teaspoon crushed red pepper flakes
4 ounces feta cheese, crumbled

Steps:

  • Make the compote:
  • Heat the oil in a medium-sized skillet over medium heat. Add the garlic and cook, stirring often, for about 1 minute. Add the tomatoes and cook, stirring occasionally, for about 2 minutes longer. Pour in the wine and cook until the wine is reduced by about half. Add the basil, salt, and pepper and continue to cook, stirring occasionally, until the tomatoes burst and become fragrant, 5 to 8 minutes. Remove from the heat and set aside the tomatoes in a bowl.
  • Make the frittata:
  • Position an oven rack about 3 inches from the top and preheat the broiler.
  • In a 10-inch cast-iron skillet over medium, heat 1 tablespoon of the cooking fat. Add the diced white part of the scallions and the minced garlic and cook, stirring often, until fragrant, about 3 minutes. Add the potato and continue to cook, stirring occasionally, until the potato softens, about 10 minutes. Add the corn and continue to cook for about 2 minutes longer.
  • In a large bowl, whisk together the eggs, red pepper flakes, and half the feta cheese. Pour the egg mixture over the veggie mixture in the skillet and top with the remainder of the cheese. Stir in the potato mixture and the scallion greens.
  • Wipe out the skillet and, over medium-high, heat the remaining 1 tablespoon of cooking fat. Cook the frittata, lifting up the cooked egg around the edges with a rubber spatula to let the uncooked eggs flow underneath, 2 to 3 minutes. Reduce the heat to medium and cook, giving the pan a shake now and again, until the eggs are mostly set but the center is still slightly jiggly, 3 to 5 minutes more.
  • Transfer the frittata to the oven and broil until the top is golden brown, 2 to 3 minutes (keep a close eye on the frittata, as it can easily burn). Serve topped with the tomato compote.

1 sprig fresh tarragon
