2 cups fresh spinach leaves, well-washed and stemmed
1/2 cup fresh parsley, preferably Italian flat leaf
1/2 cup walnuts or 1/2 cup pine nuts, toasted
1/4 cup parmesan cheese, freshly grated, not canned
3 garlic cloves
2 tablespoons extra virgin olive oil
1/4 teaspoon sea salt
1/8 teaspoon fresh ground black pepper

Steps:

  • Place all ingredients into food processor and process to a fine paste.
  • Taste and adjust seasonings and transfer to a glass container and top with a thin coat of olive oil to prevent the top of the pesto from discoloring.
  • Keeps for weeks in the refrigerator.

16 ounces fresh spinach, washed and chopped
6 ounces low-fat, firm silken tofu
2 tablespoons fresh lemon juice
1 tablespoon minced garlic
⅛ cup low-sodium chicken broth
½ cup grated Parmesan cheese
½ teaspoon ground black pepper
1 teaspoon Italian seasoning
10 ounces fresh mushrooms, thinly sliced
6 ounces fresh sliced shiitake mushrooms
½ cup diced red onion
¼ cup bacon bits
1 pound penne pasta

Steps:

  • Cook pasta according to package directions.
  • While pasta is cooking, in food processor or blender, combine spinach, tofu, lemon juice, garlic, broth, cheese, pepper, and Italian seasoning, process until smooth. Set aside.
  • Spray a large non-stick saute pan with cooking spray. Over medium heat, cook onions and mushrooms until tender. Reduce heat to low, add pesto mixture and heat until hot.
  • Toss pasta with sauce and bacon bits. Serve with additional Parmesan cheese, if desired. NOTE: If sauce seems too thick, thin to desired consistency with pasta cooking water or broth.

I don't like nuts in my pesto and I like spinach better than basil so I came up with this fast pesto recipe and I love it. I never measure but I tried to put it into measurments. It's best not to warm the Pesto mixture as it doesn't need it.

2 cups spinach (baby spinach or regular spinach)
1/2 lemon, juice and zest of
1 -2 garlic clove (pressed)
1/3 cup olive oil
1 ounce parmigiano-reggiano cheese (grated)
1/4 cup sun-dried tomato (optional add as much as you like) (optional)
1/2 teaspoon sea salt
1/2 teaspoon black pepper
1 lb pasta (thin spagetti, spagetti or Angel Hair pasta)

Steps:

  • In the food processor put in the spinach,lemon zest, lemon juice,garlic,olive oil,salt,pepper and cheese (sundried tomatoes). Process til spinach is small and everything is well combined.
  • Meanwhile boil pasta til Al Dente.
  • Pour Pesto mixture into large Pasta bowl and toss in hot pasta to coat and 1 or 2 tbs of pasta water if needed.
  • Serve immediately with chicken or eat alone.
  • Enjoy.

Tofu and spinach... most people's reaction when they see those words is "Yuck!", but try this and see if your reaction is still the same :) This is an incredibly easy and tasty way to pack the benefits of spinach & the protein content of the tofu to picky eaters. Toss it into your pasta dish, replace tomato sauce on pizza with this, etc. My favourite way to eat is is spread on fresh bread. The measurements make it really easy to remember the recipe and you only need to use 1 measuring cup! I recommend you use firm tofu rather than silky because it is more nutritious. Make it ahead and have pesto on hand whenever you want it!!!

150 g fresh spinach leaves
2 garlic cloves (reduce if you're not a garlic fan)
1/3 cup walnut pieces
1/3 cup soft tofu (the firm kind, not the silky kind)
1/3 cup parmesan cheese, grated (the fresher the better)
1/3 cup water
3 tablespoons olive oil

Steps:

  • Throw everything in a blender or food processor and blend until smooth and creamy. Add salt and pepper is desired (although I really don't think it's necessary).
  • Using a tray for large ice cubes (usually 16), fill each individual hole with pesto. Cover and freeze. You should have some left over- keep that to eat fresh.
  • Pop out a cube from the freezer when you're in the mood for pesto! 1 cube = 1 portions (approx.).

⅓ cup almonds
⅓ cup water
4 tablespoons olive oil (extra virgin)
2 tablespoons nutritional yeast
1 clove garlic
1 teaspoon salt
2 twists pepper

Steps:

  • On a non-stick pan, cook the spinach till they are completely soft and their water has evaporated.
  • To a blender, add all the ingredients including the cooked spinach and blend till you get a a creamy pesto.Taste and add more salt or more nutritional yeast based on your taste.
  • Before serving the pesto, warm it up in a pan with some pasta cooking water, then add the pasta, mix well, and serve with some grated lemon zest on top.
  • Store in an airtight container in the refrigerator for up to a week.

1 pound tri-colored spiral pasta
¼ cup olive oil
2 cups milk
1 (1.2 ounce) package creamy pesto sauce mix
2 tablespoons olive oil
1 (16 ounce) package firm tofu, drained and cubed
salt and pepper to taste
1 pound fresh mushrooms, coarsely chopped
1 cup sliced black olives
1 tablespoon capers
¼ cup grated Parmesan cheese
1 sprig fresh basil

Steps:

  • Bring a large pot of lightly salted water to a boil. Stir in spiral pasta, and cook for 8 to 10 minutes or until al dente; drain.
  • In a medium bowl, blend 1/4 cup olive oil, milk, and pesto sauce mix.
  • Heat 2 tablespoons olive oil in a medium skillet over medium heat. Place tofu in the skillet, and season with salt and pepper. Cook and stir until evenly browned. Remove from heat, and drain on paper towels.
  • Place mushrooms into the skillet, and cook about 5 minutes. Stir in the olives, capers, and 2 tablespoons Parmesan cheese. Mix in the tofu and pesto sauce. Continue cooking about 5 minutes before serving over the rotini. Top with remaining Parmesan cheese and basil.

A simple and light spinach with pasta recipe which I make for lunch at least once a week. My oven doesn't work so this is baking free!

2 cups fresh spinach
3 ounces pasta (any shape)
3 ounces firm tofu, cubed
1 large onion
3 garlic cloves, chopped
1 tablespoon oil
red pepper powder
salt

Steps:

  • Boil pasta according to package directions but only till its almost done.
  • Wash and clean the spinach and steam with a little water for 4 minutes in the microwave.
  • Once it is steamed, blenderize it with the same water to get a spinach paste which is kind of watery
  • In a large non stick skillet, heat oil.
  • When oil gets hot, add the chopped garlic.
  • When the garlic is slightly browned add the onions and stir fry till the onions turn brown.
  • Add the tofu and stir fry till the tofu changes color a bit and looks slightly as if it has been fried.
  • At this point add the red pepper flakes/powder and stir. Immediately add the the spinach paste
  • Let it simmer.
  • Add salt.
  • When the water from the spinach reduces add the semi cooked pasta and let it cook completely. If you think more water is needed add that.
  • I don't add cheese, but can also do the last step in the oven with mozzarella on top.
  • I like this hot and cold--tastes good every way.

1 lb spinach, chopped
1 onion, peeled and cut into strips
1 red bell pepper, cut into strips
3 garlic cloves, peeled and minced
1 lb firm tofu, diced
3 tablespoons sesame oil (or as needed)
1/4 cup peanuts, chopped
1/2 cup coconut milk
1 teaspoon red curry paste (or green)
1/3 cup fresh basil
1/2 lime, cut into 3 pieces

Steps:

  • Mix curry paste with coconut milk. Set aside.
  • Heat 1 Tbs oil in wok or frying pan.
  • Add Tofu, and saute` until golden. Remove, and set aside.
  • In same pan, put remaining oil.
  • Add onion, and saute` for 3 minutes.
  • Add garlic, and saute` for 1 minute.
  • Add pepper and spinach, and saute` until vegetables are tender.
  • Add Tofu, and toss gently.
  • Pour on coconut-curry mixture, and stir-cook until heated through.
  • Add basil, and stir to mix.
  • Serve immediately, sprinkled with lime juice.
