Light and fluffy vegan apple cake with a cinnamon sugar topping. Packed with fresh apple flavor and absolutely divine served warm with vegan whipped cream.

2 1/2 cups All Purpose Flour ((312g))
1 1/2 cups Light Brown Sugar ((300g))
1 1/2 tsp Baking Soda
1/2 tsp Salt
1 tsp Ground Cinnamon
1/4 tsp Nutmeg
1 cup Vegan Buttermilk ((240ml) 1 Tbsp Lemon Juice + Soy Milk up to the 1 cup line)
1/3 cup Vegetable Oil ((80ml) or Canola Oil)
1 tsp Vanilla Extract
1 Tbsp Apple Cider Vinegar
2 Tbsp Applesauce
1 1/2 cups Granny Smith Apples ((188g) Peeled and Chopped)
1/2 cup White Granulated Sugar ((100g))
1 tsp Ground Cinnamon
1 Tbsp Vegan Butter (Softened)
Vegan Whipped Cream

Steps:

  • Preheat the oven to 325°F (160°C). Spray a 9x13 dish with non-stick spray and set aside.
  • Sift the flour into a mixing bowl and add the brown sugar, baking soda, salt, cinnamon and nutmeg and mix together.
  • Prepare your vegan buttermilk by adding 1 Tbsp fresh lemon juice to a measuring jug and then adding soy milk up to the 1 cup (240ml) line. Leave it for a minute to allow it to curdle.
  • Add the vegan buttermilk, oil, vanilla, apple cider vinegar and applesauce to the mixing bowl and mix in properly. The batter will be thick.
  • Add in the chopped apple pieces and fold in.
  • Transfer to your prepared baking dish and smooth down.
  • Prepare the cinnamon sugar topping by adding the sugar and cinnamon to a bowl and mixing together. Then add in softened vegan butter and mix it in until properly combined and the mixture is crumbly.
  • Sprinkle over the top of the cake.
  • Bake for 45 minutes or until a toothpick inserted into the center of the cake comes out clean.
  • Serve warm with vegan whipped cream or vegan ice cream.

150g dairy-free spread, melted, plus extra for the tin
300ml oat milk
1 tbsp lemon juice
350g self-raising flour, plus 1 tbsp to coat the apples
100g caster sugar
100g light brown soft sugar
1 tsp baking powder
1 tsp almond extract
300g Granny Smith apples, peeled, cored and chopped into 2cm cubes
2 tbsp flaked almonds

Steps:

  • Use the spread to butter a 20cm deep cake tin and line with baking parchment. Heat the oven to 180C/160C fan/gas 4. Pour the oat milk into a jug, add the lemon juice and leave to sit for 5 mins at room temperature.
  • Put the flour, both sugars and the baking powder in a large bowl, pour over the thickened oat milk mixture and almond extract, then add the butter and ½ tsp salt. Beat everything together using an electric whisk. Tip the apples into a second large bowl, sprinkle over the extra 1 tbsp flour and toss to coat. Fold the apples through the cake batter using a spatula, then spoon the mixture into the prepared tin and sprinkle over the almonds.
  • Bake in the centre of the oven for 1 hr-1 hr 20 mins, or until golden and firm to the touch. Leave to cool for a few minutes in the tin. Serve warm, or turn out onto a wire rack and leave to cool completely. Once cool, will keep in an airtight container for up to three days.

Vegan apple cake - this simple, rustic cake is easy to make in just one bowl and is utterly delicious. Moist, lightly spiced and packed full of juicy apples it is the perfect cake for snacking; or try it warm with custard for pudding!

4 medium eating apples (about 450g unprepared weight) (I used a mix of braeburn and granny smith)
250 g (2 cups) plain (all-purpose) flour
100 g (1/2 cup + 1 Tbsp) light brown soft sugar
80 g (1/3 cup + 1 Tbsp) caster sugar
2 tsp baking powder
1/2 tsp bicarbonate of soda (baking soda)
60 g (1/2 cup) ground almonds
1 tsp ground cinnamon
1/2 tsp ground ginger
1/4 tsp ground cloves
1/4 tsp ground nutmeg
1/4 tsp ground allspice
1/4 tsp salt
160 ml (2/3 cup) unsweetened non-dairy milk (I use soy)
80 g (1/3 cup) non-dairy yogurt (I use soy)
80 ml (1/3 cup) sunflower oil (or another neutral oil)
1 Tbsp lemon juice
1 heaped Tbsp demarera sugar

Steps:

  • Preheat the oven to 180°C/350°F/gas mark 4. Grease a deep 20cm/8 inch round cake tin and line it with baking parchment.
  • Peel and core the apples and chop into 1-1.5cm dice. Set aside.
  • In a large bowl whisk together the flour, light brown soft sugar, caster sugar, baking powder, bicarbonate of soda, ground almonds, cinnamon, ginger, cloves, nutmeg, allspice and salt until no lumps remain.
  • Add the milk, yogurt, oil and lemon juice and whisk gently until no dry lumps remain. Add the apples and fold through.
  • Transfer the batter to the prepared tin and spread it level. Scatter the demarera sugar over the top and bake for about 1 hour 20 minutes until a skewer inserted into the centre comes out clean.
  • Leave the cake to cool in the tin for 20 minutes then very carefully turn it out onto a wire rack to cool completely. It is very delicate when it is warm so be careful with it. Once the cake is cool store in an airtight container.

2 Cups All purpose or GF 1:1 flour ((270) *)
1 Tbsp Cinnamon
2 tsp Baking powder
1 tsp Baking soda
1/2 tsp Salt
1/2 Cup Brown sugar or coconut sugar
1/3 Cup White Sugar
1/3 Cup Unsweetened applesauce
1/4 Cup Vegan butter, (melted)
3/4 Cup + 2 Tbsp Unsweetened vanilla almond milk
1 Tbsp Apple cider vingegar
2 Cups Apples, (chopped)
3/4 Cup All purpose or GF 1:1 flour ((100g))
1/3 Cup Brown sugar or coconut sugar
1/2 tsp Cinnamon
Pinch of salt
5 Tbsp Cold Vegan butter, (cut into cubes)

Steps:

  • Line the bottom of a 8 inch cake pan with parchment paper, rubbing the sides with coconut oil. Heat your oven to 350 degrees.
  • In a medium bowl, stir together the flour, baking powder, cinnamon, baking soda and salt.
  • In a separate large bowl, stir together the sugars, applesauce, butter, almond milk and vinegar.
  • Add the dry ingredients into the wet ingredients and stir until combined. Fold in the apples and then pour into the prepared pan, spreading out evenly.
  • In a medium bowl, mix together the flour, sugar, cinnamon and a pinch of salt. Use your hands to cut in the cold butter until the mix forms crumbles - keep some nice and chunky!
  • Spread the crumbs over the cake, lightly pressing them in to stick to the batter.
  • Bake for 48-55 minutes, or until a toothpick in the center comes out clean
  • Let cool COMPLETELY.
  • Slice and DEVOUR!

2 egg substitute, equivalent to 2 egg or 1/2 cup soft silken tofu
3 tablespoons vanilla

1 1/2 teaspoons baking soda
1 teaspoon salt
1 teaspoon cinnamon
1/4 teaspoon allspice
1 cup walnuts
3 cups apples

Steps:

  • Chop walnuts and dice apples.
  • Preheat the oven to 350°F In a large bowl, combine the oil, sugar, egg substitute, and vanilla.
  • In a separate bowl, sift the flour, baking soda, and salt.
  • Add this to the oil-and-sugar mixture and stir by hand, approximately 200 strokes, until it is thoroughly mixed.
  • Fold in the walnuts and diced apples. The batter will be a little stiff.
