This recipe has been modified slightly over tim, but is always a winner, whether for an appetizer or main dish. It even works with winter store-bought tomatoes. The vinegar and basil bring out the flavors.

Provided by Member recipe by Chiwong

Categories     Snack, Starter

Time 20m

Yield Makes 12

Number Of Ingredients 7

½ small red onion, finely chopped
8 medium tomatoes (about 500g), coarsely chopped and drained
2-3 garlic cloves, crushed
6-8 leaves of fresh basil, finely chopped
30ml balsamic vinegar
60-80ml extra virgin olive oil
1 loaf crusty bread

Steps:

  • In a large bowl, mix the onions, tomatoes, garlic and basil, taking care not to mash or break up the tomatoes too much. Add the balsamic vinegar and extra virgin olive oil. Add salt and pepper to taste. Mix again. Cover and chill for at least an hour. This will allow the flavours to soak and blend together.
  • Slice the baguette loaf diagonally into 12 thick slices and lightly toast them until they are light brown on both sides. Serve the mixture on the warm slices of bread. If you prefer the mixture at room temperature, remove from the fridge half an hour before serving.

BRUSCHETTA WITH HEIRLOOM TOMATOES, OLIVES AND BASIL

Bruschetta with Heirloom Tomatoes, Olives and Basil image

In this summery bruschetta, briny olives and a splash of balsamic vinegar liven up the classic tomato and basil topping.

Provided by Jennifer Segal

Categories     Appetizers

Time 30m

Yield 4 to 6 (about 18 pieces)

Number Of Ingredients 9

1½ lbs ripe tomatoes (preferably heirloom), cored and diced (3 to 4 tomatoes)
¼ cup pitted Kalamata olives, finely chopped
2 teaspoons balsamic vinegar
¼ cup finely chopped fresh basil, plus more for serving
¼ teaspoon salt
A few grinds freshly ground black pepper
½ cup extra-virgin olive oil, divided
1 good quality baguette, cut into scant ½-in-thick slices on the bias
1 clove garlic, halved lengthwise

Steps:

  • Preheat the oven to 425°F and set a rack in the middle position.
  • In a medium bowl, combine the tomatoes, olives, balsamic vinegar, basil, salt, pepper, and ⅓ cup of the oil. Toss to combine, then taste and adjust seasoning, if necessary. (If the tomatoes aren't as sweet as you'd like, add ⅛ teaspoon sugar.)
  • Arrange the bread slices on a baking sheet. Brush both sides of the bread with the remaining 3 tablespoons of oil. Bake for about 10 minutes, until crisp and golden on the bottom.
  • Using tongs, flip the bread slices so the golden side is facing up. Rub the top side of each slice with the cut side of the garlic, going back and forth once (or twice, if you like your bruschetta extra garlicky). Transfer the toasted bread to a serving platter and top each slice with a spoonful of the tomato mixture. Sprinkle the bruschetta with more basil. Serve within 10 minutes so that the bread stays crisp.
  • Make-Ahead Instructions: The tomato mixture can be prepared up to 3 hours ahead of time and stored in a covered container in the refrigerator. Taste and adjust seasoning before topping the toasted bread.

TOMATO AND BASIL BRUSCHETTA

Tomato and Basil Bruschetta image

My first culinary "success." This recipe came from a great book _Cucina Amore_, and is often requested by friends and family.

Provided by BothFex

Categories     Vegetable

Time 45m

Yield 4 serving(s)

Number Of Ingredients 10

6 roma tomatoes, diced
2 cloves garlic, chopped
2 cloves garlic, peeled
3 tablespoons olive oil
2 1/4 teaspoons balsamic vinegar
2 tablespoons chopped fresh basil
1/2 teaspoon kosher salt
1/4 teaspoon fresh cracked pepper
8 slices Italian bread, cut about 1 inch thick
2 tablespoons grated parmigiano-reggiano cheese

Steps:

  • Whisk together chopped garlic, vinegar, salt, pepper, and basil.
  • When combined slowly drizzle in oil.
  • Add tomatoes and let sit for 20 minutes at room temp.
  • Meanwhile back at the bat cave, toast the bread.
  • This can be done either in the toaster (if it's got really wide slots) or under the broiler (if using this method watch closely so it doesn't become a brickette).
  • When the bread is toasted rub each piece, on one side, with the whole garlic pieces.
  • Place the bread on a cookie sheet and top with tomato mixture.
  • Sprinkle on a little cheese and broil till the cheese melts (you can skip that last broiling bit and it's equally as wonderful).
  • Serve immediately.
  • The tomato mixture also makes a wonderful vinegrette for an antipasto salad.
  • Enjoy!

TOMATO BRUSCHETTA

Tomato Bruschetta image

Tomato Bruschetta is a summertime treat, ideal for a light lunch or a simple gathering appetiser. The combination of fresh ripened red tomatoes and aromatic basil is simply a match made in heaven.

Provided by Cheryl Whyte

Categories     Appetizer     Lunch     Snack

Number Of Ingredients 10

600 g Tomatoes
½ Red Onion (Chopped into a small dice)
1 tbsp Extra Virgin Olive Oil*
½ tsp Sea Salt
¼ tsp Freshly Ground Black Pepper
12 Slices Wholegrain Rustic Loaf
1 Clove Garlic
12 Fresh Basil Leaves (Washed and roughly torn or sliced into ribbons)
6-8 tbsp Homemade Super-Green Pesto (Or alternative green pesto)
2 tbsp Thick Balsamic Vinegar

Steps:

  • Prepare your ingredients and get your equipment ready.
  • In a bowl, combine the tomatoes, onions, olive oil, salt and pepper. Put to one side and prepare the toasts.
  • Grill the bread slices with a grill pan, or place in a toaster. You're looking for a crisp exterior and soft interior. On a hot grill pan, it will take about 3-4 minutes on each side - you are looking for those smoky grill marks. While the bread is still warm rub a clove of garlic over the surface of the bread. It will melt into it nicely.
  • Spread each piece of toast with the pesto (if using) and then pile on the tomato mixture. To serve, arrange the bruschetta on a plate or platter, scatter with torn pieces basil, drizzle with balsamic vinegar (if using). Serve immediately***.

FRESH TOMATO AND BASIL BRUSCHETTA

Fresh Tomato and Basil Bruschetta image

Italian simplicity at its best can be found in this bruschetta recipe with fresh tomato, basil, and mozzarella.

Provided by Kimberley Eggleston

Categories     Appetizer     Snack

Time 15m

Yield 16

Number Of Ingredients 7

1 loaf bread (crusty Italian, sliced 3/4-inch thick, about 16 pieces)
2 tbsp. olive oil
2 cups tomatoes (fresh, chopped)
2 tbsp. basil (chopped)
4 cloves garlic (chopped very fine)
1/2 tsp. salt
1 oz. cheese (mozzarella, shaved)

Steps:

  • Gather the ingredients.
  • To begin with, combine the chopped tomatoes, basil, garlic, and salt in a small bowl and lightly toss together. Set aside.
  • Set the oven to the broil setting. Place the bread slices in a single layer on a large baking sheet coated with a small amount of cooking spray or olive oil. Using a basting brush, brush a small amount of the olive oil on the top of each slice of bread.
  • Place the bread in the oven and broil for about 1 minute, or just until the bread becomes lightly toasted.
  • Remove the bread from the oven, and spoon about 2 tablespoons of the tomato mixture on each slice. Top each with a couple of shaves of the mozzarella cheese. Return the bread to the oven and broil the bruschetta for another 30 seconds. Watch the bruschetta carefully during this time to make sure it does not burn. Remove the bruschetta when the cheese becomes melted, and the edges of the bread are lightly browned and toasted.
  • Remove the bruschetta to a plate or a wire rack to cool just for a few minutes, and then serve immediately.

  • Slice the bread 1cm-thick, then toast on a barbecue or griddle pan.Rub each slice lightly with a cut clove of garlic, then drizzle with some good extra virgin olive oil and sprinkle lightly with a little sea salt and black pepper.Remove the cores from the tomatoes, carefully squeeze out the seeds, then place in a bowl.
  • Tear in the basil leaves, season with salt and pepper, then toss with a good lug of oil and a good swig of vinegar, to balance the flavours.
  • Serve the tomatoes either chunky or finely chopped, or you can scrunch them between your fingers before putting them on your bruschette – really tasty.

  • Wash the Roma tomatoes and slice them in half. Remove any hard stem pieces. Scoop out the tomato seeds then finely dice the tomato. Toss the tomato with 1/2 tsp salt and place into a mesh strainer over a bowl. Let sit for 10 minutes (while prepping other ingredients). This allows excess water to drain from the tomatoes to prevent the bruschetta from being watery.
  • While the tomatoes sit, finely dice the onion, mince the garlic and chop the basil. Add these ingredients to a large bowl along with 1 tbsp balsamic vinegar and 1 tbsp olive oil.
  • Once the tomatoes have sat for at least 10 minutes, stir them around in the mesh strainer to help additional water drain away then toss the tomatoes into the bowl with the onion, garlic and basil.
  • Thinly slice the baguette and place onto a parchment (or silicone baking mat) covered baking tray. Carefully scoop 2-3 tbsp of bruschetta mixture onto each baguette slice (depends on how large the baguette slices are).
