Gorgeous combination of chorizo, tomatoes, corn and more for a warm salsa with lots of cilantro. Can also be served cold, but give it a try warm.

2 tablespoons olive oil
1/2 lb chorizo sausage, finely chopped
4 small celery ribs, finely chopped
2 bay leaves
1 red onion, finely chopped
2 teaspoons paprika (sweet or hot, your preference)
4 garlic cloves, finely minced
6 ripe tomatoes, peeled, seeded, and chopped
2 tablespoons tomato paste
2 (5 ounce) cans corn, drained (or 10 oz frozen)
1 cup fresh cilantro leaves, roughly chopped
1 tablespoon sugar
salt & freshly ground black pepper

Steps:

  • Heat oil in a large frying pan.
  • Add sausage, celery, bay leaves, onion and paprika.
  • Saute, stirring, over medium heat for 10 minutes.
  • Add garlic, tomatoes, tomato paste, and corn and cook over high heat for 5 minutes or until the tomatoes are pulpy and the mixture is thick.
  • Remove pan from heat, stir in cilantro and sugar and season to taste.
  • Serve hot.

Macaroni en Salsa de Tomate con Chorizo..found on "About.com" and submitted for ZWT 5. Recipe Note: Spanish Chorizo is very different than Mexican or Caribbean chorizo. Spanish chorizo is a firm, dry sausage where most Mexican chorizo is fresh and soft, not cured sausage. It also has different spices than Spanish Chorizo, so it is not a good substitute for this recipe. If you need a substitute, use Portuguese Linguica sausage, which is very similar to Spanish Chorizo and should be easy to find in your local supermarket.

1/4 cup virgin olive oil (Spanish)
1 medium yellow onion
2 garlic cloves
1 chorizo sausage (Spanish Chorizo or Portuguese Linguica sausage )
1/2 red bell pepper
1 teaspoon paprika (Spanish smoked paprika)
1 (24 ounce) can crushed tomatoes
1/2 lb dry pasta (penne, macaroni or spaghetti noodles)

Steps:

  • Peel and chop the onion into 1/4-inch chunks. Peel and chop garlic. Remove the seeds and veins from the pepper and chop. Cut chorizo into round slices about 1/4-inch thick.
  • Pour about half of the olive oil into a large frying pan and heat on medium. Once hot enough, sauté the chorizo slices, pepper, onion and garlic in the pan. Stir often. If necessary, add more olive oil to pan.
  • Once the onions are translucent, add the can of crushed tomatoes. Sprinkle in the paprika. Stir and cook on medium-low for 10 minutes, careful not to burn the sauce.
  • While the sauce is simmering, bring water to a rolling boil for pasta in a large pot. Add pasta and cook until al dente - about 10 minutes. Drain pasta.
  • To serve, add pasta to frying pan and mix together with sauce. If you prefer, plate the pasta, then add sauce on top.

3 ripe beef tomatoes , cut into wedges
½ red onion , thinly sliced
few thyme sprigs, leaves picked
1 tbsp sherry vinegar
2 tbsp extra-virgin olive oil
100g chorizo , sliced on the diagonal

Steps:

  • Put the tomatoes in a bowl with the onion and thyme. Season, then drizzle with the vinegar and oil. Let the flavours mingle while you cook the chorizo.
  • In a hot, dry pan, fry the chorizo slices until browned on both sides. Serve the tomatoes with the fried chorizo, drizzled with a little oil from the pan.

Chorizo taquitos are quick, filling and endlessly customizable. While a taquito's more traditional iterations involve frying the filled and rolled tortilla until crisp, this recipe is styled after a fast-casual version from the Whataburger restaurant chain. It's made with flour tortillas (rather than corn tortillas) and skips the frying process. The chorizo filling is cooked with aromatics and seasonings, then mixed with scrambled eggs, ladled across tortillas with cheese, rolled and garnished with salsa. The dish retains its Mexican origins while adapting to the flavor profiles and preferences of its many locales. The taquito is as straightforward or complex as you'd like it to be - which is another joy of this delicious dish.

1 tablespoon neutral oil, such as canola
1 small onion, diced
2 garlic cloves, minced
1 jalapeño, diced
1/2 pound raw chorizo (casings removed, if necessary)
1/4 teaspoon chili powder
1/4 teaspoon ground cumin
1/4 teaspoon black pepper
2 large eggs, beaten
4 to 6 (6-inch) flour tortillas
1/2 to 1 cup shredded pepper Jack cheese
Salsa roja or salsa verde (optional), for serving

Steps:

  • Heat a medium skillet over medium. Add oil, then stir in onion and garlic, and cook, stirring occasionally, until softened, about 4 minutes. Stir in jalapeño and cook until softened, about 2 minutes more.
  • Crumble chorizo into the pan; sprinkle with chili powder, cumin and black pepper and stir to combine. Cook, stirring occasionally and breaking up chorizo into small chunks, until chorizo is cooked through, 4 to 5 minutes.
  • Add eggs, pouring them gradually into the pan in a circular motion. Stir into chorizo mixture and cook until eggs are just set. Reduce the heat to the lowest setting to keep chorizo mixture warm while you heat the tortillas.
  • Heat a separate pan (or a comal, if you have one) over medium. Add tortillas to the pan one by one, heating them through. (Flip each tortilla when it begins to puff up on each side, then remove when warmed.)
  • Fill a tortilla with chorizo filling, then add cheese to taste and roll the taquito until it's shut. Repeat until you've used the remaining filling and tortillas. Serve with salsa, if you like.

Flavoursome prawn and chorizo cakes served with a tomato salsa from Better Homes and Gardens, found online, but lots of people I've cooked for would love this - which is what drew my attention to it. From Wikipedia: In commercial farming and fishery, the terms prawn and shrimp are generally used interchangeably. In European countries, particularly the United Kingdom, the word "prawns" is far more common on menus than the term "shrimp", which is generally only used in North America. The term "prawn" is also loosely used to describe any large shrimp, especially those that come 15 (or fewer) to the pound (also called "king prawns"). Australia and other Commonwealth countries including South Africa follow this European/British use to an even greater extent, using the word "prawn" almost exclusively. In Spain, gambas al ajillo (translated to garlic prawns) is a popular dish with both the locals and tourists, traditionally served as tapas.

2 desiree potatoes, unpeeled, chopped
1 onion, quartered
3 bay leaves
1 teaspoon coriander seed
1 corn on the cob
1 chorizo sausage, finely chopped
1 pinch cayenne pepper
1 egg
500 g green prawns or 1 lb green prawns
sea salt, to taste
cracked black pepper, to taste
olive oil, for frying
salsa
4 tomatoes
1 small red fresh chili pepper, thinly sliced
1/4 cup red wine vinegar
2 tablespoons extra virgin olive oil
2 teaspoons grainy mustard
sea salt, to taste
fresh ground black pepper, to taste

Steps:

  • Put the potatoes, onion, bay leaves and coriander seeds in a large heavy-based pan; cover with water and bring to the boil; cook the potato until it is tender; drain and discard the onion, bay leaves and coriander and mash the potato with a fork.
  • Cook the corn cob in boiling water for 5 minutes until tender; drain, cool and remove the kernels from cob; add the corn kernels to the mashed potato; add the chorizo, cayenne and egg; and stir until all the ingredients are well-combined.
  • Peel the prawns, remove the veins and chop the flesh into small pieces; add to the potato mixture, season with salt and pepper and stir to combine; shape ¼ cupfuls of the mixture into patties.
  • Heat a small amount of the oil in a non-stick frying pan over a medium heat; cook 4 patties at a time for 3-4 minutes each side until the prawn pieces turn pink and the patties are golden.
  • To make the omato Salsa: Cut the tomatoes into quarters and remove the membrane and seeds; thinly slice the tomato pieces and put in a bowl with the chilli, vinegar, oil and mustard; season with salt and pepper and mix to combine; serve the Salsa with the Prawn and Chorizo Cakes.
