BACON AND TOMATO CUPS
Miniature crusts are filled with a mixture of bacon, tomatoes, basil and Swiss cheese in these simple and delicious appetizers.

Steps:
- Preheat oven to 375 degrees. Fry bacon until crisp; drain on paper towels and crumble into a medium bowl.
- Cut biscuits into quarters. Press each biscuit piece into one section of a lightly greased mini muffin tin to form a cup.
- Add chopped tomato, green onion, cheese, mayonnaise and basil to bacon and mix well. Season with salt and pepper, to taste. Divide bacon and tomato mixture evenly among the muffin cups.
- Bake for 10-12 minutes, or until heated through and golden brown.

Steps:
- Bring a large pot of salted water to a boil. Add the pasta and cook as the label directs. Reserve 1 1/4 cups cooking water, then drain the pasta; set aside.
- Meanwhile, cook the bacon in a large nonstick skillet over medium-high heat until crisp, about 5 minutes. Add the tomatoes and shallot and cook until the tomatoes are starting to burst, about 5 minutes. Pour off all but 2 tablespoons of the drippings from the skillet.
- Whisk the eggs, cheese, lemon zest and 1 teaspoon pepper in a medium bowl. Slowly whisk in 1 cup of the reserved cooking water; set aside.
- Reduce the heat under the skillet to medium low. Add the pasta and toss well. Slowly pour in the egg mixture, tossing, to make a creamy sauce, about 1 minute. Season with salt and add the remaining 1/4 cup cooking water as needed to loosen. Stir in the basil. Top each serving with more cheese and season with pepper.

- Preheat oven to 350 degrees.
- Spray or grease the cups of a muffin tin.
- In a skillet over medium heat, cook bacon and onion together until bacon is evenly browned and onion is soft; pour through sieve then let drain well and cool on paper towels.
- Combine cooled bacon/onion mixture with tomato, Swiss cheese, sour cream, mayonnaise, garlic powder, and basil.
- Flatten each biscuit with your hand or a rolling pin and press into the cups of the muffin tin; the dough needs to come to the top of each cup.
- Place a portion of the bacon mixture into each dough cup.

- In a wok or large skillet set over medium-high heat, add the bacon and cook, stirring, until it is very crisp, and the fat has rendered, about 10 minutes. Remove the bacon with a slotted spoon and set aside. Pour the bacon fat out from the skillet until about 2 tablespoons remain. Return the pan to medium-high heat, add the shallots to the bacon fat, and cook, stirring, until soft, about 3 minutes. BACON AND TOMATO PASTA

- In a large stock pot, boil 3 quarts of water, when boiling add 2 tablespoons kosher salt and the pasta and cook until the pasta is al dente.
- In a large saute pan over medium heat, add bacon and saute until bacon is crispy. Remove bacon to drain on a paper towel-lined plate and remove 3/4 of the bacon fat from the pan. Add extra-virgin olive oil, onions, and red chili flakes. Cook until onions are translucent, add garlic, cook for 2 minutes then add tomatoes. Saute for 5 minutes, then deglaze with wine.
- Drain pasta and add to the tomato mixture pan. Add basil and bacon. Toss with Parmesan, and add salt and pepper, to taste.

TOMATO AND BACON RICE (QUICK AND FRENCH-INSPIRED)
This recipe is one I concocted a few nights ago after several days of longing for a rice dish my French grandmother used to make. I don't remember what it was called or exactly how she made it, but this tastes almost like I remember. It's very simple and quick, especially using cooked rice. I do not add any salt or spice to this, as I don't remember her adding that to it, and the bacon adds more than enough flavor. I used leftover white rice, but brown rice would be really good.

- Heat the olive oil in a skillet, and add the garlic and onion. Sweat them for 30 seconds, then turn the heat up a bit and add the bacon. Once the bacon is cooked through (almost crispy), add the cooked rice. Sautee the mixture until the rice is heated through and add the can of tomato sauce. Cover and allow to cook for a few minutes until the rice has absorbed the liquid. Serve!
