- 1. Slice boiled potatoes into one quarter inch rounds. 2. Slice eggs into rounds. 3. In a buttered casserole, layer potatoes, eggs, grated cheese, and sautéed onions, sprinkling salt and pepper over the potatoes. 4. Continue layering until casserole is full. Top with sour cream. 5. Bake at 350° F for 40 minutes or until top is brown. NOTE: Doesn't freeze well but will keep in fridge for up to four days and reheats nicely in the microwave.

Steps:
- Place cheese into TM bowl and grate 6 sec / speed 6. Set aside.
- Place garlic, spring onions, oil and bacon into TM bowl and chop 3 sec / speed 5. Scrape down and sauté 5 mins / Varoma / speed 1 / MC off.
- Add sour cream, milk and soup mix. Place potatoes in both layers of Varoma and cook 15 mins / 100°C / speed 1/ Reverse.
- Pour the cream sauce into a small bowl and set aside. No need to wash TM bowl.
- Pour boiling water into TM bowl and insert simmering basket and place in eggs. Place Varoma with potatoes back into position and cook 15 mins / Varoma / speed 2.
- Preheat oven to 180°C.
- Remove simmering basket with spatula. Place eggs into a sink or bowl of cold water to cool down as you peel them. Slice eggs.
- Place a layer of potato into a large rectangle casserole dish, add half sauce and sprinkle with half cheese. Repeat again with another layer of potato, sauce, egg and cheese and bake 20 mins.

Steps:
- Start by placing the eggs in a saucepan and then covering them with water. Place on a medium heat on the stove till the water starts to bubble and then turn to low and cook for 10 minutes. Cool and peel the eggs once boiled.
- Boil the entire head of cauliflower for 10 minutes and then once it has cooled slice it up or separate the florets.
- Remove the sour cream in a bowl and season with salt and pepper and allow to come to room temperature.
- Chop the chorizo and then fry in the goose fat till nice and crispy. Once done remove with a slotted spoon.
- Pour all the fat from the frying of the chorizo into the sour cream and whisk together.
- Preheat the oven to 200C while you layer the casserole.
- Start with some sour cream at the bottom of the casserole dish followed by a layer of cauliflower, a layer of sausage, then slice and place the boiled eggs over. Pour some sour cream over the eggs and then another layer of cauliflower and a final layer of sour cream.
- Then add the cheese on top and a sprinkling of paprika after which you put in the oven for 20-30 minutes or till the cheese on top is nice and brown.
- And that's it. Your Rakott Krumpli is ready to serve!
RAKOTT KRUMPLI (HUNGARIAN POTATOES AND EGGS)
Rakkot Krumpli is Hungarian comfort food at its best. My husband jokes that Hungarian foods use the same few ingredients over and over in different ways, and this one is no exception. It brings together many of the Hungarian classics: sour cream, paprika, potatoes and eggs - all which come together in this creamy and delicious one dish meal. My mother used to make this for us as kids and now my children love eating this slightly modernized (sorry Mom) version of the original dish.

- Fill a large pot with cold water and place the potatoes (skin on) in the cold water. Bring to a boil and cook until the potatoes are fully cooked. Set aside. When cool enough to handle, slice into ½ inch rounds (the short way).
- While the potatoes are cooking, slice the onions into thin half moons and sautee in a large pan with oil until they are carmelized.
- Once the potatoes and onions are cooked, you are ready to assemble.
- Grease the bottom of a 9 by 12 baking dish.
- Place a layer of potatoes on the bottom of the dish. Season the potatoes with salt pepper and paprika.
- Take 1/2 of the onions and place them on top of the potatoes.
- Next, layer 1/2 of the sour cream to cover the onions.
- Grate 2 eggs and sprinkle them on top of the sour cream.
- Continue layering - with a layer of sliced potatoes, seasoned with paprika, salt and pepper, a layer of the remaining onions and then a layer of sour cream on top of potatoes, followed by the remaining grated eggs.
- Top with a final layer of potatoes, paprika, salt and pepper.
- Cover and cook in the oven at 400 for 45 minutes (until the mixture is bubbling throughout). Remove from oven and sprinkle the top with the mozzarella cheese. Return to the oven and cook uncovered until the cheese is brown another 20-30 minutes.
- Since this is a pretty mono-colored dish, I like to serve this with a bright fresh tomato basil salad.
POTATO AND EGG CASSEROLE
This is a casserole that was used for Lenten meals by my in-laws. It is Hungarian in origin and everywhere I take it, I get requests for the recipe.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain, cool, peel and slice.
- Place eggs in a saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and slice.
- In a 9x13 inch casserole dish layer potatoes and eggs, sprinkling each layer of eggs with seasoning salt, ending with potatoes.
- In a small saucepan over low heat, melt margarine with sour cream. Pour over potatoes and sprinkle lightly with seasoning salt.
- Bake in preheated oven for 30 minutes.

HUNGARIAN POTATO AND EGG CASSEROLE

- Place the potatoes in a large pot, and add enough cold, lightly salted water to cover by 2 inches. Bring to a boil over high heat. Cook until potatoes are just tender, about 20 minutes. Drain and rinse under cold water until cool enough to handle. Peel potatoes and cut into 1/2-inch rounds.
- Place a medium sauté pan over medium heat. Add vegetable oil, and heat until shimmering. Add onions, and sauté until soft and almost caramelized, about 25 minutes; lower heat if they begin to brown too quickly.
- Place the eggs in a large pot, and add enough cold water to cover by 2 inches. Bring to a boil over high heat, then reduce heat to medium-low and simmer for 10 minutes. Drain and rinse under cold water until cool enough to handle. Peel the eggs, and cut into 1/3-inch rounds.
- Preheat the oven to 350 degrees. Generously coat the inside of a 1 to 1 1/2 quart baking dish with the butter. Arrange a layer of half the potatoes in the dish, then a layer of half the onions, and then a layer of half the eggs. Season with salt and pepper and a light sprinkling of paprika. Spread with half the sour cream. Repeat with the remaining potatoes, onions and eggs, and season to taste with salt and pepper. Spread with remaining sour cream, and sprinkle with paprika.
- Cover the baking dish, and place in the center rack of the oven. Bake for 45 minutes. If desired, serve with a green salad.

- The day before, boil potatoes with the skins on until tender. Cook enough to make at least 6 cups cold riced potatoes. Peel the potatoes, and rice them. Refrigerate them until needed.
- Brown 2 to 3 pieces of bread in butter for croutons. Cut into small pieces, and let cool.
- Combine riced potatoes, 5 or 6 beaten eggs, salt, and flour. Add croutons, and mix together. The mixture should stick together. Too much flour will make them heavy.
- Form into balls about the size of tennis balls. Drop into boiling water in a large pot. Cover and cook for 10 minutes. Serve immediately.

- In a deep pan cook potato in the skin for 15 minutes, without being overcooked. Remove the potatoes from the water and set aside to cool, then peel and slice them.
- In another pan, boil the eggs for 15 minutes to be cooked hard. When eggs are cooked, peel and slice them.
- Coat the baking dish with oil and put: - A row of potatoes (be sure to salt), a row of sausages, a row of eggs (be sure to salt) and coat with sour cream - A row of potatoes (be sure to salt), a row of sausages, a row of eggs (be sure to salt) and coat with sour cream - A row of potatoes (be sure to salt) and coat with sour cream

- In a Dutch oven or soup kettle, combine potatoes, celery, onion, water and bouillon; bring to a boil. Reduce heat; cover and simmer for 20-25 minutes or until potatoes are tender. Cool slightly.
