BELL PEPPER AND TOMATO SOUP

Bell Pepper and Tomato Soup image

Provided by Food Network

Time 1h

Yield 4 to 6 servings

Number Of Ingredients 11

2 tablespoons olive oil, plus more for drizzling
1 cup chopped red onion
1 cup chopped and peeled potato
Pinch cayenne pepper
1 medium clove garlic, minced
1 bay leaf
Kosher salt and freshly ground black pepper
3 1/2 cups low-sodium vegetable broth
2 cups chopped red bell pepper
1 cup canned whole peeled plum tomatoes, crushed by hand
Chopped parsley and chopped and toasted almonds, for garnish

Steps:

  • Heat the oil in a medium saucepan over medium heat. Add the red onion and cook, stirring, until soft, 3 to 5 minutes. Add the potato, cayenne, garlic, bay leaf, 1/2 teaspoon salt and a few grinds of pepper and cook, stirring, until the potatoes are well coated, 2 to 3 minutes. Pour in the broth and bring to a simmer.
  • Add bell pepper and tomatoes, bring the mixture back to a simmer and cook until the potatoes and vegetables are tender, adjusting the heat as needed to maintain a simmer, about 20 minutes. Remove from the heat, discard the bay leaf and let cool at least 5 minutes. Carefully puree until smooth with a handheld immersion blender or in 2 to 3 batches in a blender (do not fill the blender more than halfway full).
  • Reheat the soup and adjust the consistency with water if needed. Season with salt and pepper. Serve hot with a sprinkle of parsley and almonds and a drizzle of oil.

ROASTED TOMATO AND RED PEPPER SOUP

Roasted Tomato and Red Pepper Soup image

Creamy tomato and roasted red pepper soup made with roasted fresh tomatoes and red peppers is comfort food at its simple best.

Provided by Heidi

Categories     Soup

Time 1h15m

Number Of Ingredients 12

2 pounds medium cocktail tomatoes (, or 2 cups roasted tomato sauce)
1 head of garlic (, cut in half)
extra virgin olive oil
fresh basil, rosemary, or thyme sprigs
3 large red bell peppers (, or 2 cups roasted red bell peppers)
1/2 yellow onion
2 tablespoons butter
2 cups whole milk
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
sour cream thinned with water
a few sprigs of fresh herbs like basil or rosemary

Steps:

  • You'll need 2 cups of roasted tomato sauce for this recipe. Preheat the oven to 400°F and place the tomatoes in a single layer on a rimmed baking sheet lined with foil. Nestle the two halves of garlic and the fresh herbs in with the tomatoes, drizzle with olive oil, season with kosher salt and freshly ground black pepper. Bake for 40-45 minutes. Transfer the tomatoes and a few of the roasted garlic cloves (squeeze them from the papery shells) to a blender and blitz until smooth. Pour the tomato sauce into a large sauce pot. Add the half onion and butter, bring to medium heat, and cook for 20 minutes or so while the peppers are roasting.
  • If using red peppers that are already roasted, skip this step. If not, raise the oven temperature to 425°F. Line the baking sheet with fresh foil and place the peppers on the sheet. Bake the peppers for 30 minutes or until puffed and blistered. Set aside until cool enough to handle then peel the papery skin from the pepper and discard along with the stems, seeds, and membrane.
  • Add the roasted tomato sauce (and a few peels of the onion if you'd like) to the blender canister along with the roasted red pepper. Cover the canister with the lid but be sure to remove the top center plug since the soup is hot and you don't want it to explode when you blend. Cover the lid with a dishtowel and blitz until smooth. Add the tomato and pepper mixture back to the pot and stir in the milk. Heat until warmed through and season with more salt and pepper to taste. If you like your soup thinner, add more milk. If you like it thicker, cook longer to reduce. Serve with a drizzle of thinned sour cream and a few fresh herb sprigs if desired. A grilled cheese sandwich or garlic bread makes a perfect side for dipping.

CHARRED TOMATO SOUP WITH MELTED MOZZARELLA

Charred Tomato Soup with Melted Mozzarella image

Provided by Alex Guarnaschelli

Time 38m

Yield 4 servings

Number Of Ingredients 15

2 tablespoons canola oil
12 red Roma tomatoes, washed, core removed, and a small "x" drawn on the bottom of each with a knife
Kosher salt
1 tablespoon granulated sugar
1/2 cup dry vermouth
1/4 cup extra-virgin olive oil, divided
10 cloves garlic, peeled and sliced thin
3 medium shallots, peeled and sliced
1/4 teaspoon crushed red pepper flakes
Freshly ground black pepper
1 tablespoon dried oregano
1(28-ounce) can whole peeled tomatoes
1 cup water
1 cup shredded fresh buffalo mozzarella
1 loaf sourdough bread

Steps:

  • Preheat the oven to 375 degrees F.
  • Heat a large cast iron skillet and add the canola oil. When the oil begins to smoke lightly, add the tomatoes in a single layer. Season with salt, to taste, and add the sugar. You want to blister the skin slightly, drawing out water from the tomatoes, to intensify their flavor. Add the vermouth. Continue cooking on low heat.
  • In a soup pot, heat 1 tablespoon of the olive oil and add the garlic, shallots, and red pepper flakes. Season with salt and pepper. Add the oregano and stir to blend. Allow to cook, over low heat, until the shallots and garlic become tender and translucent, 3 to 5 minutes. Add the canned tomatoes and the water. Turn the heat down to medium and cook until the tomato flesh starts to lose shape, 12 to 15 minutes. At this point, the soup should be mushy and blender-ready. If there are still some hard pieces, add a little more water and cook for a few additional minutes. Taste for seasoning.
  • Put about half of the tomato soup in the blender and puree until smooth. Next, puree the roasted Roma tomatoes in the blender until smooth, adding the remaining olive oil through the top in a slow, steady stream. Taste for seasoning. Add both back to the remaining chunky soup. Taste for seasoning.
  • On a flat surface, slice bread into 4 by 1/2-inch thick slices. Tear each piece into a freeform shape that sits nicely across the top of your soup bowls (the nice torn edges will get super crispy). Set on a sheet tray and toast in oven for 4 to 5 minutes until lightly golden and crispy.
  • Ladle the soup into crocks or small oven-proof bowls. Top with 1 piece of toasted bread per bowl. Finish with some shredded mozzarella and broil until golden brown, about 2 minutes.

PEPPERONI PIZZA SOUP

Pepperoni Pizza Soup image

Provided by Food Network Kitchen

Time 45m

Yield Makes: 8 servings

Number Of Ingredients 13

3 3/4 ounces thinly sliced pepperoni
16 medium white button mushrooms, sliced
3 cloves garlic, finely chopped
1 small red onion, sliced 1/8-inch thick
1 teaspoon dried oregano
Kosher salt
6 cups low-sodium chicken broth or stock
One 32-ounce jar marinara sauce
1/4 cup grated Parmesan, plus more for serving
4 slices sourdough whole wheat bread, halved
1 tablespoon olive oil
1 1/2 cups shredded mozzarella
1/4 cup torn fresh basil leaves, for serving, optional

Steps:

  • Add the pepperoni to a soup pot over medium-high heat and cook, stirring occasionally, until the pepperoni render their fat and get crispy, 3 to 4 minutes. Remove the pepperoni with a slotted spoon and drain on paper towels. Set aside.
  • Lower the heat to medium; add the mushrooms, garlic, onions, oregano and 1 teaspoon salt. Cook, stirring, until the vegetables soften and the mushrooms release their liquid, 6 to 7 minutes. Add the broth, marinara sauce and Parmesan; cover the pot and bring to a boil. Reduce the heat to medium and cook, about 15 minutes.
  • Position an oven rack in the center of the oven and preheat the broiler to medium-high. Put the bread on a baking sheet. Brush the bread with the oil and sprinkle with 1/4 teaspoon salt. Broil the bread until crisp and brown, 1 to 2 minutes. Flip the bread and sprinkle with 1 cup mozzarella. Broil until the mozzarella melts and is brown and bubbly, about 2 minutes.
  • Ladle the soup into 8 serving bowls. Sprinkle each bowl with the remaining 1/2 cup mozzarella, then top each with a bread half, melted-cheese-side up, and some of the pepperoni. Sprinkle with some Parmesan and basil if desired.
