NOW THAT our children have all married, baked apples are a perfect dessert for the two of us. These are a delicious ending to any meal. Using the microwave makes them so easy to prepare, even at the last minute. -Theresa Stewart, New Oxford, Pennsylvania

2 medium tart apples
2 tablespoons chopped walnuts
2 tablespoons raisins
1/8 teaspoon ground cinnamon
1/4 cup maple syrup, divided
2 teaspoons butter

Steps:

  • Core apples and peel the top two-thirds. Place in a 1-qt. microwave-safe dish. Combine walnuts, raisins and cinnamon; press into the center of each apple. Drizzle each with 1 teaspoon maple syrup., Cover and microwave on high for 3-5 minutes or until tender rotating a half turn twice. , In a small microwave-safe dish, combine the butter and remaining syrup. Heat, uncovered, on high for 15-25 seconds or until butter is melted. Pour over apples; serve immediately.

2 teaspoons maple syrup
1 teaspoon brown sugar
1 teaspoon chopped walnuts
1 teaspoon raisins, dried cranberries or dried currants
1/8 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1 medium tart apple

Steps:

  • In a small bowl, combine the first six ingredients. Core apple and peel the top third. Place in a small microwave-safe dish. Fill apple with walnut mixture. Microwave, uncovered, on high for 3-4 minutes or until apple is tender. Serve warm.

4 large cooking apples, such as Mutsu, Greening, or Rome Beauty
1/2 cup chopped toasted walnuts
2 tablespoons packed brown sugar
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 cup pure maple syrup
1/2 cup unsweetened apple juice

Steps:

  • Preheat the oven to 375 degrees.
  • Wash and core the apples, leaving the bottoms intact. In a bowl, combine the walnuts, brown sugar, cinnamon, nutmeg, and 2 tablespoons of the maple syrup. Stuff the hollowedout center of each apple with the nut mixture.
  • Place the apples upright and close together in the pan. Combine the apple juice with the remaining 2 tablespoons of maple syrup and pour around the apples. Cover the baking pan with aluminum foil and bake for about 45 minutes, until the apples are tender.
  • Serve hot or cold with vanilla frozen yogurt or whipped cream

1/4 cup chopped walnuts

  • Preheat oven to 350 degrees. In a bowl combine raisins, walnuts, cinnamon, brown sugar, lemon juice and zest. Stuff apples with mixture and place in small baking dish. Add 1/2 cup cider or water and bake for 30 minutes or until tender.

I grew up in the Pacific Northwest where it seemed like just about everyone had apple trees in their backyard. We had so many apples that we had to find different ways to use them up. This dish was always our go-to since it's an easy way to transform an apple into something fun and particularly tasty with a scoop of ice cream on the side. The fan-like slicing technique known as Hasselback famously creates lots of surface area perfect for trapping sweet cinnamon sugar that caramelizes deliciously during baking. You can easily double this recipe to serve 4; just use a medium baking dish and adjust the cooking time as needed.

1 large apple (any variety), peeled, cored and halved lengthwise
2 tablespoons unsalted butter, melted
2 tablespoons sugar
1/2 teaspoon ground cinnamon
Vanilla ice cream, for serving

Steps:

  • Place a rack in the center of the oven and preheat the oven to 400 degrees F. Line a small baking dish with parchment paper.
  • Place an apple half rounded-side up on a cutting board. Starting at the outermost edge, slice down most of the way (but not all the way) through each half at 1/8-inch intervals, creating fan-like slices all the way across the apple. You can place wooden chopsticks on each side of the apple to act as guardrails to make sure your knife doesn't cut all the way through.
  • Arrange the sliced apple halves flat side-down in the prepared baking dish. Use a pastry brush to baste the bottoms, tops and between the slices of the apples with the melted butter. In a small bowl, combine the sugar and cinnamon and sprinkle all over the apples and into the slits. Bake on the center rack until the apples are tender and lightly browned, 20 to 25 minutes. Serve warm with vanilla ice cream.

1/4 cup chopped walnuts
4 good-quality red apples, such as Fuji, Braeburn, McIntosh, Rome Beauty
1/4 cup firmly packed brown sugar
2 tablespoons unsalted butter, at room temperature
1/2 teaspoon ground cinnamon
1/4 cup honey
1/2 cup apple juice

Steps:

  • Preheat an oven to 350ºF.
  • Spread the walnuts on a baking sheet and toast in the oven until lightly browned and fragrant, about 7 minutes. Remove from the oven and let cool.
  • Working from the stem end, use a melon baller to remove the core from each apple, scooping out the stem and seeds and making a deep hole for the filling; work to within about 1/2 inch of the bottom of the apple. Peel the skin from the top half of each apple.
  • In a small bowl, blend together the brown sugar, butter and cinnamon. Mix in the walnuts. Spoon equal amounts of the filling into the centers of the apples. Set the filled apples in an 8-inch square baking pan or other baking pan just large enough to hold them snugly.
  • In a small saucepan over medium heat, warm the honey with the apple juice, stirring until the honey dissolves. Pour around the apples. Spoon some of the liquid over the sides of the apples to moisten them, but do not spoon over the tops.
  • Bake, basting the sides once or twice with the pan juices, until the apples are tender when pierced, about 40 minutes. Remove from the oven, let cool and serve in bowls with the pan juices spooned over the tops.
