SALTINE TOFFEE COOKIES

This is an easy to make but wonderfully delicious treat. We pack them in tins and give as gifts during the holidays. Use your favorite nuts to top the cookies.

4 ounces saltine crackers
1 cup butter
1 cup dark brown sugar
2 cups semisweet chocolate chips
¾ cup chopped pecans

Steps:

  • Preheat oven to 400 degrees F (205 degrees C).
  • Line cookie sheet with saltine crackers in single layer.
  • In a saucepan combine the sugar and the butter. Bring to a boil and boil for 3 minutes. Immediately pour over saltines and spread t cover crackers completely.
  • Bake at 400 degrees F (205 degrees C) for 5 to 6 minutes. Remove from oven and sprinkle chocolate chips over the top. Let sit for 5 minutes. Spread melted chocolate and top with chopped nuts. Cool completely and break into pieces.

1 cup light brown sugar
1 cup white sugar
1 teaspoon vanilla extract
2 eggs
2 cups all-purpose flour
1/4 teaspoon salt
1/4 teaspoon baking soda
1 (10-ounce) bag toffee candy bits
1 cup oatmeal
1 cup sweetened flake coconut
1 cup chopped whole, skinned almonds

Steps:

  • Preheat oven to 350 degrees F.
  • Cream together the butter, sugar and vanilla. Beat the eggs slightly; then add to the butter mixture and mix well. Sift flour, salt and baking soda; then add slowly to the moist ingredients and mix thoroughly. Mix in the toffee bits, oatmeal, coconut and nuts.
  • Drop dough by the teaspoonful onto an ungreased baking sheet and bake for 15 minutes.

  • In a large bowl, beat the butter, oil, sugars until blended. Beat in eggs, then vanilla. Combine the flour, cream of tartar, baking soda and salt; add to sugar mixture and mix well. Stir in remaining ingredients., Drop by tablespoonfuls 2 in. apart onto ungreased baking sheets. Bake at 350° for 10-12 minutes or until lightly browned. Remove to wire racks to cool.

2 tablespoons canola oil
1 ounce unsweetened chocolate, melted and cooled
1/2 teaspoon vanilla extract
1 large egg

1/8 teaspoon salt
Confectioners' sugar

Steps:

  • In a bowl, beat sugar, oil, chocolate and vanilla until blended. Beat in egg. In another bowl, whisk flour, baking powder and salt; gradually beat into sugar mixture. Refrigerate, covered, 2 hours or until firm enough to handle., Preheat oven to 350°. With sugared hands, shape dough into 1-in. balls; roll in confectioners' sugar. 1 (12 ounce) package milk chocolate chips
1/2 cup chopped pecans or 1/2 cup walnuts, toasted

Steps:

  • Cover bottom of a 13- x 9-inch aluminum foil-lined pan with crackers.
  • Microwave butter and brown sugar in a microwave-safe glass bowl on HIGH for 3 to 4 minutes or until sugar dissolves, stirring occasionally.
  • Pour butter mixture over crackers.
  • Bake at 325° for 15 minutes or until bubbly.
  • Remove from oven, and sprinkle with chocolate morsels, spreading as they melt.
  • Sprinkle with pecans.
  • Cover and chill at least 2 hours.

1 cup semisweet chocolate chips
1 cup milk chocolate chips
1 cup blanched slivered almonds

Steps:

  • Preheat oven to 400 degrees F (205 degrees C). Cover a sided cookie sheet with aluminum foil and line crackers on foil.
  • Combine butter and brown sugar in a saucepan. Stirring constantly, bring to a boil and boil for 3 minutes. Pour over crackers completely.
  • Bake for 5-6 minutes, watch carefully. Remove cookie sheet from oven, place it on oven door and sprinkle chips over baked crackers. 5 ounces unsweetened chocolate
1 tablespoon instant coffee
4 eggs
1/8 teaspoon salt
1 cup sugar

2 1/4 cups flour
2 teaspoons baking powder
1/3 cup confectioners' sugar

Steps:

  • In the microwave, heat butter, chocolate, and coffee until chocolate is melted, stirring to blend. Cool slightly.

1 cup butter
1 cup packed brown sugar
1 1/2 cups chocolate chips
1 cup finely chopped pecans

Steps:

  • Heat oven to 350°F.
  • Line a cookie sheet with foil.
  • Arrange crackers snugly in a single layer, filling the sheet completely, about 40 crackers.
  • In a saucepan, melt the butter over medium-low heat.
  • Add the brown sugar and mix well.
  • Pour the butter mixture evenly over crackers, spreading as necessary.
  • Bake 8-10 minutes, or until the butter is bubbly.
  • Remove the sheet from the oven and sprinkle chocolate chips over the crackers.
